Nutrition experts recommend 2 fish meals per week. This soup recipe from Barbara Parks of Renton, Washington is a tempting way to meet this dietary goal and extend expensive fresh salmon. Even though it uses 2% milk, it has a rich mouth feel. Serve with a salad and a crusty whole-grain bread.

1 small sweet red pepper
1 salmon fillet (8 ounces)
1/2 cup finely chopped carrot
1 tablespoon chopped shallot
1 tablespoon canola oil
2 garlic cloves, minced
3 tablespoons all-purpose flour
1 can (14-1/2 ounces) chicken broth
2 cups 2% milk
1 teaspoon seafood seasoning
1/4 teaspoon Liquid Smoke, optional

Steps:

  • Broil red pepper 4 in. from the heat until skin blisters, about 5 minutes. With tongs, rotate pepper a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place pepper in a bowl; cover and let stand for 15-20 minutes. Peel off and discard charred skin. Remove stems and seeds. Set roasted pepper aside., Broil salmon 4 in. from the heat for 8-12 minutes or until fish flakes easily with a fork. Break salmon into small pieces; set aside. , In a large saucepan, saute carrot and shallot in oil until tender. Add garlic; saute 1 minute longer. Stir in flour until blended. Gradually add broth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , Transfer to a blender; add roasted pepper. Cover and puree until smooth. Return to the pan. Stir in the milk, seafood seasoning, Liquid Smoke if desired and salmon; heat through.

This is a lighter alternative to traditional lobster bisques full of cream and butter...a lot of flavor...not a lot of fat

4 cups fish stock
1 raw carrot, sliced thinly
1 stalk celery & leaves, sliced thinly
1 leek white, sliced thinly
2 lobster tails, halved lengthwise
2 minced garlic cloves
2 fresh thyme sprigs
6 sprigs fresh flat-leaf parsley
3 tablespoons tomato paste
1 cup nonfat milk
1/2 cup fat free sour cream
2 tablespoons extra virgin olive oil
1/4 teaspoon cayenne pepper (optional)
salt and pepper

Steps:

  • Saute carrot,celery,leek in a nonstick pan using 1 tbsp olive oil, until tender. Puree vegetables with 1/2 cup of fish stock until a thick paste in texture, (will have fine chunks)set aside.
  • Use other tbsp of olive oil to saute lobster tails in shells over medium heat until almost done, season with salt and pepper. Add minced garlic to pan with tails and remove from heat. Deglaze pan with 1/2 cup of fish stock and allow to cool.
  • I use the pan that I sauteed the vegetables in to build my bisque. Add remaining 3 cups of fish stock to pan, heat on medium heat until bubbling. Add puree and tomato paste and whisk. Remove lobster meat from tails and cut into large pieces. Pour fish stock from lobster pan back into bisque and add lobster meat. Reduce heat to low, add milk and sour cream and whisk to combine.
  • Remove from heat, garnish with parsley and serve immediately.

12 ounces salmon steaks, skinned boned, cut into 3/4 inch pieces
3 cups sliced shiitake mushrooms
3/4 cup sliced leek, white part only
2 tablespoons butter
2 cups chicken stock
1 1/2 teaspoons fresh dill or 1/2 teaspoon dried dill
black pepper, to taste
2 cups half-and-half cream or 2 cups light cream
2 tablespoons cornstarch
2 tablespoons dry sherry

Steps:

  • cut the salmon into 3/4" pieces, set aside.
  • in a large saucepan melt butter.
  • add mushrooms and leeks, cook until tender 5-10 minutes.
  • stir in chicken stock, dill, pepper to taste, bring to a boil.
  • combine half& half with cornstarch, stir into mushroom mixture.
  • lower heat to medium, cook until thickened and bubbly.
  • add salmon, cook 4-5 minutes until salmon flakes easily.
  • add dry sherry.
  • garnish with extra dill, if desired.

2 cups cooked rotini pasta, rinsed drained,and cooled
1/4 cup chopped onion
3/4 cup grated carrot
3/4 cup finely chopped celery
7 1/2 ounces sockeye salmon, drained and flaked
1/4 cup dill pickle relish
1/2 cup fat-free mayonnaise
1/4 cup plain fat-free yogurt
1/4 teaspoon black pepper

Steps:

  • Cook pasta according to package direction.
  • It takes 1 1/2 cups of uncooked rotini pasta to make 2 cups of cooked pasta.
  • In a large bowl, combine cooked pasta, onion, carrots and celery.
  • In a medium mixing bowl, place salmon.
  • Pick through to remove bones and skin.
  • Once salmon is picked through, mix in pickle relish, mayonnaise plain yogurt, and black pepper.
  • Add salmon mixture to pasta; mix gently to blend flavors.
  • Cover and refrigerate for at least 30 minutes.
  • Gently stir again just before serving.
