Loaded Breakfast Quesadillas Recipe - (4.5/5) image

Provided by á-4084

Number Of Ingredients 12

4 slices bacon
1/2 medium onion, finely chopped
4 large eggs
1 tablespoon sour cream plus more for serving
2 tablespoons chives, chopped
4 medium flour tortillas
Kosher salt, to taste
Freshly ground black pepper, to taste
1/3 cup Monterey Jack cheese, shredded
1/3 cup cheddar cheese, shredded
1 avocado, thinly sliced
Hot sauce, for serving

Steps:

  • Cook bacon in a medium nonstick pan over medium heat until crispy. Drain bacon on a paper towel-lined plate, reserving about 2 tablespoons of bacon fat in the pan. Add onion to the pan and cook, stirring occasionally, until softened, about 5 minutes. Whisk together eggs and sour cream in a medium bowl. Pour egg mixture into the pan. Let set slightly then reduce heat to low. Drag the eggs with a spatula or wooden spoon to create curds. When the eggs are almost cooked to your liking, season with salt and pepper. Fold in chives and remove from heat. Assemble quesadillas. Divide scrambled eggs between two tortillas. Top each with cheese and avocado slides. Place remaining tortillas on top. One at a time, cook quesadillas in a clean nonstick skillet over medium heat until the bottom tortillas is golden, about 3 minutes. Flip and cook the other side until golden. Repeat with other quesadillas. Serve warm with more sour cream and hot sauce, if desired.

Time 10m

Number Of Ingredients 7

1 flour tortilla (8" in diameter)
2 large eggs
1 Pinch salt and pepper
1/4 cup shredded cheese ((1 oz) Mexican cheese, medium cheddar or mozzarella)
3 oz breakfast Sausage (2 patties)
2 slices ham ((2 oz) chopped)
2 slices bacon ((2 oz), sliced)

Steps:

  • Heat a non-stick pan over medium heat. Cook Sausage or Bacon until browned and cooked through then remove to a plate. If using cooked ham, you can heat it up or just add it over the cheese in step 4. Wipe excess oil from skillet if needed. Reduce heat to low.
  • In a measuring cup, add 2 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan. Cook over low heat until When eggs are nearly cooked through (if you tilt the pan they shouldn't run).
  • Sprinkle the top with 2 Tbsp shredded cheese then cover with a tortilla. The cheese will make the tortilla stick to the egg. Use a large spatula to get under the egg and quickly flip over.
  • Sprinkle another 2 Tbsp of cheese or add cheese to taste. Sprinkle your cooked protein (sausage, bacon or ham) over half of the surface and fold the tortilla in half. Sautee on both sides until golden brown.* Remove from skillet and use a pizza cutter to cut quesadilla into wedges and serve warm.
