Yield 1 glass, 1 serving(s)

Number Of Ingredients 7

2 teaspoons instant coffee (or to taste)

2 teaspoons Splenda sugar substitute (or any artificial sweetner, to taste)
1 pinch cinnamon
1/4 teaspoon vanilla extract
ice cube

Steps:

  • Add the coffee to the cold water and let it sit for a while, around 5 minutes (because theres no heat to transfer the flavour to the water, it needs time to mix).

  • Add ice cubes before serving. Pour into a tall glass. Enjoy.

NEW ORLEANS STYLE CAFE AU LAIT

New Orleans Style Cafe Au Lait image

"Real, New Orleans-style coffee must be dark roast, brewed strong, and must include chicory. In fact, most of the coffee drunk in the Crescent City is a coffee-and-chicory blend". Some well-known local coffee-and-chicory brands are French Market (my personal favorite), Community Coffee, Cafe du Monde or Union. Brew your coffee in a drip coffeemaker only, and serve with half coffee and half scalded (NOT steamed!) milk. From www.gumbopages.com and posted for ZWT5.

Time 10m

Yield 12 cups, 12 serving(s)

Number Of Ingredients 4

6 tablespoons dark roast french market coffee (Coffee-with-chicory, New Orleans style)
6 cups water
6 cups milk
sugar (optional) or other artificial sweetener (optional)

Steps:

  • Bring the water almost to a boil, to a temperature of 204-208 degrees F.
  • Using a drip-style coffeemaker with filter, pour a small amount of the water over the coffee grounds to dampen them, then wait 30 seconds.
  • Pour more water over the grounds until the upper pot container is full.
  • Allow to drain, then repeat until all the water is used.
  • Scald, do NOT boil, the milk. This means to heat it until JUST below the boiling point.
  • Pour coffee into warmed large mugs, then add the milk.
  • Add sweetener if desired and serve.

FRENCH VANILLA CAFE AU LAIT

French Vanilla Cafe Au Lait image

Literally "coffee with milk", café au lait is a drink made of coffee and scalded milk. It is the staple coffee drink of French Louisiana and is often served in bowls (rather than in cups or mugs) in Acadiana. This enticing 'French Vanilla' version of the famous morning or dessert beverage is richly redolent with the wafting scent of real vanilla. Wonderful! Pairs beautifully with any traditional New Orleans or Acadian cuisine such as bread pudding or beignets, may I suggest my recipe #412943. I hope you enjoy as much as we do! Time 25m

Yield 4 serving(s)

Number Of Ingredients 5

1 1/2 cups half-and-half
1 1/2 cups whole milk
2 tablespoons sugar, to taste
1 vanilla bean, split lengthwise
3 cups hot strong brewed coffee (best with a dark French roast, or a coffee and chicory blend)

Steps:

  • Combine the half-and-half, milk, and sugar in a small heavy-bottomed saucepan.
  • Scrape the seeds from the vanilla bean into the milk mixture and add the bean to the saucepan.
  • Simmer over low heat for 20 minutes, stirring from time to time. Or, you can heat the milk and vanilla bean over medium heat until hot but not boiling. Remove from heat and let steep for 20 minutes to infuse the flavors. Reheat just before serving.
  • Remove the vanilla bean from the milk mixture and whisk for 1 minute, until frothy.
  • Fill each mug with 1/2 cup of hot coffee and 1/2 cup milk mixture.
  • Serve immediately.

  • Get a small saucepan and slowly heat your milk; make sure not to boil it. You can also use a milk foamer to get the best foam, and it will save some time as well.
  • Now, add your brewed coffee to your favorite cup. If you want to add a sweetener to your coffee, it is best to add it now.
  • Top your coffee with milk. If you have foamed your milk, make sure it's super fluffy, as this will look amazing!
