LOW CARB PIZZA
Steps:
- Preheat oven to 375 degrees F.
- Make the crust: Generously spray 2 (12-inch) pizza pans with nonstick vegetable oil cooking spray. In a medium bowl, stir together all of the crust ingredients to make a smooth, thick, pancake-like batter. Using a rubber spatula, spread the batter as thin and evenly as possible over the 2 pans.
- Place pizza crusts on center racks of the oven and bake for about 12 to 15 minutes, or until lightly golden brown and firm to touch.
- Remove crusts from oven and increase the oven temperature to 400 degrees F.
- Meanwhile, make the sauce: In a saucepan over medium heat, heat olive oil and then sweat onions and garlic in oil, cooking just until softened and translucent. Add diced tomatoes and the remaining ingredients and simmer for about 2 minutes.
- Compile the pizzas: Spread the tomato sauce and then the mozzarella cheese evenly over both crusts. Top 1 pizza with pepperoni, sausage, and ham, and top the other with the bell pepper strips, onions, and mushrooms. Lightly sprinkle 1 tablespoon olive oil over each pizza, and sprinkle each with a dash of dried oregano.
- Place the pizzas back in the oven to bake for another 10 to 12 minutes, or until the cheese melts and starts to brown. Cut each pizza into 8 slices.

- Preheat oven to 375 degrees F.
- Beat together cream cheese and eggs until smooth.
- Add cream, parmesan, chives, Italian seasoning and garlic.
- Spray 9X13 pan with cooking spray or oil.
- Place 2 cups mozzarella cheese in bottom of pan.
- Pour egg mixture over cheese.
- Bake for 30 minutes.
- Remove from oven and spread sauce over baked mixture.
- Add toppings of choice.
- Cover with remaining mozzerella cheese.
- Bake until bubbly and brown.
- Let stand for 5 minutes.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray a cookie sheet with nonstick cooking spray.
- Unroll crescent rolls and pat onto the prepared pan. Let stand for 5 minutes; poke in several places using a fork.
- Bake in the preheated oven until golden, about 10 minutes. Remove from the oven and let cool, at least 10 minutes.
- Beat mayonnaise, cream cheese, and garlic salt together using an electric mixer in a mixing bowl. Spread onto cooled crescent rolls. Sprinkle bacon on top of cheese spread. Sprinkle tomatoes on top of bacon, followed by green onions.

Got this for our Friday pizza night when I didn't have pizza sauce and wanted to make something different. It is from Taste Of Home. They loved it!

Steps:
- In a bowl, combine mayonnaise, basil, garlic powder and onion powder; refrigerate for 1/2 hour or more.
- Place the pizza crust on an ungreased 12-inch pizza pan.
- Spread mayonnaise mixture over crust.
- Set aside 1/4 cup bacon.
- Sprinkle remaining bacon, cheddar cheese and mozzarella cheese on crust.
- Bake at 425 degrees Fahrenheit for 8 to 12 minutes or until cheese is melted. If doing a homemade crust, I bake mine at 375 degrees Fahrenheit for about 25 to 30 minutes or until done.
- Top with lettuce, tomatoes, and reserved bacon.
- Cut into wedges and serve. Enjoy!

- Preheat oven to 425 degrees.
- Add the mozzarella and cream cheese to a microwave safe bowl and microwave for 1 minute. Stir to combine and return to microwave until cheese has melted, about 30 more seconds.
- Stir in the almond flour, egg, salt, and Italian seasoning to combine.
- Place the dough on a large sheet of parchment paper. Top with a second sheet of parchment.
- Roll the dough out into a 12 inch diameter circle.
- Remove the top piece of parchment and transfer the bottom sheet with the dough on it to a pizza pan.
- Bake for 12 minutes or until golden brown.
- Remove from the oven and spread with the mayonnaise. Sprinkle on the lettuce, tomatoes, bacon.

Steps:
- Preheat oven to 375 degrees F. Line a baking sheet with parchment paper; set aside.
- Unroll puff pastry dough and cut into 8 equal rectangles. Transfer the rectangles to the prepared baking sheet. Beat the egg yolk with 2 teaspoons water. Use a pastry brush and brush the edges of the rectangles with the egg wash. Fill the center with 1-2 tablespoons shredded cheese, then top with a slice of bacon on the diagonal. Top the bacon with another tablespoon of cheese, then a slice of tomato. Season with salt and pepper.
- Fold in 2 corners of the rectangles towards the center. The corners should not touch, but should cover a bit of the tomato. Brush the folded corners with egg wash then transfer the baking sheet to the refrigerator to chill for 15 minutes.
- Bake the puffs until golden and cheese is melted, about 15-20 minutes. To serve, top with shredded lettuce, chopped tomato, chopped bacon and a drizzle of ranch dressing.
