MEXICAN TACO MEATLOAF

My Mexican grandmother would use leftover corn tortilla chips in our meatloaf and everyone loved it! They all wanted seconds along with the recipe. A delicious Mexican-American comfort food.

1 ½ pounds lean ground beef
1 cup crushed tortilla chips
¾ cup shredded pepper Jack cheese
1 small onion, chopped
1 (1 ounce) packet taco seasoning mix
2 eggs, beaten
½ cup milk
¼ cup mild red taco sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
  • Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
  • Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
  • Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

2 tablespoons olive oil
1/2 cup finely chopped onion
1 medium carrot, finely chopped
1 rib finely chopped celery
1 garlic clove, minced
1 pound ground beef
6 ounces soft Mexican chorizo, removed from casing and crumbled
1 poblano chile, roasted, peeled, and diced
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1/2 teaspoon ground cumin
2 eggs, well beaten
1/4 cup ketchup
1/4 cup sour cream or Mexican sour cream
1/2 cup dried bread crumbs
2 medium tomatoes, cored
1/4 medium white onion
2 garlic cloves, unpeeled
1 to 3 serrano chiles
1/4 cup brown sugar
1 canned chipotle chile in adobo sauce, minced
1 tablespoon yellow mustard
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, carrot, celery, and garlic. Cook, stirring often until vegetables are soft, about 8 minutes. Set aside until cool enough to handle.
  • In a large bowl combine the sauteed vegetables, ground beef, chorizo, and diced poblano chile.
  • In a medium bowl, combine the salt, pepper, cayenne, cumin, and eggs. Add the ketchup and sour cream. Mix well with a fork and pour it on top of the mixed meats. Sprinkle with bread crumbs and mix thoroughly with clean hands.
  • Put the mixture into a 9 by 13-inch loaf-pan. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 160 degrees F, about 40 to 45 minutes. Remove from the oven and carefully pour off any accumulated pan juices.
  • Meanwhile, heat a heavy skillet over high heat. Add the whole tomatoes, onion, garlic cloves, and serrano chiles. Cook, turning frequently, until lightly charred on all sides. Peel the garlic cloves. Add all the charred ingredients to a blender. Pulse until chunky, then pour into a small skillet. Stir in the sugar, chipotle chile and mustard. Bring the mixture to a boil over medium heat. Cook until slightly thickened, about 4 to 5 minutes. Season with salt, to taste.
  • Slice the meatloaf and arrange on a platter. Spoon the salsa-glaze over the meatloaf and serve.

I love meatloaf, and love creating new ones to try. This is one that I created with a Mexican twist in mind... It is just wonderful, and is a WINNER for sure!

1 lb lean ground beef
1/4 cup instant minced onion or 1 medium onion, diced small
1 cup Italian seasoned breadcrumbs
1 egg, beaten
1/2 teaspoon italian seasoning
3 tablespoons ketchup
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can Ro-Tel tomatoes
salt & freshly ground black pepper, to your liking (optional)
8 ounces sargento's shredded four-cheese Mexican blend cheese, I use reduced fat

Steps:

  • Mix the hamburger, minced onions, bread crumbs, beaten egg, and Italian Seasoning together well with your hands.
  • Add in the ketchup, 1/2 the can of tomato sauce, and 1/2 the can of Ro-tel tomatoes. Mix well.
  • Put 1/2 the mixture into an oven-proof baking pan (I used a teflon pan), making a square or a circle, whichever you prefer.
  • Cover the top of the meat mixture with a generous amount of cheese, not coming quite to the edge.
  • Top the cheese with the rest of the hamburger mix, and pat down to make a loaf. Press the sides together a little so the cheese won't drip out when cooking.
  • Mix the tomato sauce and Ro-tel tomatoes together and spread on top of the meatloaf.
  • Bake in a 350 oven, for about 30 minutes before taking it out, to drain off the juices in the pan. (I set the juices aside to put in my Mexican Rice, as part of the water to make the rice).
  • Put back in oven for 30 more minutes then take out, and cover to top of the meatloaf with the rest of the cheese.
  • Put back in the oven, and watch carefully for the cheese to melt on top.
  • Remove, cut, and serve.

1 jar (16 ounces) picante sauce

Steps:

  • In a large bowl, combine the first seven ingredients. Add beef and mix well. Pat into a greased 8x4-in. loaf pan. , Bake, uncovered, at 350° for 1 hour or a thermometer reaches 160°. Top with warm picante sauce.

My husband loves my meat loaf and I make them for our home and I love meat loaf and it is so simple to fix it and they are so delicious and tasty. When we have meat loaf leftovers and we make meat loaf sandwiches. It is so good and tasty.

