LINDA'S MESSED UP CHICKEN

Been making this as a family great recipe for many years. First had it with my sister Sandy in the 80's. Added a few of my own ingredients and call it Linda' messed up chicken. This is what my father-n-law Jay used to call it.

3 large chicken breasts, whole
2 can(s) cream of mushroom soup
4 slice(s) velveeta mexican cheese (block)
1 package(s) taco flavored chips

Steps:

  • prepare chicken breast by rinsing, leaving skin on. Put the three large chicken breast in cold water and cook on top of stove in a large pan for at least 35 minutes. Make sure that the breast are done and not pink inside.
  • Once Chicken Breast have cooked. Rinse the breast and de-bone and remove skin. "Caution" chicken breast will be hot, so run cold water as you de-bone and remove skin.
  • Shred chicken and layer in a 9" x 13" casserole dish. Cover the bottom of the lightly greased casserole dish.
  • Top chicken with two cans cream of mushroom soup, spread evenly over the shredded chicken.
  • Buy one Block of Velveeta Mexican Flavor Cheese. with a cheese slicer, slice four slices of Velveeta. Placing the Cheese until all ingredients are covered. I use 4 slices about 1/8 in thick. You may add more cheese if desired to taste.
  • Take the one Bag of Taco Flavored Chips and Crush lightly (in the bag). Then take the bag and spread evenly over the casserole mixture.
  • Bake in a 375 degree oven for 45 minutes. During the last 15 minutes (cover the top of the casserole with aluminum foil to prevent from over cooking chips. I would place the casserole dish on a cookie sheet in case it bubbles over, not making a mess out of your oven.
  • I prepare a simple lettuce salad to serve with the Casserole that and Bread and Butter slices. Enjoy

This is one of my most requested recipes. It is the best 'non-fried' chicken recipe that I've tasted. Chicken is battered and breaded, but then baked instead of fried.

1 cup cornflake crumbs
½ cup seasoned dry bread crumbs
2 teaspoons salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
¾ cup evaporated milk
1 egg
¼ cup lemon juice
2 tablespoons butter, melted
4 pounds bone-in chicken pieces, with skin
1 cup all-purpose flour
cooking spray

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a shallow baking dish with cooking spray.
  • In one bowl, stir together the cornflake crumbs, bread crumbs, salt, garlic powder, onion powder and paprika. In another bowl, whisk together the evaporated milk, egg, lemon juice and butter using a fork.
  • Dip the chicken pieces in flour, and shake off the excess. Dip into the milk batter, then into the crumb mixture. Place pieces in a single layer in the greased baking dish. Spray the top of the chicken with cooking spray.
  • Bake uncovered for 1 hour in the preheated oven, until nicely browned, and juices run clear.

I have been using this grilled chicken recipe since I was 12 years old. That's 40-plus years! It is so moist and delicious, it will melt in your mouth. -Linda Pace, Lees Summit, Missouri

Number Of Ingredients 9

1-1/4 cups olive oil
1/2 cup red wine vinegar
1/3 cup lemon juice
1/4 cup reduced-sodium soy sauce
1/4 cup Worcestershire sauce
2 tablespoons ground mustard
1 tablespoon pepper
3 garlic cloves, minced
1 broiler/fryer chicken (3 to 4 pounds), cut up

Steps:

  • Place the first eight ingredients in a blender; cover and process until blended. Pour 2 cups marinade into a large resealable plastic bag. Add chicken; seal bag and turn to coat. Refrigerate 4 hours or overnight. Cover and refrigerate remaining marinade. , Drain chicken, discarding marinade in bag. Grill chicken, covered, over medium heat 40-45 minutes or until juices run clear, turning occasionally and basting with reserved marinade during the last 15 minutes.

I made this recipe with what was left in the fridge at college. It turned out a big success and everyone loves it! The tomatoes reduce to make a juice that's heavenly with crusty bread.

2 tablespoons olive oil
1 tablespoon garlic salt
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1 teaspoon ground black pepper
1 teaspoon Old Bay® Seasoning
1 teaspoon seasoning salt
4 skinless, boneless chicken breast halves
2 medium green bell peppers, chopped
2 large tomatoes, chopped
1 red onion, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix the olive oil, garlic salt, parsley, chives, pepper, Old Bay Seasoning, and seasoning salt. Rub the chicken breasts with 1/2 the mixture, and place the breasts in a medium baking dish.
  • Toss the green bell peppers, tomatoes, and red onion with the remaining olive oil mixture. Arrange over the chicken.
  • Bake 1 hour in the preheated oven, stirring the vegetables once, until the vegetables are tender, the chicken is no longer pink, and its juices run clear.

  • In a Dutch oven or large heavy pan with cover, heat olive oil over MEDIUM heat. Add chicken pieces and season to taste with salt and pepper. Sprinkle with paprika. Sauté chicken about 5 minutes per side, or till nicely browned. Cook in batches if necessary. Transfer browned chicken to a plate.
  • Add the butter to the pan. When melted, add onions and cook for about 5 minutes, or until softened and translucent. Add potatoes and carrots and saute for and additional 10 to 15 minutes or until just barely fork tender.
  • Sprinkle flour over the vegetables and stir to combine. Turn the heat to HIGH and pour in the wine. Bring to boil and allow to boil for 1 minute before adding the chicken broth. Season with the herbes de Provence.
  • Return the mixture to a boil and return the chicken, with juices, to the pan. Reduce heat to medium-low, cover the pan, and cook for 30 to 40 minutes or until vegetables are tender and chicken is cooked through with no pink remaining. Garnish with chopped parsley and serve.
