I love these tomatoes. They're delicious in pastas, salads and sandwiches. I think they taste much better than the sun-dried tomatoes from a jar.

12 -15 just ripe plum tomatoes
3 tablespoons extra virgin olive oil
salt
sugar
dried oregano
dried basil
garlic powder

Steps:

  • Preheat oven to 200 F.
  • Line baking sheet with parchment paper.
  • Lightly oil parchment paper.
  • Cut plum tomatoes in half lengthwise and remove seeds.
  • Arrange tomatoes, cut side up, sprinkle lightly with salt, sugar, dried oregano, dried basil and garlic powder.
  • Place tomatoes cut side DOWN on oiled parchment paper.
  • Bake in oven for 2 hours.
  • Remove from oven and turn tomatoes so that the cut side is UP.
  • Bake for additional 2-6 hours (depending on how dried you want the tomatoes).
  • Remove from oven and cool completely.
  • To store, transfer tomatoes to jar and cover with olive oil.

Steps:

  • Place the tomatoes, cut side up, on a baking sheet and sprinkle with salt. Let sit for 1 hour.
  • Preheat the oven to 250 degrees.
  • Bake the tomatoes until they are almost dry yet still slightly plump. 5 to 6 hours.
  • To store, pack them into clean jars, cover with olive oil, and refrigerate; or freeze them in zip lock bags.

2 pounds plum or other variety of paste tomatoes
1 tablespoon olive oil
Optional: salt
Optional: pepper
Optional: garlic salt
Optional: dried basil
Optional: dried oregano
Optional: crushed red pepper
Optional: other spices

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and heat to 200 F. Rinse the tomatoes with cool water and dry them thoroughly with a clean kitchen towel or layers of paper towels.
  • Hull or remove the core of each tomato. Use a teaspoon or the tip of a dinner knife to remove the seeds and any juice from the tomatoes.
  • Cut small tomatoes into quarters and larger tomatoes into bite-size pieces.
  • Put the tomato pieces in a large bowl and drizzle with the olive oil and seasonings of choice, if using, tossing gently to evenly distribute.
  • Position the cut tomatoes on a wire rack set on a large rimmed baking sheet, leaving about 1-inch of space between pieces.
  • Transfer to the oven. After the first hour, check the tomatoes every half hour, removing them when the edges curl up, and they reduce in size by about a third, about 2 to 3 hours depending on the ambient humidity and the juiciness of the tomatoes.
  • Leave them to cool at this plump-dry stage, or put them back into the oven for up to an additional 3 or 4 hours if you prefer a chewier texture.

6 medium vine tomatoes, sliced 1/4 inch thick
2 shallots, thinly sliced
1 small bundle of thyme, about 5-6 sprigs
1/4 cup olive oil
1/4 teaspoon coarse salt

Steps:

  • Preheat oven to 300 degrees and place the rack in the center of the oven.
  • Place tomatoes on a rimmed baking sheet in a single layer. Place shallots and thyme sprigs over tomatoes, drizzle with olive oil and sprinkle with salt. If doubling this recipe to use in Focaccia with Slow Roasted Tomatoes, distribute tomatoes, shallots, and thyme evenly between two baking sheets and place the sheets in upper and lower thirds of oven.
  • Roast until tomatoes are wilted and browning in places, 2 to 2 1/2 hours, turning tomatoes a few times.

1/4 teaspoon sea salt
1/4 teaspoon sugar
1 teaspoon fresh coarse ground black pepper
1 teaspoon crushed red pepper flakes
1 teaspoon fennel seed
1 bay leaf, coarsely crushed
1 teaspoon dried thyme
3 tablespoons chopped garlic
2 tablespoons olive oil
2 tablespoons fresh lemon juice
olive oil

Steps:

  • Preheat the oven to 225.
  • Cut the tomatoes in half lengthwise.
  • Seed and squeeze out the excess juice without crushing the tomatoes.
  • Lay the tomatoes in a single layer, cut side up, on a baking sheet.
  • In a small bowl, combine all the spice ingredients and the lemon juice.
  • Sprinkle the tomatoes with the spice mixture.
  • Drizzle or spray the tomatoes with a small amount of olive oil.
  • Bake in the oven for 8 hours or overnight, or until the tomatoes are medium-dry.
  • Remove from the oven, cool completely and serve.
  • To store, transfer the tomatoes into a jar, and pour over a thin layer of olive oil to seal the top.
  • Cover tightly with the jar lid.

