Steps:

  • Preheat broiler.
  • Arrange bacon slices on baking tray. Top each with 1 tomato slice and 1 basil leaf (or a pinch of dried).
  • Distribute cheese among tomatoes and broil for 4 min or until cheese is melted.
  • Season with salt and pepper to taste.

2 ounces frozen spinach, defrosted and drained (1/3 cup)
2 (5 1/4 ounce) packages laughing cow herb and garlic flavored spreadable cheese
1/2 cup walnuts, finely chopped
1 teaspoon thyme, chopped fresh
3/4 teaspoon salt, divided
1/2 teaspoon fresh black pepper, divided
4 lbs center cut pork loin roast
1 tablespoon virgin olive oil
1 1/2 teaspoons cornstarch, subsitute (low carb, like thick-it-up)
3/4 cup dry white wine
3/4 cup chicken broth

Steps:

  • Heat oven to 450*F.
  • Combine spinach, cheese, walnuts, thyme, 1/4 tsp salt, and 1/8 tsp pepper in medium bowl. Set aside.
  • Slice pork loin almost in half crosswise, taking care not to cut all the way through.
  • Open up like a bok and lay loin flat.
  • Spoon stuffing along bottom half of loin.
  • Fold loin closed, covering stuffing.
  • Use kitchen twice to tie roast together.
  • Brush top and sides of roast with oil and season with remaining 1/2 tsp salt and 1/8 tsp pepper.
  • Set roast on a rack in shallow roasting pan.
  • Transfer to oven, reduce temp to 350*F, and roast until done to taste, about 55 min for medium.
  • Transfer roast to cutting board and let stand 10 minutes.
  • Meanwhile, strain pan drippings and discard excess fat.
  • Return drippings to pan.
  • Add thickener, wine, and broth to the pan juices and cook over med heat, stirring constantly, until mixture bubbles and thickens, about 5 minute.
  • Season with salt and pepper to taste.
  • Remove twine from roast and cut into 1/2-inch slices; serve with pan sauce.

Steps:

  • NOTE: Please do not use regular cornstarch for this recipe if you are following a low carb diet. The recipe editor tool would not allow me to list this ingredient as a low carb thickening agent, such as thick-it-up, but this is what you should use.
  • For the sauce: Combine cream, water, onion, salt, pepper, and nutmeg in a small saucepan over med heat; bring to a simmer. Remove from heat, let stand 15 minute Strain the cream mixture and return to the saucepan. Set aside.
  • While the sauce is standing, put chicken, bay leaf, parsley, salt and pepper in a large saucepan; add enough cold water to cover. Bring to a boil, cover, reduce heat to med-low, and simmer until chicken is just cooked through, about 10 minute.
  • While chicken is simmering, place the saucepan with the sauce over medium heat. Whisk in thickener; cook until sauce thickens, about 3 minute.
  • Remove from heat; swirl in cheese and butter until melted.
  • Place the cooled chicken on a serving plate, patting dry any liquid with a paper towel; pour the sauce over it and serve.

I threw this low carb chili together with things I had on hand, it turned out great. The whole pot of chili has about 130 net carbs. 40 from the chili seasoning, 18 from the chili ready tomatoes, 49 from the beans, 12 from the tomatoe sauce, and about 5 from the onion

1 (14 1/2 ounce) can great value chili ready tomatoes
1 (14 1/2 ounce) can great value tomato sauce
2 tablespoons of 5th season chopped onions (the dehydrated kind)
1 (14 1/2 ounce) can great value chili beans
2 1/2 lbs hamburger
2 (1 1/4 ounce) packages of great value mild chili seasoning mix
salt, pepper, and garlic powder to taste
3 cups water

Steps:

  • Brown hamuburger.
  • Add about 2 tablespoons of the chopped dehydrated onions midway through cooking the hamburger.
  • Drain grease from hamburger.
  • Add chili ready tomatoes to hamburger.
  • Add salt pepper and garlic powder to taste.
  • Add only 1 of the chili seasoning mixes now, and stir it in with the hamburger and tomatoes.
  • Turn heat on low, and let cook for about 5 minutes.
  • Transfer hamburger and tomatoes to a deeper pot(if needed).
  • Add 3 cups of water (I just filled the can from the tomatoes twice and dumped that in the pot).
  • Add the second chili seasoning mix now, and stir.
  • Add about half a can of the tomato sauce, I used a little over half.
  • Add chili beans.
  • Let cook on medium low heat for about 20 minutes, or until hot, stirring occasionally.
  • Enjoy!

  • Add broth, any accumulated juices from the steaks, lemon juice, paprika, remaining 1/2 tsp salt, and remaning 1/8 tsp pepper.
  • Cook until sauce thickens slightly, about 3 minute.
  • Pour sauce over steaks, sprinkle with parsley, and serve hot.
