We love Mexican food so I made this recipe taste fantastic using more healthy options I discovered. It is just as good as all the others!

Number Of Ingredients 9

1 pkg low carb tortillas ( usually 6-8 in pack)
1 can(s) tomatoes and chiles (10 ounce)
1 jar(s) salsa, chunky 16 ounces
1 lb very lean ground beef( 10% or less)
1 medium sweet onion chopped
1 medium sweet red pepper chopped
1 tsp cumin
1 tsp chili powder
1 pkg 8 ounce low fat mexican cheese ( i like cheddar / jack blend best)

Steps:

  • 1. In a baking dish or pan place a little salsa then about three of the tortillas
  • 2. Mix remaining salsa with tomatoes with green chiles adding cumin and chili powder Mix well.
  • 3. Fry hamburger with veggies until Light brown
  • 4. Place ground beef mixture layer on tortillas Put half of cheese on top
  • 5. Place remaining three or four tortillas on this
  • 6. Cover with remaining sauce Then cheese on top
  • 7. Preheat oven to 375 degrees Cover with NONSTICK type foil As directed
  • 8. Bake about 35-40 minutes until hot and bubbly! It is wonderful You can add low fat sour cream on top if desired.

2 pounds ground beef
1 package taco seasoning mix
¼ cup water
1 (28 ounce) can mild enchilada sauce
1 (16 ounce) can refried beans
1 (15.25 ounce) can whole kernel corn, drained
8 tortillas, cut into 2-inch strips
2 cups shredded Mexican cheese blend

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add taco seasoning and water; cook and stir until meat is coated, about 5 minutes more. Add enchilada sauce, refried beans, and corn; stir to combine.
  • Place a layer of tortilla strips in the bottom of a baking dish. Top with a layer of meat mixture, more tortilla strips, and Mexican cheese; repeat layers as necessary. End with a layer of Mexican cheese.
  • Bake in the oven until cheese is melted and golden, 8 to 10 minutes.

cooking spray
2 tablespoons olive oil
½ large yellow onion, chopped
1 pound ground beef
1 (16 ounce) can refried beans
1 (1 ounce) package burrito seasoning
1 (14.5 ounce) package tortilla chips
1 (10.75 ounce) can condensed cream of mushroom soup
4 ounces sour cream
2 ½ cups shredded Mexican cheese blend
1 (8 ounce) jar salsa

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with cooking spray.
  • Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, 3 to 5 minutes. Add beef and increase heat to medium-high. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Combine refried beans and burrito seasoning in a bowl and mix well. Add mixture to the beef in the skillet and stir well.
  • Mix cream of mushroom soup and sour cream together in a bowl.
  • Place a layer of chips into the prepared casserole dish to just cover the bottom. Follow by 1/2 the meat mixture, 1/2 the soup mixture, 1 cup shredded Mexican cheese blend, and 1/2 the salsa. Repeat layers and top with remaining cheese.
  • Bake in the preheated oven, uncovered, until hot and bubbly, 20 to 30 minutes.

2 cups refried beans, divided
3 cups enchilada sauce, divided

Steps:

  • In a greased baking dish layer flour tortillas until bottom is covered.
  • Spread refried beans on top and sprinkle with onions.
  • Spread 1c enchilada sauce on top of the beans.
  • Repeat until you end up with a layer of flour tortillas on top.
  • Bake at 350 for 30 minutes.

I got these from Razzle Dazzle Recipes and they are delicious and fairly low fat. I modified a few ingredients to suit our tastes and you can serve them with whatever garnish you like.

2 tablespoons olive oil
1 onion, chopped fine
4 cloves garlic, minced
2 (14 ounce) cans black beans or 2 (14 ounce) cans pinto beans, rinsed and drained (or mix if you like)
1 cup tomato sauce
2 teaspoons ground cumin
1 dash chili powder (optional)
1 (4 ounce) can chopped green chilies
12 7-inch flour tortillas or 12 8-inch flour tortillas, warmed
1 1/2 cups grated reduced-fat cheddar cheese or 1 1/2 cups reduced-fat monterey jack cheese
low-fat sour cream (to garnish)
green onion, choppped (to garnish)
salsa (to garnish)

Steps:

  • To make the filling:.
  • In a large heavy skillet cook the onion and the garlic in the oil over moderately low heat, stirring, until the onion is softened, add the beans, and mash about half of them coarse with a potato masher.
  • Add the tomato sauce, the cumin, the chilies, chili powder, and salt and black pepper to taste, simmer the mixture, stirring, for 5-7 minutes, or until it is slightly thickened.
  • Working with 1 warmed tortilla at a time (keep the others covered while working with each) spread about 3 tablespoons of the filling down the center of each tortilla.
  • Working from the sides fold in the ends and then roll the tortillas enclosing the filling.
  • Arrange the burritos, seam sides down, in one layer in a baking dish, sprinkle them with the Monterey Jack, and bake them, covered with foil, in the middle of a preheated 350°F oven for 10-12 minutes.
  • Sprinkle with green onions and serve with sour cream and salsa.

This recipe is for a low-fat breakfast burrito that I have come up with. Even though everything in it is low fat it does NOT taste low fat at all!! Bacon, egg beaters, and cheese make this is one delectable burrito that is much lower in fat than other breakfast burritos. I have fat free cheese listed in the ingredients, but I admit that sometimes I will use half of a Kraft American Cheese Single to satisfy my cheese cravings. The addition of the american cheese really gives this burrito great taste, but use whatever cheese you like. Also, you can use any low fat bacon you like but I personally enjoy Oscar Mayer's Turkey Bacon...it is soooo tasty, I actually prefer it over all other bacon. Serve this burrito with fruit and juice for a yummy breakfast!

1/3 cup Egg Beaters egg substitute
1 low-fat tortilla
fat free cheese
fresh black pepper

Steps:

  • Cook bacon and eggs according to package directions, add salt and black pepper to your eggs if desired.
  • Layer the bacon and eggs on top of your tortilla
  • Sprinkle desired amount of cheese over bacon and eggs.

1 1/2 cups water
8 frozen burritos (I use different varieties, bean, beef and bean, red hot, etc)
8 ounces cheese, shredded
3 ounces black olives, sliced
4 ounces green chilies, diced

Steps:

  • Combine rice, salsa and water in bottom of 9x13 pan.
  • Mix in 1/2 of chilis.
  • Place burritos on top of rice, top with cheese, remaining chilis and olives.
  • Bake 45-55 minutes at 350º.
  • Serve with sliced onions, sour cream and more salsa as toppings.
