LORI'S COLESLAW - KFC COPYCAT
I love KFC's coleslaw way more than I like their chicken! I've tried over the years to replicate their slaw, and finally think I've got it! It really does need the hour of refrigeration time, and is even better the next day. I like using the bagged slaw mix because it makes it super easy and quick. but you can definitely chop your own cabbage and carrots.

Steps:
- Place the tarragon leaves on a cutting board and use a sharp knife to finely mince the leaves. Place them in a medium bowl and add the rest of the dressing ingredients. Stir until smooth.
- Place the coleslaw mix on a large cutting board. Using a large chef's knife, chop the mix into small pieces. I do mine in two batches, so I get them it the size I want and it doesn't fly all over the place!
- Place the minced coleslaw mix and minced onions in a large bowl. Pour the dressing on top and stir until everything is well coated.
- Season with the salt and pepper to taste. Refrigerate for at least an hour before serving.

- Mix cream, mayo, sugar and vinegar.
- Add cream dressing to cabbage and pineapple.

CREAMY COLESLAW DRESSING
Coleslaw is one of my all-time favorite foods if it has a nice, creamy dressing. After doing some research, making dozens of different dressings, and trying to find the flavor that I like, I came up with this dressing for coleslaw that became a hit. I'm always asked for this recipe. What surprised me was at a potluck when a culinary chef asked me for my recipe. He told me that it was one of the best he had ever tasted since he had left the southern part of the USA.

COLESLAW WITH COOKED DRESSING
This is a great oil & vinegar coleslaw dish that you can make with the whole head of cabbage. The longer it sits, the better it gets! A great way to always have coleslaw on hand in the fridge, I have been making this recipe for 20+ years, with great results. I found it in our local newspaper's Christmas recipe insert, & have been making it ever since :) Enjoy!

- -Combine shredded cabbage, onion, and green pepper in a large bowl.
- -Heat vinegar, sugar, and oil in a medium saucepan until sugar is dissolved and syrup is boiling.
- -Pour boiling syrup over cabbage and let stand until salad is cold (do not stir). -When cold, cover and place in refrigerator to chill for 24 hours. When ready to serve, stir to mix cabbage. It's nice because you can make it days ahead.
