1 1/2 cups coarsely shredded unpeeled zucchini
1 tablespoon minced onion flakes
1 tablespoon dried parsley flakes
1 ounce grated parmesan cheese
1/8 teaspoon garlic powder
2 tablespoons vegetable oil
2 teaspoons vegetable oil
2 eggs, beaten
3/4 cup almond flour
1 teaspoon baking powder
1 ounce shredded low-fat cheddar cheese or 1 ounce swiss cheese

Steps:

  • Preheat oven to 350.
  • In a large bowl, combine zucchini, onion flakes, parsley, Parmesan cheese, garlic powder, oil, and eggs. Mix with a fork or whisk.
  • Combine flour and baking powder. Stir into zucchini mixture, mixing well.
  • Place mixture in a 9-inch round sprayed pan. Sprinkle evenly with Cheddar or Swiss.
  • Bake 40 minutes, until a toothpick inserted in the center comes out clean.
  • Serve warm or toasted for best flavor.

I found this recipe floating around fb (facebook). So i took it, modified it a little, and here we are. I placed it under appetizers, but I think this can be a meal all on it's own, but I've discovered it's great for potlucks & parties. Especially when you know you & your friends are "watching it!"

3 medium zucchini
2 large eggs
9 clove garlic, minced
1/2 tsp dried oregano
3 1/2 c mozzarella cheese, divided
1/2 c parmigiano-reggiano, grated
1/4 c corn starch
1-2 pinch kosher salt
2-5 dash(es) black pepper
1-3 pinch crushed red pepper flakes
marinara sauce, for dipping

Steps:

  • 1. Preheat oven to 425 degrees f. Line a baking sheet with parchment paper.
  • 2. On a box grater or in a food processor, grate zucchini. Using cheesecloth or a dish towel, wring excess moisture out of zucchini.
  • 3. Transfer zucchini to a large bowl with eggs, garlic, oregano, 2.5 Cup of the Mozzarella, Parmesan, corn starch, and season with salt and pepper. Stir until completely combined.
  • 4. Transfer "dough" to prepared baking sheet and pat into a crust. Bake until golden and dried out, about 35 minutes.
  • 5. Sprinkle with remaining mozzarella & crushed red pepper flakes (optional) Bake until cheese is melted, approx. 5-10 minutes more.
  • 6. Slice & Serve with marinara sauce for dipping. Enjoy!

  • Grate zucchinis and place them in a kitchen towel or multiple sturdy paper towels. Be sure to ring out as much water as you can and do it over a colander just incase any break out of the paper towels. Ring out the excess water and place grated zucchini in a large mixing bowl.
  • To the mixing bowl, add egg, 1 1/2 cup mozzarella cheese, parmesan cheese, garlic powder, oregano, and salt. Mix with a wooden spoon until all of the ingredients are combined together.
  • Dump the zucchini mixture onto prepared baking sheet and spread out with spatula. Form an approximately 12 inch by 8 inch rectangle using the spatula to shape the mixture. The mixture should be about 1/4 inch thick.
