cooking spray
1 (15 ounce) can pumpkin puree
¾ cup melted butter
¾ cup brown sugar
¼ cup water
2 eggs
1 teaspoon vanilla extract
1 ¾ cups all-purpose flour
½ cup white sugar
2 teaspoons pumpkin pie spice
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 14 muffin cups or line with paper liners sprayed with cooking spray.
  • Mix pumpkin puree, butter, brown sugar, water, eggs, and vanilla extract together in a large bowl.
  • Mix flour, white sugar, pumpkin spice, salt, baking soda, cinnamon, and baking powder together in a separate bowl. Pour into pumpkin mixture and mix until fully incorporated.
  • Spoon batter into the prepared muffin cups, filling each 3/4 full.
  • Bake in the preheated oven until muffins are slightly browned on top and spring back easily when pressed, 25 to 30 minutes.

Steps:

  • Beat together eggs, sugar, oil, and pumpkin.
  • Sift together dry ingredients.
  • Mix dry ingredients with egg and pumpkin mixture.
  • Using 1/4c size muffin scoop, scoop batter into well greased muffin tin or into paper muffin cups.
  • Bake at 350 degrees for 23 minutes.

But the great news about pumpkin muffins is they're a warm and comforting breakfast staple all year round! A can of pumpkin puree gets mixed into the batter for soft, tender muffins that stay moist for days. And inside each muffin is a swirl of aromatic pumpkin spice mix that you can make straight from the pantry. No matter the time of year, these are a burst of cozy in every bite!

One 15-ounce can pure pumpkin puree
2 large eggs
1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 cup vegetable oil
1/4 cup whole milk
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 tablespoons pumpkin pie spice

Steps:

  • Preheat the oven to 425 degrees F. Line a 12-cup muffin pan with muffin liners.
  • Whisk to combine the pumpkin puree and eggs in a large bowl. Whisk in the granulated sugar, brown sugar, oil and milk. Sift in the flour, baking powder, baking soda and salt. Fold until just combined.
  • Scoop 1/4 cup of the batter into each muffin cup. Add a scant 1/2 teaspoon of pumpkin spice into each cup and use a toothpick to swirl. Top with a rounded 1 tablespoon of batter and smooth over the top.
  • Bake for 5 minutes, then reduce the heat to 350 degrees F. Bake until a toothpick inserted into the center comes out clean, 15 to 20 minutes. Let cool completely in the pan, about 1 hour, before serving.

1 cup shredded zucchini (w/ or w/o skin)
3 -5 ripe bananas
1/2 cup firmly packed brown sugar
1 egg
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 cups all-purpose flour
1 cup quick-cooking oatmeal
1/2 cup melted butter
1/2 teaspoon salt (optional)

Steps:

  • Smash bananas into zucchini to equal 2 1/2 cups, (there should be a few lumps of banana).
  • Add Sugar and eggs.
  • Mix in melted butter.
  • In separate bowl combine dry ingredients.
  • Add dry to wet and mix until incorporated.
  • Fill buttered and floured muffin cups 3/4 full.
  • Bake in 350 oven 20-30 minutes or until toothpick comes clean.
  • Let rest for 2 minutes.
  • Remove from pan to cooling racks.

3 1/2 cups all-purpose flour
1 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 1/2 cups canned pumpkin
1 cup vegetable oil
1 1/3 cups milk

Steps:

  • Preheat oven to 350 degrees F and spray or grease muffin tins.
  • In a large bowl combine flour, brown sugar, baking powder, baking soda, and salt.
  • Stir until well blended and set aside.
  • In a separate bowl combine pumpkin, oil, and milk.
  • Gently stir liquid mixture into dry ingredients, just until blended. DO NOT OVERMIX.
  • Spoon into muffin tins (3/4 full).
  • Bake for 25 minutes.
  • Test with a toothpick.
  • Turn onto rack to cool.

Although they are filled with plenty of good-for-you ingredients (whole-wheat flour, olive oil, apple and grated vegetables), they are moist and just sweet enough to ensure that they don't end up coming back home, which is the sad fate of many a salami sandwich.

Number Of Ingredients 13

140 grams (1 1/8 cups) whole-wheat pastry flour
5 grams (1 teaspoon) baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 large eggs
1/2 cup olive oil
1 tablespoon honey
70 grams (1/3 cup) packed dark brown sugar
1 small apple, grated, and juices reserved (1/2 cup)
1/2 cup grated carrots or butternut squash or parsnips
1/2 cup grated zucchini or beets
55 grams (1/3 cup) raisins
40 grams (1/2 cup) unsweetened shredded coconut

Steps:

  • Preheat oven to 350 degrees. Grease mini-muffin tins.
  • In a medium bowl, whisk together the flour, baking soda, cinnamon and salt.
  • In a large bowl, combine the eggs, olive oil, honey, brown sugar, grated apple and juices and grated vegetables.
  • Using a spatula, fold the dry ingredients into the wet mixture until just combined. Gently fold in the raisins and coconut.
  • Fill each muffin cup 3/4 of the way up, and bake for about 15 to 18 minutes for mini-muffins and about 20 to 22 minutes for regular muffins. The muffins are finished baking when an inserted toothpick comes out clean.
