Ingredients

½ teaspoon unsalted butter
1 large white onion, diced
2 ribs celery, chopped
3 small leeks, cleaned and thinly sliced
3 medium potatoes, peeled and chopped
3 cups water, or more as needed
3 cups 2% low-fat milk
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

Melt butter in a medium stockpot over medium heat. Add onions and cook, stirring frequently, until slightly translucent, about 5 minutes. Add celery and cook for 2 more minutes. Add leeks and cook, stirring frequently, until limp, 2 to 3 minutes.
Reduce heat to medium-low and add potatoes and 3 cups water. Cook until potatoes are slightly soft, adding just enough water to keep potatoes and leeks covered, 20 to 25 minutes. Slowly add milk while stirring continuously. Add salt and pepper and cook until heated through, 5 to 10 minutes.

The idea for the recipe came from a soup I had at Biltmore Estate in Asheville, NC. It is easy to prepare, but tastes gourmet!

Ingredients

1/2 cup sliced leek, washed well
2 cans chicken broth
4 medium potatoes, cut in 1" cubes
1 onion, diced
3/4 cup heavy cream
1/2 teaspoon pepper
1/2 teaspoon salt
1 teaspoon dried thyme
1/2 teaspoon celery seed
1/8 teaspoon garlic powder

Steps:

Bring broth to a boil and reduce to medium.
Add leeks, potatoes, and onion.
Simmer, covered, 25-30 minutes.
Add seasonings and cream.
Simmer 5 minutes more.
Slightly mash with a potatoe masher to desired consistency.
Serve with salad and crusty bread.
A snap to make, but tastes gourmet!

Ingredients

3 cups water
3 medium leeks
3 medium potatoes
1 tablespoon chicken bouillon granule
1/4 cup nonfat milk

Steps:

Clean leeks and dice (using only the white& green area up to where the leaves get tough).
Wash,peel& dice the potatoes.
Combine diced vegetables with the 3 cups of water& the chicken bouillon in a pot.
Bring to a boil.
Cover and simmer for 25 minutes.
Puree one half of the mixture and then puree the other half (I used the blender).
Return the pureed mixture to the pot and add the 1/4 cup of non-fat milk.
Heat through and serve.

Peel and finely dice the onions, peel and small cube the potatoes, top and tail and wash the leeks, then slice finely. Reserve a few slices of leek to garnish.
In a large heavy bottomed pan (you'll need one with a lid) heat the oil and butter over a low-medium heat and gently fry the onion - you want it to start to go translucent, but not browned.
After 2-3 minutes add the leeks and season with salt and pepper (black is fine, but white pepper if you have it - it helps to keep the colour of the soup). Sauté for 5-7 minutes, stirring a few times to ensure the leeks don't catch on the bottom of the pan. You don't want them to cook too long as they'll start to lose a bit of their colour and melow in favour.
Add the potato cubes to the pan, stir to thoroughly to coat, pop the lid on the pan and turn down to a low setting. Allow to cook for another 7-10 minutes, stirring once or twice to ensure they don't catch.
