Mary Berry's Warm Chicken and Dill Salad with Mustard and Parmesan Dressing image

A twist on the classic chicken Caesar salad From Mary Berry's BBC2 series Simple Comforts, using fresh dill and dill pickles.

Steps:

  • 1. Put the chicken into a bowl with the paprika, honey and a tablespoon of the oil. Season well and toss to coat all the chicken pieces. 2. Heat a large frying pan and add the remaining oil. Fry the chicken pieces briefly over a high heat until golden brown and just cooked through - take care not to overcook them. Remove to a plate, cover with foil and leave to rest for 5 minutes. 3. Scatter the lettuce over a large serving plate and sprinkle with the dill, spring onions and pickles. Arrange the warm chicken pieces on top. 4. Measure all the dressing ingredients into a bowl and whisk until combined. Check the seasoning. Pour the dressing over the salad and sprinkle with Parmesan shavings and microherbs. Prepare ahead: Dressing can be made up to a day ahead. Assemble the salad up to 2 hours ahead and dress just before serving.

1/4 teaspoon salt
1/4 teaspoon pepper
1 package (6 ounces) fresh baby spinach
1 cup fresh raspberries
1 cup halved fresh strawberries
2/3 cup crumbled goat cheese
3 tablespoons chopped pecans, toasted
1/4 cup prepared fat-free raspberry vinaigrette

Steps:

  • Sprinkle chicken with salt and pepper. On a greased grill rack, grill chicken, covered, over medium heat or broil 4 in. from heat 4-7 minutes on each side or until a thermometer reads 165°., In a large bowl, combine spinach, berries, cheese and pecans. Cut chicken into slices; add to salad. Drizzle with vinaigrette and toss lightly to coat. Serve immediately.

2 skinless, boneless chicken breast halves - cut into thin strips
3 tablespoons frozen limeade concentrate, thawed
¼ teaspoon black pepper
⅓ cup white sugar
½ cup white vinegar
1 teaspoon salt
1 teaspoon ground dry mustard
1 teaspoon dried minced onion
1 cup vegetable oil
1 tablespoon poppy seeds
1 pound baby spinach leaves
2 cups sliced fresh strawberries
1 cup sugar snap peas, ends and strings removed
½ cup pecan halves

Steps:

  • Toss chicken breasts, limeade, and pepper in a bowl. Cook the chicken breasts in a skillet until no longer pink in the center and the juices run clear, about 8 minutes. Remove skillet from the heat and set aside.
  • Combine sugar, vinegar, salt, mustard, and onion in a blender. Process for about 20 seconds. With the blender on high speed, gradually add oil in a slow and steady stream. Stir in poppy seeds.
  • Arrange spinach on 4 salad plates and top with strawberries, peas, pecans, and the cooked chicken. Serve with the poppy seed dressing.

1/2 cup sugar
1/2 cup red wine vinegar
1/2 cup olive oil
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds boneless skinless chicken breasts
6 cups torn romaine
6 cups torn red leaf lettuce
1 pint fresh blueberries
1 pint fresh strawberries, sliced
2 cups shredded part-skim mozzarella cheese
1 cup chopped walnuts

Steps:

  • In a large bowl, whisk the first six ingredients. Pour 3/4 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate overnight. Cover and refrigerate remaining marinade. , Drain and discard marinade. Grill chicken, covered, over medium heat for 5-8 minutes on each side or until juices run clear. Back in 1953, long before the Los Angeles chef Roy Choi started making Korean tacos, a different kind of cross-cultural mash-up was minted in England as a way to celebrate the crowning of Queen Elizabeth II. Coronation Chicken, a dish with Indian flavors, has since "become a staple in the U.K.," said Nicky Perry, whose almost-a-quarter-century-old West Village shrine to British food, Tea & Sympathy, serves it as the filling for one of the restaurant's signature sandwiches. "There is such a huge Indian population in the U.K. that the two cuisines have become somewhat intertwined." By now it is a mainstay of the American picnic basket, too, and its undercurrents of sweetness (from apricots and mango chutney) and spice (from curry powder) are easy to achieve. Use soft bread, so that the chicken salad doesn't go squirting out the sides with each bite. And cutting off the crusts? Go right ahead. There is no shame in that.

3 to 4 pounds bone-in, skin-on chicken breasts
1 tablespoon olive oil
Kosher salt, as needed
Fresh black pepper, as needed
2 tablespoons unsalted butter
1 large yellow onion, diced
1/2 cup red wine
6 tablespoons mango chutney
1/4 cup tomato purée
3 tablespoons curry powder
Juice of 1/2 lemon
1 fresh or dried bay leaf
1 cup mayonnaise
3 ounces dried apricots, finely chopped (about 15 apricots)

Steps:

  • Heat oven to 350 degrees. Rub chicken on all sides with olive oil, season generously with salt and pepper and arrange on a rimmed baking sheet. Bake until skin is golden and meat is cooked through, about 45 minutes. Let chicken cool slightly, then remove skin and bones and chop meat into bite-size pieces. Set aside.
  • Meanwhile, melt the butter in a large saucepan over medium heat. Add the onion and sauté until translucent, 5 to 7 minutes. Add the red wine, mango chutney, tomato purée, curry powder, lemon juice and bay leaf and bring to a simmer. Continue simmering, stirring occasionally and adjusting heat as necessary, until sauce is quite thick, 8 to 10 minutes. Season to taste with salt and pepper; remove and discard bay leaf.
  • Transfer sauce to a large bowl and let cool to room temperature, then add the mayonnaise and stir to combine. Add the cooled chicken and the apricots and stir to coat them in the sauce. Season to taste with salt and pepper. For sandwiches, spread the chicken salad on thick slices of English white bread or seven-grain bread. Cut off crusts if making finger sandwiches for tea.
