Steps:
- In a saucepan, combine sugar, milk, cocoa and corn syrup. Bring to a boil; boil 1 minute. Remove from the heat; stir in vanilla. Best served immediately. Serve as a dip for fruit, or pour over frozen yogurt or angel food cake.

LOW FAT SKINNY COW CHOCOLATE CAKE & SAUCE
I have JUST eaten this, I made it out of next to nothing, just things I had in. It is low fat - Skinny Cow Hot Chocolate Powder and Skimmed Milk, no Butter etc... And it tasted great! Makes a 3x8 rectangular tray. Crispy on the outside but moist inside it is like a brownie cake... though not quite as good!

Steps:
- Blend flour, 1/2 cup hot chocolate powder and icing sugar together.
- Beat in the eggs. Add the milk and water (you might need a little extra milk if the mixture is too thick, should be the consistency of an average cake mix.
- Pour into a tray and bake in the oven on 5 for 15-20 minutes, until you can put a fork into the cake and feel it is firm.
- In another bowl, or jug, mix 1/2 cup of icing sugar with 3 tablespoons of hot chocolate powder, add a few teaspoons of warm water and stir to make a very light icing syrup, add a drop of peppermint flavouring for that extra kick.
- Serve both together and enjoy a low in saturated fat dessert, or late night snack.

- In a large bowl mix together the flour, sugar, cocoa powder, baking soda, and salt, and set aside.
- In a measuring cup or small bowl, whisk together all of the wet ingredients, except the cider vinegar.
- Add the wet ingredients into the dry ingredients, and whisk well to combine.
- Drizzle the cider vinegar over the top of the batter and whisk quickly to incorporate.
- Pour batter into greased 9inch pan. Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.
- *Note: Double the recipe to make a two layer 9-inch cake or 9x13-inch cake.

- Preheat oven to 350°F.
- Mix all ingredients except the brown sugar and 4 tbsp cocoa and hot water. Spread into a 9x9 pan or equivalent.
- Mix brown sugar and cocoa and spread over batter.
- Carefully pour the hot water over all.
- Bake at 350°F for approximately 40 minutes.
NO-FAT CHOCOLATE SAUCE

- Combine cornstarch and cocoa.
- Whisk into cold water in a saucepan until there are no dry bits.
- Cook, stirring frequently, until mixture comes to a boil.
- Stir 1 minute until mixture thickens.
- Remove from heat, stir in sweetener and vanilla, cover and allow to cool.
- Store in clean jar in refrigerator up to 6 weeks.
- Variation: Mocha Sauce: Substitute 2 cups strong coffee for water.
