This easy peach cobbler uses canned peaches to speed up prep time. A fluffy, tender cake envelops the tender peaches, creating an incredibly simple fruit dessert you can enjoy year-round.

1 cup white whole-wheat flour
1 cup sugar
1 teaspoon baking powder
¼ teaspoon salt
½ cup reduced-fat milk
¼ cup unsalted butter, melted
2 (15 ounce) cans sliced peaches, drained

Steps:

  • Preheat oven to 350 degrees F. Coat an 11-by-7-inch glass baking dish with cooking spray.
  • Whisk flour, sugar, baking powder and salt in a large bowl. Add milk and butter; stir until thoroughly combined. Pour the batter into the prepared baking dish; top evenly with peaches.
  • Bake until the top is golden and set, about 1 hour. Cool on a wire rack for 10 minutes. Serve warm.

8 fresh peaches - peeled, pitted, and sliced into thin wedges
2 tablespoons brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch
1 cup whole wheat pastry flour
¼ cup white sugar
¼ cup brown sugar
1 teaspoon baking powder
½ teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
¼ cup boiling water
2 tablespoons brown sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine peaches, 2 tablespoons brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch in a large bowl. Toss to coat evenly, and pour into a 2-quart baking dish.
  • Bake in the preheated oven for 10 minutes.
  • Meanwhile, combine flour, white sugar, 1/4 cup brown sugar, baking powder, and salt in a large bowl. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal. Stir in water until just combined.
  • Remove peaches from oven, and drop spoonfuls of flour mixture over them.
  • Mix together 2 tablespoons brown sugar and 1 teaspoon ground cinnamon. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

Number Of Ingredients 9

6 ounces dark brown sugar
3 1/2 ounces rolled oats
4 ounces all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon freshly ground allspice
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon kosher salt
1/4 cup unsalted butter, at room temperature, plus extra for the cooker
20 ounces frozen peach slices

Steps:

  • Combine the sugar, oats, flour, baking powder, allspice, nutmeg and kosher salt in a large bowl. Add the butter and work into the dry ingredients until a crumbly texture is formed. Fold in the peach slices.
  • Butter the bottom and sides of a 3-quart cooker. Add the mixture to the slow cooker and cook on low for 3 to 3 1/2 hours. Serve immediately.

1 cup packed brown sugar
1/4 cup cornstarch
1 cup water
9 cups sliced fresh or frozen peaches
1/4 cup butter
1 tablespoon fresh lemon juice
TOPPING:
2 cups all-purpose flour
3/4 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
3/4 cup 2% milk
1/2 cup butter, melted
1-1/2 teaspoons grated orange zest, optional
Vanilla ice cream, optional

Steps:

  • Preheat oven to 400°. In a Dutch oven, combine brown sugar, cornstarch and water until smooth. Add peaches; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low; stir in butter and lemon juice. , For topping, combine flour, sugar, baking powder and salt in a bowl. Stir in milk, butter and orange zest if desired. Transfer hot peach mixture to an ungreased 13x9-in. baking dish. Spoon topping over peaches. Bake, uncovered, until golden brown, 30 to 35 minutes. If desired, serve with vanilla ice cream.
