1 1/2 pounds unpeeled small Yukon Gold potatoes (1 1/2-inch diameter)
Kosher salt
3 tablespoons Champagne or white wine vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon minced garlic
1 extra-large egg yolk, at room temperature (optional)
Freshly ground black pepper
1/2 cup good olive oil
1/4 cup dry white wine
3 tablespoons drained capers
1 cup thinly sliced scallions (6 to 8 scallions)
1/2 cup (1/4-inch) diced celery
1/2 cup (1/4-inch) diced red onion
1 1/2 pounds cooked lobster meat, 1-inch-diced
1 lemon
3 tablespoons coarsely chopped fresh tarragon

Steps:

  • Place the potatoes in a large pot and cover with water by 1 inch. Add 1 tablespoon salt and bring to a boil. Lower the heat and simmer for 15 to 25 minutes, depending on the size of the potatoes, until just tender. (I use a small bamboo skewer to test them.) Drain in a colander, cover the colander with a clean kitchen towel, and allow the potatoes to steam for 5 to 10 minutes. Cut them in quarters or halves, depending on their size, and place them in a large bowl.
  • Meanwhile, whisk together the vinegar, mustard, garlic, egg yolk, 2 teaspoons salt and 1 teaspoon pepper. While whisking, slowly pour in the olive oil, making an emulsion. Stir in the wine and capers. While the potatoes are still very warm, pour half the vinaigrette on the potatoes and toss them gently, allowing them to soak up the vinaigrette. Stir in the scallions, celery, red onion and lobster and add enough vinaigrette to moisten. Reserve any remaining vinaigrette. Add the zest and juice of the lemon, the tarragon, 2 teaspoons salt and 1 teaspoon pepper and toss carefully. Cover with plastic wrap and refrigerate for at least an hour to allow the flavors to blend. Taste for seasonings and add more vinaigrette, if necessary. Serve at room temperature.

This recipe, from Craig Claiborne with Pierre Franey, brings together two scrumptious delights, the lobster and the avocado. The creaminess of the avocado complements the sweetness of the lobster. The combination is perfect for a light summer supper or lunch. It's great for a special occasion, but can also be a treat just for you.

2 2-pound live lobsters
Salt to taste, if desired
1 pound romaine lettuce
1 cup finely chopped green onions or scallions
2 firm, ripe, unblemished avocados, about 3/4 pound each
Juice of 1/2 lemon
2 tablespoons finely chopped fresh basil
1 tablespoon imported mustard
1/4 cup white-wine vinegar
2 tablespoons finely chopped shallots
Salt to taste, if desired
Freshly ground pepper to taste
1 hard-cooked egg, finely chopped
1/2 cup peanut, vegetable or corn oil
1/2 cup olive oil

Steps:

  • Bring enough water to the boil to cover the lobsters when added. Add the lobsters and salt and cover. When the water returns to the boil, let the lobsters simmer 12 minutes. Let stand five to 10 minutes and drain the lobsters well.
  • Meanwhile, cut away and discard the core of the lettuce. Cut the leaves lengthwise into quarters. Cut the leaves crosswise into very fine shreds. There should be about six to seven cups.
  • Remove the meat from the lobster shells. Cut the meat into bite-size pieces. There should be about four cups.
  • Put the lettuce in a salad bowl. Arrange the lobster pieces on top and add the green onions or scallions. Toss lightly.
  • Cut the avocados in half lengthwise. Discard the pits. Peel the halves. Cut each half lengthwise into thin strips. Sprinkle with lemon juice.
  • Arrange the avocado slices neatly over the salad. Sprinkle with the basil.
  • To make the salad dressing, put the mustard, vinegar, shallots, salt and pepper in a mixing bowl. Add the egg. Blend the oils. Start beating with a wire whisk while gradually adding the oil.
  • Serve the salad and salad dressing separately if desired. Or toss the salad with the dressing.

1 cup cognac
2 pounds onion, diced
1 pound carrot, diced
1 pound celery, diced
8 lobster carcasses
6 leeks, washed and diced
2 bulbs fennel, diced
2 quarts heavy cream
2 pounds cooked lobster meat, cut into bite-size pieces
1 cup creme fraiche
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh tarragon
2 lemons, zested and juiced
2 1/2 tablespoons black caviar, for garnish

Steps:

  • For the veloute: In a stockpot, combine cognac, onions, carrots, celery, lobster carcasses, leeks and fennel. Add 1 gallon water and bring to a simmer. Add the cream and simmer until thickened. Press through a fine-mesh sieve. Chill until ready to serve.
  • For the lobster salad: Combine the lobster meat, creme fraiche, chives, parsley, tarragon, and lemon zest and juice in a bowl and chill.
  • Serve the veloute in soup bowls, topped with some of the lobster salad and garnished with a teaspoon of caviar.

