Ingredients

4 eggs
2 cups milk
1-1/4 cups shredded cheddar cheese, divided
1/4 cup finely chopped onion
4 bacon strips, cooked and crumbled
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon paprika
1 package (10 ounces) frozen chopped spinach, cooked and drained
1 unbaked pastry shell (9 inches)

Steps:

In a large bowl, beat eggs; whisk in milk, 1 cup cheese, onion, bacon, salt, mustard and paprika. Add spinach. Pour into pie shell. Sprinkle with the remaining cheese. Bake at 400° for 40 minutes or until a knife inserted halfway between the center and the edge comes out clean.

Quiches don't have to be difficult to make. This delicious Swiss cheese, spinach and bacon quiche is made using refrigerated pie crust making this a fast quiche to whip up. Perfect for brunch, lunch or showers.

Ingredients

1 9 inch fitted to a 9 inch glass pie plate refrigerated piecrust
1 1/2 cups shredded Swiss cheese
1 lb cooked and crumbled bacon
2 cups chopped packed fresh baby spinach
6 large beaten eggs
1 1/2 cups heavy cream
to taste salt
to taste black pepper

Steps:

Preheat the oven to 375 °F. Combine the eggs, cream, salt and pepper in a food processor or blender. Layer the spinach, bacon and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

Preheat the oven to 350F. In a large mixing bowl combine eggs, half and half, salt, and nutmeg. Whisk until ingredients are combined.
Squeeze out the excess liquid from your frozen spinach. Add spinach and cheese to the egg mixture, mix until combined.
Take a deep pie dish and spray the inside with cooking spray. Pour your quiche mixture into the pie plate, then add your crumbled bacon evenly on top of dish. The bacon will sink into the egg.
Place into already preheated oven and cook for 1 hour or until quiche is set in the center. Slice into 8 servinge. Serve.
