This is a "Hungry Girl" recipe with less than 70 calories per serving and 8 grams of protein! For those of you on Weight Watchers, this recipe is 1 WW Point.

1 (8 ounce) package tofu shirataki noodles, Fettuccine Shaped
1 large peach, cut into bite-sized pieces
1/2 cup fat-free cottage cheese
1 tablespoon granulated artificial sweetener, like Splenda
3 tablespoons egg whites
cinnamon, to taste

Steps:

  • Preheat oven to 425 degrees. Drain, rinse, pat dry and cut Shirataki noodles.
  • In an oven-safe baking dish combine noodles, egg whites, Splenda, peach, cottage cheese and cinnamon; mix well.
  • Bake in oven for approximately 25 minutes, or until firm.

This recipe was given to me by a friend many years ago. It's a really yummy and creamy noodle pudding with just the right amount of sweetness... and the peaches make it perfect! I could eat the leftovers for breakfast, lunch, and dinner (and for snacks in between!). Enjoy!

1 lb egg noodles, wide
1 cup sugar
1 (29 ounce) can sliced peaches, drained and diced
1 cup butter, melted
4 eggs
1/2 teaspoon vanilla
cinnamon

Steps:

  • Boil noodles.
  • Meanwhile, put sugar, vanilla, peaches, butter, and eggs together in a large bowl. Mix well.
  • Drain noodles. Add to mixture. Mix well.
  • Spray 9" x 11" dish with nonstick cooking spray. Pour mixture into dish and level. Cover with cinnamon.
  • Bake uncovered at 375° for 1 hour to 1 hour 10 minutes.

2 (10 ounce) packages frozen chopped spinach
1 cup white cheese (1/2% fat) or 1 cup yogurt
2 cups low fat cottage cheese
4 eggs or 6 egg whites, beaten
1 cup matzo meal
1 teaspoon salt
1/2 teaspoon nutmeg (optional)
1/8 teaspoon pepper
1 1/2 tablespoons lemon juice

Steps:

  • Defrost spinach.
  • Add white cheese or yogurt and stir.
  • Add the rest, reserving 1/2 cup matzo meal.
  • Spread in greased 9" x 13" pan.
  • Sprinkle with remaining matzo meal.
  • Cover and bake 35 minutes at 375F degrees.
  • Uncover and bake 10 minutes longer.

1 cup reduced fat margarine
1/2 cup fat free sour cream
1 1/2 cups egg substitute
2 cups white sugar
1 teaspoon lemon juice
1 teaspoon vanilla extract
8 ounces jars applesauce
1/4 cup raisins
1/4 cup graham cracker crumbs (optional)
1 teaspoon ground cinnamon, to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat a 9x13 baking dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Mix together margarine, sour cream, egg substitute, sugar, lemon juice, vanilla extract, and applesauce.
  • Stir in noodles and raisins.
  • Spread graham cracker crumbs on bottom of prepared pan.
  • Pour noodle mixture over crumbs.
  • Sprinkle top with cinnamon.
  • Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes, or until set.
  • Cover with foil if it browns too quickly.
