LINDA'S APPLE POUND CAKE

I was wanting something sweet and I used what I had when I put this recipe together. I have had to make as many as 3 in one week. My family loves this cake. The men on my husband job love it also. I have made some for them to take home. It is best when really ripe apples are used.

3 c diced apples
1/2 c oatmeal
1/2 c coconut
2 Tbsp cinnamon
1/4 c sugar
2 stick butter
8 oz cream cheese
3 c sugar
6 eggs
1/4 tsp rum flavoring
1 Tbsp vanilla
3 c self rising flour
3/4 c chopped pecans
ICING
1 can(s) condensed milk

Steps:

  • 1. Mix the first ingredents together and set aside.
  • 2. Meanwhile in a mixing bowl cream together cream cheese, butter, rum and vanllia foavorings, sugar, and eggs one at a time mixing after each until smooth. Using a wooden spoon or spatchula mix in flour one cup at a time, mixing well. Add first 5 ingredents to this and mix well,(again with spoon or spatchula). Pour mixture into greased and floured bundt cake pan. Sprinkle top of cake with the chopped pecans.
  • 3. Preheat oven to 325* for 1hr 30min to 1hr 45min. or until toothpick inserted comes out clean.
  • 4. Icing: Condensed Milk. Polk holes in top of cake while still warm right out of oven and pour the condense milk on top of cake soaking as much as you can in the holes. Allow to cool completely before cutting or placing in cake cover. If it sweats it will effect the taste of the cake. So it has to cool completely before storing.

GERMAN APPLE CAKE

Yield Makes 1 8-inch square cake

Number Of Ingredients 10

1 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon coarse salt
8 tablespoons (1 stick) unsalted butter, softened
1 1/3 cups sugar
2 large eggs, lightly beaten
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
Juice of 1/2 lemon
3 to 4 tart apples, such as Granny Smith, Cortland, or Winesap

Steps:

  • Preheat the oven to 375 degrees Fahrenheit. Butter an 8-inch square pan or equivalent-size baking dish.
  • In a small bowl, whisk together the flour, baking powder, and salt. In a medium bowl, cream together the butter and 1 cup of the sugar. Stir in the eggs and vanilla. Add the flour mixture and beat until combined. Spread the mixture evenly in the prepared pan.
  • In a small bowl, combine the remaining 1/3-cup sugar with the cinnamon. Squeeze lemon juice into a medium bowl. Peel, core, and slice the apples into the bowl. Add the cinnamon-sugar mixture and toss to thoroughly coat each apple slice. Arrange the apple slices on top of the batter in overlapping rows, pressing lightly into the batter. Bake for 45 minutes, until a cake tester or toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 10 to 15 minutes before serving.

NORWEGIAN APPLE CAKE

Though quite straightforward, this recipe for Norwegian apple cake from Nevada Berg's cookbook "North Wild Kitchen" did raise a question. A whole tablespoon of cinnamon? Really? But it was not at all excessive, giving the cake autumnal fragrance and flavor along with a nicely burnished surface. What this recipe also offers is great flexibility. Though it calls for an 8-inch springform, it also worked in a 9-inch and a 10-inch, the latter providing a little less cake in proportion to topping (though no change in cooking time). Larger pans require more fruit. And on that score, in place of apples the recipe works well with fresh figs and peaches. Small purple plums, pears, apricots and even bananas are some other options to consider.

4 tart apples, like Granny Smith
1 cup/227 grams (2 sticks) salted butter, softened, plus more for greasing the pan
2 cups/255 grams all-purpose flour
1 1/2 teaspoons baking powder
1 1/4 cups/250 grams granulated sugar
3 large eggs, at room temperature
1/2 cup/4 ounces whole milk
1/3 cup/32 grams sliced almonds
2 tablespoons dark brown sugar
1 tablespoon cinnamon
Whipped cream or vanilla ice cream for serving

Steps:

