Easy High-Fiber Pancakes image

This short stack was made with 1/3 cup scoops. Top pancakes with butter, maple syrup, and/or powdered sugar. If storing in the freezer, cut pancake-sized sheets of waxed paper or parchment paper to separate. Store pancakes in a freezer bag.

1 ½ cups all-purpose baking mix (such as Bisquick®)
¼ cup bran meal
¼ cup white sugar
2 tablespoons ground flax seeds
1 tablespoon chia seeds
2 teaspoons baking powder
1 cup milk
2 large eggs
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 tablespoon butter, or as needed

Steps:

  • Whisk baking mix, bran meal, sugar, flax seeds, chia seeds, and baking powder in a large bowl until well mixed.
  • Whisk milk, eggs, oil, and vanilla extract in a separate bowl until well combined.
  • Make a well in the center of the baking mix mixture; add egg mixture 1 tablespoon at a time, whisking well after each addition, until batter takes 1 to 2 seconds to fall off the whisk.
  • Heat a griddle over medium-high heat. Grease with butter. Drop batter by large spoonfuls onto the griddle about 4 inches apart and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip gently and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

1 cup low-fat buttermilk or sour fat-free milk (add 1 Tbsp lemon juice per 1 cup milk)
1/2 cup quick cooking oats
2/3 cup miller's bran (unprocessed, uncooked, wheat bran)
1 egg
1/4 cup whole wheat flour
1/2 teaspoon sugar
1/4 teaspoon salt
3/4 teaspoon baking soda
1 cup strawberries, fresh or frozen, no sugar added
1 teaspoon apple juice concentrate

Steps:

  • 1. Combine buttermilk, oats, and bran in large mixing bowl. Let stand 5 minutes. Add egg and beat until blended.2. Mix flour, sugar, salt, and baking soda until blended.3. Add to bran mixture and blend until flour is moistened.4. Pour 1/4 cup batter in hot nonstick frying pan. Cook about 3 minutes or until bubbles form and edge of pancake is dry. Turn and cook 2 minutes longer.5. Top with 1/2 cup strawberry topping. To make strawberry topping, place 1 cup strawberries and 1 tsp apple juice concentrate in blender. Steps:

  • In a bowl, combine all ingredients. Stir.
  • Grease a 5 inch frying pan. Warm over medium heat.
  • Pour batter in 1/4 cup increments into pan. Spread into a thin layer. Cook about 3 minutes. Flip. Cook another 3 minutes.
