1/4 cup onion, chopped
1/4 cup bell pepper, chopped
3/4 cup fat free liquid egg sub
Dash each garlic powder and black pepper
2 ounces cooked skinless chicken breast, sliced
1/4 teaspoon fajita seasoning mix
2 tablespoon reduced fat Mexican blend cheese, shredded
2 tablespoons salsa
Light or fat free sour cream, for optional topping

Steps:

  • Bring a skillet sprayed with nonstick spray to medium heat. Cook and stir onion and bell pepper until slightly softened and lightly browned, about 4 minutes. Reduce heat to mediumm low. Season egg sub with garlic powder and black pepper. Add to the skillet with the veggies, and let it coat the bottom.Cover and cook without stirring for 3 minutes, or until just set. Meanwhile, in a medium microwave safe bowl, season chicken with fajita seasoning. Cover and microwave for 1 minute or until hot. Top half of the omelette with shredded cheese and chicken. Fold the bare half over the filling. Top with salsa and sour cream

3 boneless, skinless chicken breasts, cubed
2 teaspoons salt
1 teaspoon pepper
2 teaspoons chili powder
2 teaspoons garlic powder
2 teaspoons cumin
3 tablespoons vegetable oil
1 onion, halved and sliced
4 cloves garlic, sliced
3 bell peppers, seeds removed, sliced lengthwise
1 lime, juiced
13 oz tortilla chips, 1 bag
2 cups pepper jack cheese, shredded
1 cup shredded sharp cheddar cheese
sour cream, to taste
salsa, to taste
guacamole, to taste

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Add the chicken breast to a bowl and season with salt, chili powder, garlic powder, and cumin.
  • In a large skillet, heat 2 tablespoons vegetable oil and cook chicken until slightly charred and no longer pink. Cook chicken in batches to avoid overcrowding the pan. Remove cooked chicken from the skillet, and transfer into a bowl.
  • Heat another tablespoon of oil, add the onions and cook for a couple minutes until onions are slightly translucent.
  • Add the garlic and peppers and cook slightly, then remove from heat. Transfer garlic and peppers to the chicken bowl, then top with lime juice.
  • Lay down half the tortilla chips on the skillet, followed by half the fajita mixture, and top with pepper Jack and cheddar cheese. Repeat with the remaining ingredients.
  • Bake until the cheese has melted, about 15 minutes.
  • Add your choice of topping (optional).

1 low-carb tortilla
1/4 cup cooked chicken
1/4 cup bell pepper
1/4 onion
1 teaspoon taco seasoning
1 teaspoon water
1 slice American cheese

Steps:

  • 1. Sautee chicken, peppers, and onions in a nonstick skillet.
  • 2. Scramble eggs, water, and taco seasoning; add mixture to skillet.
  • 3. Cook over medium heat until eggs are no longer runny.
  • 4. Add slice of cheese, turn heat to low, and cover for a few minutes.
  • 5. Transfer "omelet" to lavash wrap and roll up. Serve with sour cream or salsa, both optional.

  • Heat oil in a skillet, add garlic, sliced bell peppers, onions with oregano, taco seasoning, a generous pinch of salt and black pepper. Saute until onions and peppers are just soft. Remove from heat.
  • Make Omelette: Heat a non-stick skillet on medium heat. While skillet heat, beat well eggs with milk and pinch or 2 of salt and black pepper. Coat skillet with cooking spray, Add half of egg mixture and swirl to coat the pan. Cook until set on medium heat (2-3 minutes). Then, flip and cook other side for 1 minute. Remove in a plate. Repeat this step for next omelet.
  • When omelets are ready. Assemble fajitas by filling each omelette with chicken (sliced), cooked peppers, avocado slices equally dividing among two omelettes.
  • Fold the omelet, top with salsa, sour cream, cheese and fresh cilantro. Serve lime wedges on the side. Serve and enjoy!