2 large leeks, white parts only
2 large russet potatoes, about 1 pound
2 tablespoons butter, melted
1 tablespoon all-purpose flour

Juice and finely grated zest of 1 lemon
Pinch cayenne pepper
1/4 cup chopped chives, plus more for garnish

3/4 pound cooked lobster meat, cut into 1-inch chunks
1 large fennel bulb, trimmed and cored, finely diced
1 rib celery, finely diced

1 head frisee, cleaned and leaves separated

Steps:

  • For the nests: Heat about 4 inches of vegetable oil to 340 degrees F in a 4-quart saucepan. (Use a saucepan that is taller than it is wide.) Line a baking sheet with paper towels.
  • While the oil is heating, halve and rinse the leeks. Slice them thinly and put in a medium bowl. Peel the potatoes and use a mandoline to julienne them. (To julienne without a mandoline, slice the potatoes about 1/8 inch thick, stack the slices, and slice 1/8-inch thick.) Toss the potatoes, butter, flour, salt and pepper with the leeks.
  • Scoop about 1 cup of the potato mixture into a bird's next frying basket and immerse in the hot oil until set and golden brown. Transfer to the paper towels and repeat with the remaining mixture.
  • For the lobster salad: Combine the mayonnaise, mustard, lemon zest and juice, cayenne pepper, chives and tarragon in a large bowl. Season with salt and pepper. Gently fold in lobster, fennel and celery. Taste and season with more salt and pepper, if necessary
  • To serve, place a potato and leek nest in the centers of 4 plates. Mound a small bunch of frisee in the middle of the nests, and then top with some the lobster salad. Garnish with chives and caviar.

1 medium onion
1 firm-ripe California avocado
1 bunch fresh dill
3 cups cooked lobster meat (about 1 pound)
3/4 cup mayonnaise
1/2 cup sour cream
2 tablespoons drained bottled horseradish, or to taste
1 tablespoon red-wine vinegar
1 bunch watercress

Steps:

  • In a 5-quart kettle cover potatoes with salted cold water by 2 inches and simmer until just tender, 15 to 20 minutes. Drain potatoes in a colander and, while still warm, cut into quarters. Transfer potatoes to a large bowl and cool.
  • Finely chop onion. Halve, pit, and peel avocado and cut into 1/2-inch pieces. Chop enough dill leaves to measure 1/2 cup. Cut lobster into 1/2-inch pieces and add to potatoes with onion, avocado, and dill.
  • In a small bowl whisk together mayonnaise, sour cream, horseradish, vinegar, and salt and pepper to taste and pour over salad. Gently toss salad until combined well and season with salt and pepper. Chill salad, covered, at least 1 hour and up to 1 day.

LOBSTER SALAD WITH RED BEETS PETAL AND CAVIAR VINAIGRETTE

2 1/2 quarts water
2 1/2 cups white wine
2 chopped carrots
1 branch thyme
2 bay leaves
1 soup spoon black peppercorns
1 cup white wine vinegar
4 lobsters 1 1/2 pounds each
4 large red beets
2 ounces French string beans
1/2 cup extra virgin olive oil
2 teaspoon balsamic vinegar
1 tablespoon fresh chervil, chopped
3/4-ounce osetra caviar, for the vinaigrette, plus 1-ounce osetra caviar, for garnish (quenelles)
5 small bouquets mixed greens, tied with a sprig of blanched chive

Steps:

