A creamy, hearty recipe that feels like comfort food, but won't spoil your plans for bathing suit season. Requires crock pot or slow cooker.

2 boneless skinless chicken breasts
2 cups portabella mushrooms, sliced
1 medium white onion, diced
1 (10 1/2 ounce) can fat-free cream of mushroom soup
8 ounces fat free cream cheese
1 cup nonfat beef broth
1 tablespoon onion powder
1 teaspoon garlic powder
1 teaspoon browning sauce
1/2 teaspoon pepper
1/2 teaspoon salt

Steps:

  • Cut chicken and cream cheese into 1" chunks.
  • Saute the mushrooms and onions until soft.
  • Combine all ingredients in slow cooker. Stir to mix well.
  • Cook over low for 6-8 hours or over high for 4 hours.
  • Serve over rice, couscous or noodles.

Low-Fat-Diets doesn't mean that you can't eat tasty food. I think that this is a good alternative to the regular version. You could also exchange the chicken for meatballs or beef but the nutritional value will change as well.

2 tablespoons flour
1 tablespoon paprika
4 chicken breasts, cubed
1 tablespoon butter (lower fat non stick spray)
20 ounces chicken stock
1/2 cup baby onion
1 tablespoon minced garlic
1/2 cup mushroom, mixed,quartered (button, oyster)
6 tablespoons dry sherry
2 -3 tablespoons sour cream
2 tablespoons chives, fresh,chopped
1 lb noodles

Steps:

  • Place the flour and paprika in a small plastic bag and season well and add the chicken pieces to the bag and shake to coat.
  • Spray a large frying pan with spray oil or heat the butter, and gently fry the chicken until golden.
  • Transfer to a bowl with a slotted spoon and cover to keep warm.
  • Heat the stock in pan, add the onions and garlic and simmer for 10 minutes.
  • Add the mushrooms, sherry, and chicken to the pan along with the remaining stock and a little seasoning to taste, then cook for 5 minutes, stirring until all the ingredients are heated through and the sauce has thickened up.
  • Remove from the heat and stir in the cream.
  • Sprinkle with chives and serve with noodles or rice.

My partner has been put on a low cholesterol, low sodium, low fat diet so I have tried to find and modify recipes to make our meal plan more interesting. This one has been a hit (requested regularly) so I thought I would share it. I serve with brown rice, wholemeal pasta or mashed potato.

2 teaspoons olive oil
1 onion, diced
1 garlic clove, minced
2 small chicken breasts, cubed
2 teaspoons oregano
2 teaspoons paprika (I use 1tsp spanish and 1tsp hungarian)
100 g mushrooms, sliced
1/2 courgette, diced
1 low-fat condensed cream of chicken soup
1/2 cup water

Steps:

  • Pour Olive oil into a pan and sweat the onions for 5 minutes or till softened, then add garlic and chicken.
  • Once chicken has cooked through (approx 15 minutes) add Oregano, Paprika and remaining vegetables, cook down for 5 minutes.
  • Add soup, then top up with water until you are happy with the consistency, then simmer for 5 mins and serve over you favourite accompanying dish, or just with some fresh bread .

  • In a large, deep skillet or a dutch oven with a tight-fitting lid, heat the olive oil over medium. Once hot, add the chicken, thyme, smoked paprika, garlic powder, salt, and pepper. Continue to cook, breaking up the meat with a spoon, until it is fully browned on all sides, 3 to 4 minutes.
  • Add the sliced mushrooms. Continue to cook until the mushrooms begin to soften, about 5 to 6 minutes. Sprinkle the flour over the top, then stir so that it coats the chicken and mushrooms.
  • Add about one-third of the chicken stock. Stir and work the flour off of the bottom off the pan. Add the rest of the stock and the egg noodles and cover the pan. Bring the liquid to a boil, then immediately remove the lid and stir the pan. Re-cover, then reduce the heat to a low simmer. Let simmer until the noodles are al dente and most of the liquid is absorbed, about 7 minutes, stirring the noodles and replacing the lid every few minutes. If at any point the liquid drops below a gentle simmer, increase the heat slightly.
  • Once the noodles are tender, remove the pan from the heat and let sit 1 minute to cool slightly. Stir in the room-temperature Greek yogurt. Taste and adjust seasonings as desired. Sprinkle with fresh parsley and serve hot.

  • Cut the chicken into 1" pieces. Sprinkle them with garlic powder and generously with salt & pepper, then coat each piece in flour.
  • Add 2 tablespoons of the oil to a deep skillet over medium-high heat. Cook the chicken in 2 batches so the pan isn't over-crowded and the chicken browns evenly. Once the pan is hot, add the chicken and cook it for about 3 minutes/side or until cooked through (165F) & lightly browned (I flip it once using tongs to make it easy). The second batch tends to cook a bit faster because the pan gets hotter (you may need to turn the heat down a bit). For the second batch, I add another tablespoon of olive oil because the pan goes dry. Transfer cooked chicken to a plate.
  • Add the butter to the pan and let it melt, then add the mushrooms and onions. Sauté for 6-8 minutes or until their water has been released, cooks off, and the mushrooms get a nice sear.
