This master sauce is used over and over again to braise beef, poultry and pork. Makes wonderful leftovers for use in stir-fry or soup noodles. After using, strain and keep refrigerated or frozen until next loo session.

Number Of Ingredients 10

2 cups soy sauce
6 slices fresh ginger
1 star anise
1/2 teaspoon five-spice powder
4 minced garlic cloves
1/4 cup brown sugar
1/2 cup sherry wine
1/2 teaspoon sesame oil
1 (14 ounce) can chicken broth
1 tablespoon hoisin sauce

Steps:

  • Bring all ingredients to a boil.
  • Add meat, reduce heat and simmer covered for 15 minutes each side.
  • Bring to a boil, turn off heat. Keep covered and let sit for 3 hours or until internal temperature reached appropriate doneness.

3 garlic cloves, finely chopped
4 cups water
3 tablespoons sugar
1 cup light soy sauce
1 cup dark soy sauce
1 cup dry sherry
1 teaspoon lemon juice, fresh squeezed
4 slices gingerroot, about inch thick each
1 lb beef top round steak, cut into 1 inch cubes
2 tablespoons sesame oil
1 -2 small boiling onions
1 cup mushroom, halved
1 cup red bell pepper, cut into 1 inch squares
1 tablespoon green peppercorn, uncrushed

Steps:

  • In a medium sized stainless steel pot mix garlic, water, sugar, soy sauces, Sherry, lemon juice and ginger and bring to a boil. Let cool, place in 4 quart round crockpot crock pot. Set aside.
  • In a large skillet on medium heat, add sesame oil and brown meat on all sides. Add meat to the crock pot and Looing sauce. Add onions, mushrooms, Bell pepper and peppercorns. Cover and cook on low for 8-10 hours. Ladle on top of rice.

LOBSTER WITH LEMON & HERB BUTTER SAUCE

Lobster served two ways: with a buttery dipping sauce for the large chunks of meat and a salad made with the smaller pieces. Nothing is wasted and this easy main lets the lobster shine!

1 cooked lobster (see tip below for video guide on how to prepare lobster), claws and tail meat kept separate from the smaller bits of meat
crusty bread , to serve
juice ½ lemon
100g cold butter , cut into cubes
small bunch chives , finely snipped
small handful basil leaves , chopped
110g bag of rocket
½ an avocado , stoned, peeled and sliced
leftover bits of lobster meat
juice ½ lemon
2 tbsp extra virgin olive oil

Steps:

  • To make the sauce, warm the lemon juice in a small saucepan. Add the butter, a few cubes at a time, swirling them into the lemon juice over a very low heat to melt them, adding a few more pieces until all the butter is used. Take the sauce off the heat, season to taste and keep warm.
  • To make the salad, gently toss the rocket, avocado and lobster meat together. Dress with the lemon juice and olive oil, and toss again until everything is mixed and coated.
  • To serve, stir the herbs through the sauce and pour into a ramekin or small bowl. Put the sauce on a plate and pile the large chunks of lobster meat on one side and the salad on the other. Bring the plate to the table to share - dip the tail meat, claws and crusty bread into the sauce.

1 cup butter
1 tablespoon minced garlic
2 tablespoons fresh lemon juice
1 teaspoon ground black pepper
2 teaspoons dried cilantro

Steps:

  • Melt 1 tablespoon of butter in a saucepan over medium heat. Add the garlic; cook and stir until starting to brown, about 3 minutes. Add the remaining butter and reduce heat to low. Stir to melt the butter, then mix in the lemon juice, pepper and cilantro. Let it steep over low heat for about 10 minutes. Strain before serving if desired.