  • Court bouillon: In a large pot bring water to a boil, and simmer all ingredients, except the vinegar for 10 minutes, then add the vinegar and let simmer for another 5 minutes. Yield: 3 quarts
  • Cooking and cleaning the lobster: Bring the court bouillon to boil, and cook the lobsters (9 minutes for 1 1/2 pounds). Remove with a skimmer, and drain. When cold, put the lobster on its back, cut the tail in its center, pry open and remove the tail in 1 piece. Remove the vein. Slice 30 medallions and set aside. Break each claw under the joint and remove the flesh without breaking it. Flesh from the claws should remain whole.
  • Preheat oven to 325 degrees Fahrenheit
  • Cooking the Beets and the French String Beans: Wrap the beets (skin on) in aluminum foil so that the juice will not run-out. Cook them for 1 hour and 30 minutes. Let them cool down, remove the skin and cut 30 slices of 1/8-inch (5 slices per portion). With a round die cut 1 3/4 inches in diameter cut a nice round circle from each slice. (Keep the parings to make a salad with potatoes, touch of garlic and olive oil).
  • Place on the fire a pot of water to boil with a pinch of Hawaiian salt. Clean the string beans and place them in the boiling water and cook them quickly (if they cook too slowly they will turn yellow). They should be cooked in 3 to 4 minutes depending on quality and size. When you bite them they should be soft. Once cooked place them quickly in iced water so they keep their color. Drain and cut them into sections 1 1/2-inchs long, 6 pieces per portion. Set aside.
  • Caviar Vinaigrette: Mix the olive oil with balsamic vinegar. Add the 3/4-ounce caviar and the chervil. Mix but do not add salt (there is enough salt in the caviar). Add a touch of pepper.
  • On the top of the plate, place a bouquet of salad. At the bottom forming half a circle, place 5 petals of red beets. On the inside place 5 medallions of lobster on top of the petals. A lobster claw goes on top of the bouquet of lettuce, topped with a quenelle of caviar and a sprig of chervil. On the left a bunch of string beans and on the right a tomato rose. Coat the lobster medallions with caviar vinaigrette.

Lobster Chopped Salad with Fava Beans, Cherry Tomatoes, Avocado, Corn, and Applewood-Smoked Bacon image

When I was growing up, my mom and sister were obsessed with lobster. My father and I just never got it. But on both their birthdays, my father would take us all to the chosen lobster spot of the moment. While Jessica and my mom happily cracked their way through dinner, hardly glancing up from their plates, Dad and I would glumly saw through our landlubber specials. I admit I felt a little envious watching Jessica and Mom picking apart their matching dinners, knowing that I would never have that lobster bond with my mother. Normally, my mother prefers her lobster plain and simple-steamed and served with lemon and drawn butter. But one Mother's Day, I took liberty, hoping to entice her with this rendition of a classic chopped salad. It worked; while we're still on opposite sides of the table at the lobster shack, we both get excited about this salad.

Number Of Ingredients 14

2 live Maine lobsters, 1 3/4 to 2 pounds each
10-ounce slab applewood-smoked bacon
1/3 cup plus 1 tablespoon extra-virgin olive oil
1 1/2 cups fresh corn (from about 2 ears)
1 teaspoon thyme leaves
2 tablespoons finely diced shallots
3 tablespoons lemon juice
Pinch cayenne pepper
2 ripe avocados
3/4 pint cherry tomatoes, mixed colors if possible
1 large head butter lettuce, leaves separated, cleaned, and dried
2 tablespoons chopped flat-leaf parsley
2 tablespoons sliced green and opal basil
Kosher salt and freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil over high heat.
  • Insert the tip of a large chef knife just below the eyes of each lobster-this will kill them instantly. Add the lobsters to the pot of boiling water, making sure they are completely submerged. Cook the lobsters 10 minutes, and then remove them immediately to a bowl of ice water.
  • When the lobsters have cooled, twist off the tails and claws from the bodies. Save the bodies for another use, or discard.
  • Place the tails on their sides, and crush gently with the heel of your hand to break open the shells. Carefully pull out the tails. Cut the tails in half lengthwise, and remove the intestinal tract and any green tomalley. Cut each half crosswise into six or seven pieces.
  • Use the back of a large not-precious knife to break open the shell on the claws. Remove the claw meat, and cut each claw into three or four pieces. Carefully crack the shells of the knuckles and remove the meat. You should have about 12 ounces of lobster meat total.
  • Slice the bacon into 3/8-inch-thick slices. Arrange the bacon strips in two stacks, then cut the strips crosswise into 3/8-inch even-sided rectangles or lardons. Heat a large sauté pan over medium heat for 1 minute. Swirl in 1 tablespoon olive oil, add the bacon, and cook about 5 minutes, stirring frequently, until the bacon is tender and lightly crisped. Using a slotted spoon, remove the bacon to a plate lined with paper towels. Reserve the fat in the pan.
  • Return the pan to medium-high heat. Add the corn, thyme, 1/4 teaspoon salt, and a pinch of black pepper. Sauté over medium heat 3 to 4 minutes, until the corn is just cooked and tender. Remove to a platter or baking sheet to cool.
  • While the corn is cooling, make the vinaigrette: Place the shallots, lemon juice, and 1/4 teaspoon salt in a small bowl, and let sit 5 minutes. Whisk in the 1/3 cup olive oil and a pinch of cayenne. Taste for balance and seasoning.
  • Cut the avocados in half lengthwise. Remove the pit and peel. Dice the avocados into 1/2-inch cubes and season with 1/4 teaspoon salt. Slice the cherry tomatoes in half, and season with 1/4 teaspoon salt.
  • Place the lobster, corn, avocados, tomatoes, and bacon in a large salad bowl. Toss with 5 tablespoons vinaigrette and taste for seasoning, adding a little more vinaigrette if you like. Place the lettuce leaves on a large chilled platter and spoon a little vinaigrette over them. Toss the parsley into the lobster salad, and arrange it over the lettuce. Scatter the basil over the top.
  • You can boil and prepare the lobsters, make the vinaigrette, and sauté the bacon and corn ahead of time. Prepare the avocado and tomatoes just before serving.

