LUNENBURG SAUERKRAUT DRESSING (FOR TURKEY)
Another great recipe from Altlantic Canada!! Found it in the regional magazine "Saltscapes".

Steps:
- In a large bowl, combine sauerkraut, onion, apples, brown sugar, pepper and savory. Loosely pack into turkey cavity - it shouldn't be more than 3/4 full since the dressing will expand. Fasten with skewers or sew to close cavity.
- Place turkey in roasting pan, tuck wings under bird, tie legs together and rub oil over skin. Loosely "tent" with foil, and roast at 325F for 3 1/2 - 3 3/4 hours. Remove foil and baste frequently during the last hour.
- Bird is done when drumstick moves easiy in the joint. Let stand, covered for 15 minutes before carving. This recipe makes enough to stuff a 10-12 lb. turkey.

Steps:
- Sauté onion and celery in the butter until tender.
- Combine onion mixture with bread, pepper, eggs, salt, sage and poultry seasoning in a large mixing bowl.
- Stir in broth until well moistened.
- Bake in a greased foil-covered shallow baking dish at 325° for about 35 to 45 minutes.
- Take the cover off the last 5 minutes to brown.

- In a large skillet, saute the potatoes and onion in butter until onion is tender (potatoes will still be firm). Remove from the heat. Stir in the sauerkraut, parsley and seasonings. , Stuff chicken cavity; place on a rack in roasting pan. Roast, uncovered, at 375° for 2 hours or until chicken is tender and juices run clear. Remove to a serving platter and keep warm. , Measure 3/4 cup of the pan drippings; pour into a saucepan. Combine water and flour; add to drippings. Cook and stir until gravy boils; boil 1 minute. Serve with the chicken.

THE BEST TURKEY DRESSING (STUFFING)
This dressing is adapted from "The Silver Palate Cookbook. It's rich and is always a big hit. No other bread is needed on the Thanksgiving table. Cook your turkey about 12-15 minutes per lb. at 325 degrees, basting frequently.

- Melt 6 tablespoons butter in a large frying pan. Add onions. Cook over medium heat until onions are quite soft and tender, about 15 minutes. Transfer onions and butter to a large mixing bowl. Set aside. Melt another 6 tablespoons butter in the same frying pan. Add apple. Cook over medium heat, until lightly colored but not mushy. Transfer apples and butter to mixing bowl with onions.
- Crumble sausage into frying pan. Cook over medium heat, until lightly browned. With a slotted spoon, transfer sausage to mixing bowl. Reserve fat. Add remaining ingredients, except eggs and stock, to mixing bowl. Mix well. Add eggs. Mix. Add enough stock to bowl to make a moist, but not runny, mixture. Add fat to stuffing if desired. Stuff a 20-lb. turkey. If cooking dressing separately from turkey, pour fat over dressing in casserole. Bake at 325 degrees Fahrenheit for 45 minutes, or until nicely browned and cooked through.
