HEALTHY APPLE CAKE (LOW-FAT, LOW-SUGAR RECIPE)
This healthy apple cake is delicious and incredibly easy to make. And the extra bonus: a low-calorie, low-fat apple cake without butter, oil, or sugar.

Steps:
- Preparations: Preheat the oven to 350°F/ 180°C. Grease and flour the springform.
- Prepare apples: Peel and remove the cores. Cut the apples into small cubes. Set aside.
- Wet ingredients: Beat the eggs and the sugar until light and fluffy, about 3 minutes. Mix in the vanilla extract.
- Dry ingredients: In another bowl, mix the flour, baking powder, cinnamon, and salt. Carefully fold the flour into the egg mixture. Do not over mix.
- Batter: Fold the chopped apples into the batter. Pour the batter into the prepared pan.
- Topping: Mix the sugar and cinnamon and sprinkle this mixture over the batter in the pan.
- Bake for 30-35 minutes or until golden. A toothpick inserted in the middle of the cake should come out clean.
- Rest the cake for 10-15 minutes, take it out of the tin and serve either warm or at room temperature (Note 2).

- Preheat the oven to 180C. Grease a deep baking tray.
- Mix sugar, yoghurt and eggs in a large bowl.
- Stir in apple and dried fruit.
- Combine flour, bicarb and spice by sifting together into the mixing bowl.
- Gently mix everything together, and then pour into the tin.
- Bake for 25-30 mins until springy and easing away from the edges of the tin.
- Combine icing sugar and juice with a fork and then drizzle runny icing over warm cake.
- Cut into portions as soon as the icing is set. When the cake is cool, store it in an airtight plastic tub.

- Preheat oven to 400ºF. Coat an 10-inch spring form pan with cooking spray.
- Beat eggs and 3/4 cup of sugar in a large bowl until light and fluffy. Stir in milk, melted butter and vanilla extract.
- Combine flour and cornstarch and fold into the cake batter. Pour into prepared pan.

- Ask your grown-up helper to switch the oven on to 190C/170C fan/ gas 5. Brush a small (500g/ 1 lb) loaf tin with a little oil.
- Peel the apple with a potato peeler, then cut it into quarters and cut out the cores. Ask a grown-up for help if you need to.
- Grate the apple using a rotary or box grater and put it in a large bowl.
- Break the egg into a small bowl. If any pieces of shell fall in, lift them out with a spoon. Add to the apple, then add 3 tbsp oil and the vanilla. Mix well.
- Add the flour and sugar and stir together. The mixture is quite stiff so keep going until all of the flour is mixed in. Scrape into prepared tin.
- Push 3 toffees into the mix in a row. Ask a grown-up to put the tin in the oven for 30-40 mins or until cooked through. Cool before tipping out and slicing.