3 tablespoons white wine vinegar
3 tablespoons canola oil
½ teaspoon soy sauce
¼ teaspoon grated fresh ginger
1 pinch white sugar

1 avocado, cut into chunks

Steps:

  • Fill a tall pot with 2 inches of water; bring to a boil. Add lobster, cover, and steam until tender, about 20 minutes. Rinse, cool, and cut lobster meat into chunks. Chill for at least 15 minutes.
  • Mix vinegar, oil, soy sauce, ginger, sugar, salt, and pepper together to make the dressing.
  • Mix chilled lobster with the dressing and gently mix in avocado. Serve chilled.

2 teaspoons Dijon mustard
1 tablespoon Champagne vinegar
1 tablespoon lime juice, plus 1/2 lime for squeezing
1 teaspoon cumin seeds, toasted and ground
1/2 teaspoon coriander seeds, toasted and ground
1/4 teaspoon red pepper flakes
Sea salt
1/3 cup extra virgin olive oil
2 handfuls watercress, stems removed
4 cups curly leaf lettuce, in pieces
1 cup thinly sliced hearts of palm
1 ripe avocado, thinly sliced
1/2 lemon, for squeezing

Steps:

  • Put 3/4-inch water in a stockpot, cover, and bring to a boil. Place one lobster in pot, and cover. When it begins to steam (about 30 seconds), cook for 10 minutes. Remove lobster, and let cool; repeat with second lobster. Reserve cooking juices. Remove tail meat, leg meat and claws from shells, and cut in 1/8-inch slices.
  • Whisk together mustard, vinegar, lime juice, cumin, coriander and red pepper flakes. Season with salt. Gradually whisk in olive oil until thickened, then whisk in one tablespoon lobster juices.
  • On large platter, arrange greens, hearts of palm and avocado. Lay lobster slices in overlapping rows. Sprinkle with lime and lemon juice, then pour vinaigrette on top. Serve.

9 tablespoons olive oil

1 1/2 teaspoons finely grated orange peel
2 avocados, halved, pitted, peeled, cut into 1/2-inch pieces

Steps:

  • Prepare barbecue (medium-high heat). Place smoke chips in 8 x 6-inch foil packet with open top. Set atop coals 5 minutes before grilling lobsters. Bring large pot of salted water to boil. Working in batches, drop lobsters headfirst into water. Cover; boil 2 minutes. Transfer lobsters to work surface. Immediately split in half lengthwise, using heavy large knife. Crack claws.
  • Arrange lobsters, cut side up, on grill. Cover; grill 6 minutes. Turn lobsters over and grill until just cooked through, about 5 minutes. Remove from heat. Remove lobster meat from shells. Cool. Cut meat into 1/2-inch pieces. Transfer to large bowl.
  • Whisk oil and next 5 ingredients in medium bowl to blend. Season with salt and pepper. (Can be made 1 day ahead. Cover lobster and dressing separately; chill. Rewhisk dressing before continuing.)
  • Add avocados, tomatoes and papaya to lobster in bowl. Pour 1/2 cup dressing over; toss. Season with salt and pepper.
  • Toss greens in another large bowl with enough remaining dressing to coat.
  • Divide greens among plates. Spoon lobster mixture atop greens and serve.
