For a family that LOVES bread pudding, double this recipe and bake it in a 9x13-inch pan. Enjoy this healthier version - which features whole wheat bread, reduced sugar, and apple or pear - for breakfast or dessert! Optional: Dust lightly with confectioners sugar before serving. Yum!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Break bread into small pieces into an 8-inch square baking dish. Mix in raisins and apple. Drizzle with melted butter.
- Combine eggs, milk, sugar, cinnamon, and vanilla extract in a mixing bowl. Beat until well mixed. Pour over bread and lightly push down with a fork until bread is covered and soaking up egg mixture.
- Bring a kettle of water to a boil. Place bread pudding baking dish into a large roasting pan. Carefully pour boiling water around pan.
- Bake in preheated oven until a knife inserted into the middle of pudding comes out mostly clean, about 45 minutes.

- Melt butter or margarine.
- Break up bread, set aside.
- Combine brown sugar, cinnamon, allspice.
- Reserve 3 tablespoons of this mixture for topping.
- Pour melted butter onto the bread crumbs and add the remaining sugar mixture.
- Place the bread mixture in a lightly greased 1 1/2 quart baking dish.
- Beat egg, salt, and vanilla in a bowl.
- Add milk slowly.
- Pour over bread mixture in dish.
- Let stand for 5 minutes.
- Sprinkle reserved sugar mix on top.
- Bake at 325F for 45 to 50 minutes.

LUSCIOUS LIGHT BREAD PUDDING

- For the pudding: In a large bowl, combine all ingredients except bread. Add bread, stirring gently and let stand in the refrigerator for 1 hour. Preheat oven to 350°. Spoon pudding into a 10x7 inch baking dish coated with cooking spray. Bake for 35 minutes. Serve with Rum Sauce. For the Rum Sauce: Combine sugar and margarine in a small saucepan. Stir over medium heat until margarine melts. Add flour. Cook for 1 minute, whisking constantly. Gradually add milk and cook for 4 more minutes, continuing to whisk constantly. Add the rum and remove from heat.

This is delicious, super-easy to make, and the ingredients are what you will always have on hand in your pantry. Before we even knew how to bake cakes and cookies, my little sister and I used to make this whenever a sweet craving attacked us (a not infrequent event!).

Steps:
- Heat oven up to 350°F.
- Cut slices of bread into cubes.
- Bake bread cubes for 10 min until a little crisp.
- In a saucepan, heat the milk, and butter but do not allow to boil.
- To this, add the vanilla, beaten eggs and sugar, when a bit cooled.
- Add the baking powder and blend until smooth.
- In an ovenproof tray, layer the cubes of bread and pour over it the liquid prepared above, until the bread is saturated.
- If desired, sprinkle your choice of nutmeg, cinnamon or raisins.
- Bake for approximately 30 minutes or until it browns.
