1-1/2 pounds boneless skinless chicken breasts, cut into cubes
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon pepper
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
4 ounces process cheese (Velveeta), cubed
1 can (2-1/4 ounces) sliced ripe olives, drained
1 jar (2 ounces) diced pimientos, drained, optional
1 package (16 ounces) fettuccine or spaghetti
Coarsely ground pepper, optional

Steps:

  • Place the chicken in a 3-qt. slow cooker; sprinkle with garlic powder, onion powder and pepper. Top with soups. Cover and cook on high for 3-4 hours or until chicken is no longer pink. , Stir in the cheese, olives and pimientos if desired. Cover and cook until cheese is melted. Meanwhile, cook fettuccine according to package directions; drain. Serve with chicken; top with coarsely ground pepper if desired.

This is a delicious low carb version of my neices lovely recipe: Fettuccine with Chicken and Bell Pepper Cream Sauce #143168. We serve ours over Miracle Noodles (no carbs), but it can also be served over low carb pasta or regular pasta for guests not counting carbs!

12 ounces boneless skinless chicken breasts
1 tablespoon butter
1 large green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 small red onion, thinly sliced
2 garlic cloves, minced
1/2 teaspoon dry crushed red pepper
1 cup heavy cream (whipping cream)
1 1/2 cups chicken stock
3 tablespoons fresh basil, thinly sliced
1/4 cup parmesan cheese, finely grated

Steps:

  • Cut each chicken breast into several strips, then sprinkle with salt and pepper. Melt butter in heavy large skillet over medium-high heat. Add chicken and cook until brown on both sides, about 5 minutes. Transfer chicken to plate.
  • Add green and red bell peppers and onion to same skillet and sauté until crisp-tender, about 5 minutes. Add minced garlic and crushed red pepper to skillet and sauté 4 minutes. Add heavy cream and chicken stock. Simmer until sauce thickens slightly, about 8 minutes.
  • Cut chicken into thin strips and add to sauce. Simmer until chicken is cooked through, about 2 minutes. Add basil and 1/4 cup grated Parmesan cheese to sauce, stirring to incorporate and then season sauce to taste with salt and pepper.
  • *For those not on a low carb diet, you can serve this over 8 oz. fettuccini. Just cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain and return to pot. Serve sauce over pasta.
  • Serve, passing additional Parmesan separately.

This in addition to a salad makes for a great 500 calorie meal. We've found that it freezes incredibly well, and divides perfectly into 10 ounce portions.

2 (20 ounce) containers digiorno low-fat alfredo sauce
1/2 lb chopped asparagus
1 tablespoon italian seasoning
48 shrimp, peeled and deveined (50-61ct)
1 lb penne rigate
1 (8 ounce) can tomato sauce
1 red bell pepper
8 ounces fresh sliced mushrooms
1 tablespoon crushed red pepper flakes
1 tablespoon creole seasoning

Steps:

  • Preparing Penne:.
  • In a large stockpot, add 4 quarts of water and 1 tbsp crushed red pepper and bring to a boil.
  • Add the 16oz package of penne rigate and stir every 2-3 minutes, maintaining a rolling boil. After approximately 14 minutes (time may vary slightly depending on brand of pasta) drain pasta and rinse in cold water to keep the pasta from cooking further.
  • Let pasta sit for 5 minutes after the rinse, and the starchiness will come back to the surface of the pasta, allowing the sauce to stick to each noodle.
  • Red Pepper and Tomato Cream Sauce:.
  • Dice red bell pepper and saute in a small skillet until it begins to soften.
  • Add fresh sliced mushrooms and saute for an additional 3 minutes.
  • Blanch chopped asparagus in a pan with 2 cups of water for 4 minutes, then drain.
  • Season shrimp with creole seasoning and fry in a large skillet.
  • Add alfredo sauces, shrimp, pepper-mushroom mixture, italian seasoning, tomato sauce, and asparagus to a sauce pan, and bring to a simmer. Reduce heat to low and add penne.

Found this recipe few years ago in a BH cookbook. The variety of peppers add a nice kick and the creamy monterey cheese sauce provide the perfect balance.

8 ounces spaghetti or 8 ounces fettuccine
8 ounces boneless chicken breasts
1 tablespoon flour
1/2 teaspoon salt
1/4-1/2 teaspoon ground red pepper
1/8-1/4 teaspoon white pepper
1/8-1/4 teaspoon ground black pepper
1 tablespoon cooking oil
1 cup red bell pepper, chopped
1/2 cup onion, chopped
1 tablespoon jalapeno pepper, seeded and minced
2 garlic cloves, minced
2 tablespoons flour
3/4 cup chicken broth
1/2 cup milk
1 teaspoon Worcestershire sauce
1 cup monterey jack cheese, grated
1/4 cup sour cream

Steps:

  • Cook pasta to package directions. Drain and keep warm.
  • Cut chicken into 1 inch pieces. In small mixing bowl combine 1 tablespoons flour, salt, and red, white and black pepper. Toss flour mixture with chicken to coat. Set aside.
  • In large skillet over medium-high heat heat oil (add more oil as necessary during cooking.) Add red bell pepper, onion, jalapeno and garlic; cook and stir until tender. Remove veggies with slotted spoon to seperate bowl; set aside.
  • Add chicken to skillet. Cook and stir about 5 minutes until chicken is tender and no longer pink. Remove chicken to bowl with veggies.
  • Stir 2 tablespoons four into drippings in skillet. Add chicken broth, milk and worcestershire. Cook and stir until thickened and bubbly. Add monterey jack, stir until cheese melts. Stir 1 cup of the hot mixture into sour cream; return all of sour cream mixture to skillet. Stir in the chicken and veggies. Cook until heated through being carefully not to boil mixture.
  • Arrange pasta on individual plates or a large serving platter. Spoon the chicken mixture over pasta.

Red Bell Pepper Stuffed Chicken With White Cream Sauce image

This is one of our favourite recipes that we save for special occasions. Your guests will be thinking they are fine dining in your home. The sauce is very rich, I usually serve this with steamed green beans on the side.

4 boneless skinless chicken breasts
salt and pepper
2 tablespoons olive oil
1 garlic clove, finely chopped
1 shallot, finely chopped
1/2 cup dry white wine
1 1/2 cups whipping cream
2 tablespoons fresh basil, juliened
2 sweet red peppers
basil leaves
1 cup shredded asiago cheese

Steps:

  • Roast the red peppers until blackened. Place the peppers in a bowl & cover with wrap to generate steam for approximately 5 to 10 minutes. Remove the blackened skin and seeds. Cut each red pepper into thirds.
  • Cut the chicken in half horizontally almost but not all the way through. Open the chicken like a book and season with salt and pepper.
  • Place a slice of roasted red pepper onto one side of the opened chicken breast. Top each with 2 basil leaves. Sprinkle with cheese. Fold the other side of the chicken over creating a bundle. Secure the chicken bundle with three pieces of string.
  • In a large non-stick pan, heat half of the olive oil over medium heat. Add the chicken and cover. Cook for approximately 7 minutes per side or until no longer pink inside.
  • Remove to plate and remove strings.
  • Add the remaining oil to pan, and cook the garlic and shallots until softened.
  • Stir in wine and boil for 3 minutes.
  • Stir in whipping cream. Season with salt and pepper. Simmer for 5 minutes or until thickened enough to coat the back of a spoon.
  • Return chicken to the pan, turn the chicken to coat while reheating.
  • Remove the chicken to individual plates. Spoon the white cream sauce over the chicken and garnish with fresh juliened basil.