2 lb ground beef
1 small onion, finely chopped
1 green pepper, seeded and finely chopped
2 eggs
2 slice white bread, crumbled
1/4 c ketchup
1 tsp salt
1/2 tsp black pepper
GLAZE:
1/4 c ketchup
2 Tbsp packed brown sugar

Steps:

  • 1. Preheat the oven to 350 degrees F. In a small bowl, whisk together all the glaze ingredients and set aside. In a large bowl, combine all the meatloaf ingredients and mix well. Press the mixture into a 9 by 5-inch loaf pan. Bake for 30 minutes. Remove from the oven and brush some of the glaze over the top of the meatloaf. Bake for 30 minutes more. Remove from oven and let stand for 5 minutes. Turn the meatloaf out onto a serving platter and spoon the remaining glaze over the top before serving.

1/8 teaspoon salt, optional
1/8 teaspoon pepper
1/2 pound lean ground beef

Steps:

  • In a small bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. , Shape into two loaves; place in an 8-in. square baking dish coated with cooking spray. Bake at 350° for 30-40 minutes or until meat is no longer pink and a thermometer reads 160°.

Years ago I wanted to try something different in my meatloaf and decided to add the rice. My family and I loved it, and have been eating it ever since. I have several that I make, but this one is one of my FAVORITES!

1 1/2 lbs lean ground beef
1 medium onion, chopped fine
1 cup Italian seasoned breadcrumbs
2 eggs
1/2 cup milk
1 cup rice, uncooked
3 cups water
1 cup ketchup, divided
1 cup tomato sauce, divided
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • Put beef and onions together in a lg. bowl. Mix well.
  • Add bread crumbs, eggs, and milk, and mix well.
  • Add rice and water, and mix well. (It will be soupy. It won't be like that when it's done).
  • Add 1/2 cups ketchup, and 1/2 cups tomato sauce, salt and pepper, and mix well. I use my hands to mix it together. It doesn't look so good before being cooked, but it is when it is cooked!
  • Put mixture in a 9x13-inch casserole dish, shaping into a loaf.
  • In a bowl, mix the remaining ketchup and tomato sauce together. Pour over top of meatloaf.
  • Bake in 350°F oven, for 1 hour and 15 minutes or until no longer pink in the middle.
  • Let sit for a few minutes before serving.

1/2 lb raw extra lean ground beef
1/2 lb raw lean ground turkey
2 large egg whites
2 ounces cornbread stuffing mix
1 medium onion
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
4 ounces canned green chili peppers, diced
8 ounces red enchilada sauce

Steps:

  • Preheat oven to 375
  • Spray broiler pan with fat free cooking spray.
  • In large bowl, mix all ingredients except 4 oz of the enchilada sauce.
  • Form into a loaf shape with your hands
  • Place on broiler pan.
  • Cook 1 hour
  • Top with the rest of the enchilada sauce.
  • Cook 5 minutes longer
  • Slice and serve.

I love meatloaf, and was looking for a new way to make it... I experimented until I came up with this one, and boy, was I glad I did... It was WONDERFUL... Thought I would share it with all of you, it was so good!

3 jalapeno peppers, pureed in the blender, then drained, reserving 2 tablespoons of juice, for sauce (If you don't like it hot, use only 2 jalapenos, and reserve 1 tablespoons for sauce, or use 1 4 oz.)
1/2 cup oats, uncooked
4 tablespoons egg substitute or 1 egg, whipped
4 tablespoons ketchup
1 medium onion, finely chopped, reserving 2 T. for sauce
1/2 teaspoon chili powder
1/2 teaspoon salt
1 lb ground beef
6 tablespoons kraft four-cheese Mexican blend cheese, shredded
2/3 cup ketchup
2 dashes garlic powder
3/4 cup kraft four-cheese Mexican blend cheese, shredded

Steps:

  • Preheat oven to 300.
  • Combine the first 8 ingredients together. Mix well.
  • Add ground beef, and mix well.
  • In a 9x13" baking pan, shape meat into a loaf about 1" high x 8" long x 6" wide.
  • Top with the 6 T. Mexican cheese down the middle of the loaf.
  • Bring up both sides of the meatloaf to cover the cheese, and then press down to cover cheese. Carefully reshape into a loaf again.
  • Put in the oven, and bake for 40-45 minutes.
  • Meanwhile, combine ketchup, reserved 2 tablespoons jalepanos, reserved onions, and garlic powder in a small plastic dish.
  • Put in microwave on high heat for 2 minutes, or until thoroughly heated.
  • Spoon sauce over cooked loaves, and sprinkle with the 3/4 cup cheese.
  • Put pan back into the oven, and cook about 15 more minutes, or until cheese is melted down the sides of the meatloaf.
  • When done, take out of oven, slice into 2" slices, and serve.

1/4 cup yellow mustard

Steps:

  • Heat oven to 350.
  • Mix ground beef and bread crumbs together, and mix well.
  • Add onion, ketchup, barbecue sauce, and A-1 sauce, and mix well.
  • Shape into a rectangle, and put into a 9x13" pan.
