1 (7 1/2 ounce) package refrigerated buttermilk biscuits (10 biscuits)
1/4 cup tomato sauce
1 teaspoon italian seasoning
10 slices pepperoni
3/4 cup shredded monterey jack cheese

Steps:

  • Flatten each biscuit into a 3-in. circle and press into a greased muffin cup. Combine the tomato sauce and Italian seasoning; spoon 1 teaspoonful into each cup. Top each with a slice of pepperoni and about 1 tablespoon of cheese. Bake at 425° for 10-15 minutes or until golden brown. Serve immediately or store in the refrigerator.

Since school is starting soon and we are all looking for new ideas for packing lunches I decided I would share this eay recipe my boys loved taking in their lunches when they were little boys this recipe came from Quick Cooking July/August 1999. I sometimes change things up a bit and instead of pepperoni I'll use canadian bacon...

1 tube refrigerated buttermilk biscuits, 10 biscuits
1/4 c tomato sauce
1 tsp italian seasoning
10 slice pepperoni
1 c shredded montery jack cheese

Steps:

  • 1. Flatten each biscuit into a 3-in. circle and press into a greased muffin cup. Combine the tomato sauce and italian seasoning; spoon 1 teaspoonful into each cup. Top with a slice of pepperoni and about 1 tablespoon of cheese. Bake at 425 degrees for 10-15 minutes or until golden brown. Serve immediately or store in refrigerator.
