Loaded Huevos Rancheros with Roasted Poblano Peppers image

This is a unique but tasty version of huevos rancheros. It's similar to a cowboy hash, as the potatoes take the place of the corn tortillas. -Joan Hallford, North Richland Hills, Texas

Number Of Ingredients 10

1 poblano pepper
1/2 pound fresh chorizo or bulk spicy pork sausage
4 cups frozen O'Brien potatoes, thawed
1/2 cup shredded pepper jack cheese
1 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
4 large eggs
Salsa, sour cream and minced fresh cilantro

Steps:

  • Place poblano pepper in a 12-in. cast-iron or other ovenproof skillet. Broil 4 in. from heat until skin blisters, rotating with tongs until all sides are blistered and blackened, about 5 minutes. Immediately place pepper in a small bowl; let stand, covered, 20 minutes., Peel off and discard charred skin. Remove stems and seeds. Finely chop pepper; set aside., In the same skillet, cook chorizo over medium heat until cooked through, 6-8 minutes, breaking into crumbles; drain. Add potatoes; cook and stir until potatoes are tender, 8-10 minutes. Stir in cheese, smoked paprika, kosher salt, garlic powder and pepper., With the back of a spoon, make 4 wells in potato mixture. Break an egg in each well. Cook, covered, on medium-low until egg whites are completely set and yolks begin to thicken but are not hard, 5-7 minutes. Serve with roasted pepper, salsa, sour cream and cilantro.

As in many Mark Bittman recipes, the idea here is more vegetables -- in this case, peppers -- than protein. It works because except for the jalapeño, none of the peppers is hot.

2 tablespoons olive oil
1 small onion, chopped
2 red bell peppers, chopped
2 poblano or Anaheim chiles, chopped
1 fresh hot green chile (like jalapeño), chopped, optional
1 tablespoon minced garlic
Salt and ground black pepper
4 eggs, beaten

Steps:

  • Put oil in a large skillet over medium-high heat. Add onion and cook, stirring occasionally, until it's translucent, 1 or 2 minutes.
  • Add peppers, chiles and garlic, and sprinkle with salt and pepper. Cook, stirring occasionally, until peppers are brightly colored but not too soft, 4 to 6 minutes.
  • Reduce heat to medium-low and pour in eggs. Cook, stirring occasionally with a wooden spoon or rubber spatula, until eggs are cooked, 3 to 8 minutes. Serve on toast or over rice, or wrapped in a flour tortilla.

Loaded Egg Bell Pepper Rings are quick breakfast full of protein and come together in minutes. Use any color of bell pepper and add your favorite toppings to make this your own.

4 eggs
1 red bell pepper (you could use any bell pepper)
1/2 cup spinach (roughly chopped)
2 Tablespoons crumbled feta cheese
8 Cherry tomatoes (sliced)
Salt and pepper, to taste

Steps:

  • Heat large non-stick skillet on stove top to medium temperature.
  • Sliced the bell pepper into thick slices (about 1 centimeter thick). Clean out the seeds and middle so it's just the pepper edges.
  • Place the peppers in the pan on the stove top. Crack the egg into the bell pepper ring.
  • Sprinkle desired amount of spinach, feta cheese, cherry tomatoes, and salt and pepper over the egg in the pepper.
  • If you like your eggs soft, cook for 3-5 minutes, or until the eggs are cooked to preference.
  • If you like your eggs hard, break up the yolk (I just used a fork) for even cooking.
  • Cook 6-9 minutes, or until the eggs are cooked to preference.

One-pan eggs & peppers image

1 tbsp olive oil
2 onions (320g), halved and thinly sliced
1 orange pepper, halved, deseeded and sliced
1 red chilli, deseeded and sliced
400g can chopped tomatoes
2 tbsp tomato purée
2 tsp vegetable bouillon powder
1 tsp dried oregano
1 tsp smoked paprika, plus a little for sprinkling
2 x 400g cans chickpeas
4 eggs
2 x 120g pots bio yogurt
2 garlic cloves, finely grated
4 tbsp chopped parsley

Steps:

  • Heat the oil over a medium heat in a large deep frying pan with a lid. Stir in the onions, then cover and leave to cook for 5 mins. Remove the lid and give the onions a stir - they should have softened and be starting to brown in places. Stir in the pepper and chilli, and cook for 2 mins, then tip in the tomatoes, tomato purée, bouillon, oregano, paprika and chickpeas, along with their liquid. Cover and turn the heat down to a simmer for 15 mins.
  • Create two dips in the mixture with a spoon and crack 2 eggs into them. Cover and cook over a low heat for about 5 mins, until just set.
  • Meanwhile, stir the yogurt with the garlic in a small bowl and sprinkle with paprika. Serve half the chickpea mixture with the cooked eggs. Serve half the yogurt on the side and sprinkle with half the parsley and a little paprika. Cool and chill the remainder. Will keep covered in the fridge for five days. Reheat the chickpeas in a small pan with a dash of water, and cook the remaining eggs in it, as above. Sprinkle the remaining parsley and paprika on the yogurt, then serve.