8 lbs plum tomatoes, cored and halved lengthwise (firm and ripe)
1/2 cup extra virgin olive oil
2 heads garlic, separated but not peeled
12 fresh thyme sprigs
kosher salt
fresh ground black pepper
extra virgin olive oil, for packing

Steps:

  • Preheat oven to 325 degrees F; position oven racks in the center of the oven.
  • Remove the seeds and pulp and discard.
  • Pour 1/4 cup oil in each of two glass baking dishes; place tomatoes, cut side down, in the baking dishes.
  • Scatter the garlic and thyme among the tomatoes; with a sharp knife, make a slit in each tomato half.
  • Bake the tomatoes until the skins start to wrinkle, about 45 minutes; pinch off the skins, flip the tomatoes, and bake again until the surfaces look dry, about 1 hour.
  • Flip again and bake until the surfaces again look dry but tomatoes are still slightly plump, 2 hours longer.
  • Season with salt and pepper and let cool.
  • Discard thyme and peel garlic.

Ice water
1/4 cup olive oil
1/4 cup minced fresh basil
4 garlic cloves, minced
1/2 teaspoon salt

Steps:

  • Preheat oven to 250°. Fill a large saucepan two-thirds with water; bring to a boil. Cut a shallow "X" on the bottom of each tomato. Place tomatoes, a few at a time, in boiling water just until skin at the "X" begins to loosen, about 30 seconds. Remove and immediately drop into ice water. There are several recipes here for oven-dried tomatoes, but this recipe is a little different so I thought I'd post it. This is a great way to use up a bumper crop of tomatoes. They give a great depth of flavor to sauces, salads, etc. and are much more economical than buying jarred dried tomatoes at the supermarket.

4 lbs ripe plum tomatoes, each cut lengthwise in half
2 tablespoons olive oil
salt and pepper
4 sprigs fresh thyme, torn
5 garlic cloves, each cut in half

Steps:

  • Preheat oven to 300 degrees F. Line two 15 1/2" by 10 1/2" jelly roll pans with parchment paper.
  • In large bowl, combine tomatoes, olive oil, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Arrange tomatoes, cut sides up, on prepared pans. Scatter garlic cloves and thyme pieces over tomatoes.
  • Bake 4 hours and 30 minutes or until tomatoes have collapsed and begun to brown, rotating pans between racks halfway through baking.
  • Cool tomatoes on parchment paper on wire rack. Transfer to seal-sealing Ziploc plastic bags and store in refrigerator up to one week. (For longer storage, transfer tomatoes to jar with tight-fitting lid. Pour in enough oil to cover by 1/4 inch. Cover and store in refrigerator up to 1 month.).

Steps:

  • Heat oven to 200°F. Rinse tomatoes under cold running water and remove stems; drain on paper towels. Cut each tomato in half lengthwise. Using small spoon, scoop out and discard seeds.
  • Place tomato halves in single layer, cut sides down on broiler rack. Place larger halves on outer edges of rack for even cooking.
  • Dry in oven 6 to 12 hours or until tomatoes are shriveled, dry to the touch and very chewy in texture, turning once after 4 hours. Edges may be crisp, but tomatoes should not be crisp in center; they should be somewhat pliable. Check after 6 hours and remove any smaller tomatoes that have dried. Tomatoes will be dark red and some pieces may have brown or dark spots.
  • Remove from oven and cool completely. Store in tightly covered container in cool dark location. To rehydrate, place tomatoes in small bowl. Cover with hot or boiling water. Let stand 15 to 30 minutes or until softened.
