Little Gem Lettuce with Walnut Vinaigrette image

Little Gem lettuce is a small, sweet romaine-type variety. Romaine hearts can be used in its place. Recipe courtesy of Clare Vivier.

2 teaspoons cider vinegar
1 teaspoon red-wine vinegar
1 tablespoon minced shallot
1 teaspoon Dijon mustard
1/4 cup safflower oil
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
2 tablespoons finely chopped walnuts
6 medium heads Little Gem lettuce, halved lengthwise

Steps:

  • Whisk together both vinegars, shallot, and mustard. Gradually whisk in both oils; season with salt and pepper. Stir in walnuts.
  • Arrange lettuce on a large platter; spoon vinaigrette evenly over top and serve.

Pea and Little Gem Salad with Farro and Pecorino image

This spring salad can be made with pretty much any grain and firm grating cheese you like.

Yield Serves 8

Number Of Ingredients 10

1 cup semi-pearled farro
Kosher salt
1 garlic clove, finely grated
1/4 cup olive oil
3 tablespoons fresh lemon juice
Freshly ground black pepper
6 ounces sugar snap peas, trimmed, thinly sliced (about 2 cups)
8 cups Little Gem or other small lettuce leaves, torn if large
2 cups halved pea shoots (tendrils)
Shaved Pecorino Romano (for serving)

Steps:

  • Cook farro in a pot of boiling salted water until al dente, 25-35 minutes. Drain and spread out on a baking sheet; let cool.
  • Whisk garlic, oil, and lemon juice in a large bowl to combine; season dressing with salt and pepper. Add farro, peas, and lettuce to bowl, season with salt and pepper, and toss to coat. Add pea shoots and toss just until coated. Serve topped with Pecorino.

  • At 350°F, preheat the oven. Roast the walnuts for about 12 minutes in the oven until they turn golden. After the walnuts have cooled down, chop the nuts.
  • Put the walnut in a bowl and sprinkle salt. In a smaller bowl, add minced shallots and lemon juice. Season with salt and pepper and keep the dressing aside for 10 minutes. Then, add the walnut oil to it and whisk.
  • In a large bowl, add onion slices, lettuce, pecorino romano cheese, squash, and watermelon slices. Pour the dressing over it and toss it so that everything gets covered. Then, add the roasted walnuts for a crunchy texture.
