LUBYS PATTIES
I got this recipe from my mother in law. I had never heard of it before but supposedly lubys used to make something like this. We make this once a week in our family and think its delicous.

Steps:
- cook bacon either fry or microwave when cooked crumble into pieces.
- Make 4 hamburger patties season and cook untill thoroughly done.
- Place hamburgers in a baking dish top with cheese, bacon, and onions.
- Pour cup of beef broth over patties.
- Bake at 350 for 10 min or untill cheese is melted and juice is warm.
- Serve with mashed potatoes, rice, or noodles.
LUBY'S LIVER AND ONIONS
Luby's has the best liver and onions around. Lightly dredged in seasoned flour and carefully cooked makes it tender and tasty.

Steps:
- Melt butter over medium heat in a large skillet and add sliced onions. Cook until tender.
- Mix the flour and seasoned salt together on plate, large bowl, or ziplock bag.
- Dredge each piece of liver in flour mix being sure to cover all of the liver. Coat all of the slices of liver.
- Remove the onions from the skillet and keep warm.
- Add 2 tablespoons butter and 2 tablespoons coconut or canola oil to skillet and turn heat up to medium high. I prefer coconut oil.
- Add dredged liver to skillet and cook on each side for 2-3 minutes. Don't overcrowd the skillet. It will take 3-4 batches to cook the liver. Move to a plate and keep warm between batches.
- Once all the liver is cooked, reheat the onions then place over the livers.
- You can cover with a brown, cream, beef, or mushroom gravy if you prefer.
LUBY'S CAFETERIA MEATLOAF
This recipe comes from the Luby's 50th Anniversary Cookbook. It suggests for a different meatloaf to tope it off with barbecue sauce. The leftovers make a good sandwich! I have not made this meat loaf in my kitchen, but I have eaten it at Luby's, and it is very good. The prep time is a guesstimate!

- Heat oven to 350ºF.
- Lightly grease a large, shallow meatloaf pan, or a large shallow baking pan.
- In a large bowl, combine all of the ingredients, mixing well.
- Firmly shape the meat into a 7 x 3 1/2 x 3 1/2- inch loaf and place in the pan.
- Cover loosely with foil.
- Bake the meat loaf for 1 hour.
- Remove foil and continue baking for 5 minutes.
- *NOTE:For easy slicing, let the meat loaf stand at room temperature for 10 minutes.
LUBY'S SALMON CROQUETTES RECIPE - (4.3/5)

- Place salmon and juice in large mixing bowl. Discard any bones and skin. Press salmon flat against pan and check for remaining bones. Flake haddock or cod and add to salmon. Add the potatoes and onions. Add the eggs, paprika, and crackers; mix well. Mold into 4 1/2 ounce portions. Dust croquettes in flour. Whip eggs and buttermilk with a fork until well- mixed. Dip the croquettes in mixture. Place them into crackers and fluff crackers around the salmon. Avoid pressing the crumbs into the croquettes. Deep fry at 300 degrees for 7 mins.
LUBY'S CAFETERIA BEEF LIVER AND ONIONS
This is a most requested recipe from the Luby's Cafeteria posted in response to a request. Prep time includes soaking time.

Steps:
- Soak liver in cold salted water for 15 to 20 minutes.
- In 10-inch skillet, melt butter over medium heat.
- Add onion and cook, stirring occasionally, until tender and lightly browned.
- Sprinkle with salt.
- Keep warm.
- In a shallow bowl, whisk together milk and eggs until well blended.
- Place bread crumbs in separate shallow bowl.
- Rinse liver under cool running water.
- Pat dry with paper towels.
- Dip into milk mixture, then into bread crumbs, coating evenly.
- Heat oil in large skillet over medium heat.
- Add liver and cook 2 to 3 minutes on each side or until cooked through.
- Top with onions.

- Add the ground turkey, salt, pepper, garlic, ketchup, Worcestershire sauce, steak sauce, egg and breadcrumbs to a large bowl. Mix together until all ingredients are incorporated.
- Separate the ground turkey mixture into 4 patties. Shape each patty into an oval shape. Like an elongated burger. Place the patties on a baking sheet or plate.
- Heat the oil in a large, deep, non-stick skillet over medium-high heat. When the oil is very hot – but not quite smoking, add the turkey patties. Cook the patties for about 2-3 minutes, per side until they are browned.
- Remove the skillet from the heat and lower the burner to medium-low. Remove the patties and place them on a plate or pan. Keep them warm by covering loosely with a piece of aluminum foil, and/or place the plate in the microwave or oven. They stay nice and warm in an enclosed space away from drafts. Don’t worry if the ground turkey steaks are not cooked through, they will finish cooking in the gravy.