  • Peel and core apples; slice 1/2-inch thick. Set aside. Use some of the butter to grease an 8-inch springform cake pan. Dust with a little flour. Heat oven to 350 degrees.
  • Sift or whisk flour with baking powder. Set aside. In the bowl of a standing mixer, beat granulated sugar with 3/4 cup (1 1/2 sticks) of the butter for several minutes, until light and fluffy. Beat in eggs, one at a time, then beat mixture about 3 minutes until creamy. Gradually add flour mixture in three batches, alternating with milk, mixing well after each addition. Transfer batter to pan.
  • Arrange the apple slices on top of batter in tight overlapping concentric circles, gently pressing them in a bit. Scatter almonds on top. Dust with brown sugar and cinnamon. Dot with remaining butter. Place in the oven and bake about 1 hour, until a cake tester comes out clean, the top has browned and feels fairly firm to the touch.
  • Allow to cool in the pan until just warm. Remove sides of pan and serve with whipped cream or ice cream. If cake has cooled completely it can be warmed before serving.

5 apple - peeled, cored and sliced
2 cups all-purpose flour
½ teaspoon salt
4 teaspoons ground cinnamon
4 teaspoons baking powder
4 eggs
2 cups white sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 cup chopped walnuts
4 teaspoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) lightly grease and flour a 9x13 inch pan.
  • Sift together flour, salt, cinnamon and baking powder. Set aside.
  • In a large bowl, beat eggs and sugar for 15 minutes on high speed with an electric mixer. Add oil and blend in.
  • Add four mixture and mix well. Add vanilla. Fold in apples and nuts. Pour batter into 9x13 inch pan.
  • In a small bowl, mix 4 teaspoons sugar with 1 teaspoon cinnamon. Sprinkle over cake.
  • Bake at 350 degrees F (175 degrees C) for 50 to 60 minutes or until a toothpick inserted into center of cake comes out clean.

2 cups white sugar
1 teaspoon salt
1 teaspoon baking soda
1 ¼ cups vegetable oil
2 teaspoons vanilla extract
3 eggs, beaten
3 ½ cups apples, peeled and chopped
1 cup chopped walnuts
1 ¼ cups packed brown sugar
⅓ cup milk
½ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
  • In a large bowl, sift together flour, sugar, salt, and baking soda. Make a well in the center and add oil, eggs, and vanilla. Mix well (batter will be thick). Fold in chopped apples and nuts. Spread batter into prepared pan.
  • Bake in preheated oven until a toothpick inserted into cake comes out clean, 40 to 50 minutes. Glaze while still hot.
  • To make the glaze: In a saucepan, combine brown sugar, milk, and butter. Bring to a boil and continue cooking for 2 1/2 minutes, stirring constantly. Pour over cake while still hot.

1 cup self-rising flour
½ cup butter, cut into 1-inch chunks
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
⅝ cup chopped walnuts
1 cup chopped raisins
1 ½ cups grated apple
3 eggs
¼ cup pineapple juice
1 tablespoon grated lime zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Place the flour in a bowl and mix well; rub in the butter until the pieces are the size of small peas. Stir in the cinnamon and nutmeg.
  • Stir in the walnuts, raisins, and apples. Add the grated lime rind, eggs, and pineapple juice. Beat well until thoroughly combined. Spoon the mixture into the prepared pan and smooth the top.

3 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
3 eggs
2 cups granulated sugar
1 1/2 cups vegetable oil
3 cups peeled & chopped apples
1 cup walnuts
2 tsp vanilla
TOPPING
1 cup light brown sugar
1/4 cup milk
1 stick margarine or butter

Steps:

  • Grease and flour 10 inch bundt pan. Sift dry ingredients together. In a large mixing bowl beat the eggs. Add sugar and oil and beat for 3 minutes on high speed. Add sifted dry ingredients slowly. This batter is very stiff. Fold in apples, walnuts and vanilla.
  • Pour into pan and bake for 1 hr. 15 min. at 350°F.
  • Prepare topping by combining all topping ingredients in a saucepan and bring to a boil. Let boil for 3 minutes and pour over hot cake when it comes out of the oven. Allow to cool for 15 minutes and remove from pan onto a plate.
