- Preheat oven to 375. Spray muffin tin with non-stick spray.
- In a large bowl, mash bananas. To bananas, add applesauce, sugar, splenda, egg whites, skim milk with vinegar added to it, and chocolate chips.
- In a separate bowl, mix flour, bran, baking soda, baking powder, and salt.
- Add dry ingredients to wet, and stir until just combined.
- Place in muffin tin and bake for 20 - 25 minutes, until lightly browned and knife inserted comes out clean. Cool on a wire rack.

COCOA-BANANA BRAN MUFFINS (FOR THE DIABETIC)
Thanks to Luv4food for posting her fabulous muffin recipe. My husband was recently diagnosed with diabetes so I made a few alterations to help lighten the sugar load. I did take her suggestion to add chocolate chips as the small amount is worth the yummy surprise when eaten.

Steps:
- Preheat over to 400f and lightly grease muffin tin or line with paper.
- Set aside.
- Peel bananas and mash (or slice one).
- Set aside.
- Sift together flour, cocoa, baking powder, baking soda, and salt.
- Set aside.
- In a large mixing bowl, combine cereal and milk.
- Let stand 2-3 minutes or until cereal is softenened.
- Add egg, fat substitute, and mashed bananas.
- Mix well.
- Mix is sliced bananas (if one was sliced).
- Add the flour mixture, stirring just until combined.
- Portin into muffin tins evenly.

- In a medium size bowl mix all dry ingredients together. In a separate medium size bowl mix together the wet ingredients (including bananas). Mix thoroughly and make sure bananas are well incorporated. Preheat oven to 350 degrees and heavily spray muffin pan even if you use papers cups. Mix both bowls together just until dry mix is wet. Scoop into medium size muffin pan and bake for 20 minutes or until the muffins spring back to the touch.

- Preheat oven to 400 degrees. Grease or paper line muffin cups (i sprayed).
- Combine cereal, bananas, milk, egg and oil in bowl; mix well. Let stand 5 minutes; stir to break up cereal.
- Combine flour, sugar (sweetner), baking powder, baking soda, spices and nuts (if using) in separate bowl.
- Add flour mixture all at once to cereal mixture, stirring just until moistened.
- Divide evenly among prepared muffin cups, which comes to about a heaping tablespoon per muffin.
- Bake 20-25 minutes or until tester inserted in center comes out clean.
- Serve warm (room temp is OK too).

SUPER YUMMY LOW FAT BRAN MUFFINS
These are delicious little gems, even my boyfriend who detests low fat foods loves them! I'm extremely health conscious so these are perfect with almost no fat, and are super healthy because of the bran. They turn out super moist and delicious and reheat well in the microwave. You can substitute whole wheat flour for white if you wish and they will still be delicious. Adding raisins make them tasty too. Got this one off of the Kraft website.
