LOW-FAT PITA CHIPS

Low-Fat Pita Chips image

I think these are better than full-fat tortillas, and they cost about 30 cents to make. Try them with hummous, salsa, or any other dip in the entire world. I even eat them plain with some Red Hot or Tabasco sprinkled on.

Time 20m

Yield 32 chips, 4 serving(s)

Number Of Ingredients 5

2 pita bread, white or 2 wheat, pocket-style
1 egg white
1 tablespoon olive oil
salt
any powdered seasoning

Steps:

  • Preheat oven to 350.
  • With scissors, cut pitas around the outside into 2 rounds each.
  • Whisk together egg white and olive oil.
  • Brush this onto the insides of the four pita rounds.
  • Season however you want.
  • I've used garlic powder, cajun seasoning, greek seasoning, cayenne pepper, curry powder- all delicious.
  • Stack the rounds and cut them into 8 triangles.
  • Spread in single layer onto baking sheet, seasoned side up, and bake for about 15 minutes, making sure they are no longer soft, but not too brown.
  • Store (I've never gotten around to this part) in an air-tight container or bag.
  • Mmmmmm, guilt-free snacking.

LOW FAT PITA CHIPS

Low Fat Pita Chips image

These are delicious, and very low in fat! I've served these with all sorts of dips, salsas, or hummus, and they always disappear-even before all the store bought chips or crackers. Feel free to experiment with the different spices shaken over the tops. Cumin is great for Mexican dips, but the Garlic Powder works really well too. Cayene pepper might be nice too if you like things a bit more spicy!

Time 20m

Yield 80 Chips, 8 serving(s)

Number Of Ingredients 4

5 (6 inch) whole wheat pita bread
olive oil flavored cooking spray
3/4 teaspoon garlic powder (your choice) or 3/4 teaspoon onion powder (your choice)

  • Season with salt and pepper to taste.
  • Bake until chips are crisp, about 10-15 minutes.

LOW-FAT PITA PIZZAS

Low-Fat Pita Pizzas image

This is a recipe I received from Penzey's along with a sample of their Pizza Seasoning. Tasty and filling, not to mention that pizza and diet don't normally go together, yet they do here. 1 oz. mozzarella and 1 oz. turkey per pita make them really low in fat and calories, 2 oz. each is still right in there for a healthy meal. Fast, easy, and delicious! (Or, make them your own by adding your favorite pizza toppings and cheeses-however, the calories won't be the same. I like to brown my turkey w/ the veggies.) Great for kids, great for parties. They can be put together ahead of time and refrigerated until you are ready to pop them in the oven. You can freeze them, too! Enjoy!!!

Time 30m

Yield 8 pita pizzas, 8 serving(s)

Number Of Ingredients 9

8 regular pita bread rounds (not the pocket type)
1 (15 ounce) can tomato sauce
3 -5 teaspoons pizza seasoning, divided (or your favorite Italian spices)
8 ounces ground turkey (up to 16 ounces)
1/4 cup water
1/2 small onion, minced (optional)
8 mushrooms, sliced thin (optional)
1/2 cup sliced black olives (optional)
8 ounces shredded mozzarella cheese (up to 16 ounces)

Steps:

  • Preheat oven to 425°F.
  • Place pita rounds on cookie sheet in single layer (use 2 if need be).
  • Mix tomato sauce with 1-2 teaspoons Pizza Seasoning, set aside. (You can also use your favorite Italian spices or your favorite pizza sauce.).
  • Cook ground turkey in skillet over medium-high heat, breaking it up as it cooks. Sprinkle with 2-3 teaspoons Pizza Seasoning and mix well.
  • Add water, stir, and let simmer until the turkey absorbs all the water, about 5 minutes.
  • Spread each pita w/ about 1/4 cup sauce. Sprinkle w/ minced onion, sliced mushrooms, black olives, or any veggie you like. Sprinkle w/ cooked turkey, then top w/ an even layer of shredded cheese.
  • Cook for about 10 minutes until heated through and cheese is bubbly and brown. (Start checking at about 5 minutes just to make sure you don't overcook-depends on the amount of toppings and cheese you use and your oven.).

  • To make square pita chips, first cut your pita bread into 3-4 strips lengthwise, about 3 inches wide. Then, stack the strips and cut them into pieces about 3 inches wide. I find that using a large chef's or santoku knife works best, so you can press down on the knife with both hands.
  • You will end up with roughly 3 inch pita squares. Don't worry about the end pieces being smaller or different shapes. They'll bake up just the same.
  • If you would like to season your pita chips, *very lightly* brush or sprinkle with water, then sprinkle seasonings on top. Alternatively, you could gently toss the pita in a bowl with a little water and the seasonings to coat.
