This is a rather quick, yet yummy recipe. You don't have to use the onions, pepper or mushrooms if you don't want.

Not only do these pretty bites take advantage of convenient refrigerator crescent rolls, but they can be made ahead and popped in the oven right before company arrives. MINI CALZONES

Mini Calzones image

Sponsored by Classico® Pasta Sauce. These little pockets of pizza are perfect finger food. Enjoy them as an appetizer before an Italian feast, or as an easy weeknight meal the whole family will love--just add a hearty salad. A few shortcut ingredients in the recipe, including store-bought garlicky tomato sauce, save you time without skimping on flavor.

Time 40m

Yield 8 mini calzones

Number Of Ingredients 12

1/2 cup semolina flour or cornmeal
All-purpose flour, for dusting
1 pound store-bought pizza dough, thawed if frozen and at room temperature
1 large egg
1/2 cup shredded Italian cheese blend
1/2 cup ricotta
1/2 cup grated Parmesan
4 scallions, thinly sliced
2 teaspoons garlic powder
Kosher salt and freshly ground black pepper
24 thin slices pepperoni (about 2 ounces)
2 cups roasted garlic tomato sauce, such as Classico® Roasted Garlic Pasta Sauce

Steps:

  • Position a rack in the middle of the oven and preheat to 450 degrees F. Sprinkle a baking sheet with the semolina and set aside.
  • Lightly flour a work surface and roll the dough into a round that is about 12 inches wide and 1/2 inch thick. Cut out 8 rounds with a 3 1/2- to 4-inch biscuit cutter or drinking glass. Dust with flour and cover with a clean kitchen towel or plastic wrap.
  • Beat the egg with 1 tablespoon water in a small bowl. Set aside.
  • Combine the cheese blend, ricotta, 1/4 cup Parmesan, scallions and garlic powder in a medium bowl. Season with salt and pepper to taste.
  • Place 3 slices of the pepperoni on one half of each round of dough, leaving a 1/4-inch border around the edges. Top each round with 2 tablespoons of the cheese mixture.
  • Brush the egg wash around the edges of one dough round using your finger or a pastry brush. Gently fold the dough over the filling to enclose and crimp the edges with a fork to seal. Repeat with the remaining dough rounds.
  • Brush the tops of the calzones with the egg wash and sprinkle with the remaining 1/4 cup Parmesan.
  • Place the calzones on the prepared baking sheet and bake on the middle rack until golden, 14 to 16 minutes, rotating the sheet halfway through for even baking.
  • While the calzones bake, heat the tomato sauce in a medium saucepan over medium heat until bubbling, 1 to 2 minutes. Transfer to a small bowl. Place the calzones on a platter with the sauce and serve immediately.

THREE-CHEESE CALZONES

Three-Cheese Calzones image

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 12

2 cups shredded part-skim mozzarella cheese (about 8 ounces)
1/2 cup ricotta cheese
1/2 cup fresh basil, chopped
2 scallions, sliced
1/4 cup plus 2 teaspoons grated parmesan cheese (about 1 1/2 ounces)
1 tablespoon breadcrumbs
1 pound prepared pizza dough, at room temperature
All-purpose flour, for dusting
1 large egg, lightly beaten
Marinara sauce, warmed, for dipping
4 ounces sliced salami
Giardiniera (Italian pickled vegetables), for serving (optional)

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil.
  • Make the filling: Mix the mozzarella, ricotta, basil, scallions, 1/4 cup parmesan and the breadcrumbs in a medium bowl until combined. Divide the pizza dough into 4 equal pieces. Roll out each piece on a lightly floured surface into a 7-to-8-inch round.
  • Spoon one-quarter of the filling onto one half of each dough round, leaving a 1/2-inch border. Lightly brush the edges of the dough with some of the beaten egg; fold the dough over the filling and crimp the edges with a fork to seal. Transfer the calzones to the prepared baking sheet.
  • Brush the calzones with the remaining beaten egg and cut 2 slits in the top of each to let steam escape. Sprinkle the calzones with the remaining 2 teaspoons parmesan, then bake until golden brown and cooked through, 18 to 20 minutes. Serve with marinara sauce, the salami and giardiniera.

"PHILLY" CHEESESTEAK CALZONES

A great hand pie for watching the big game. The recipe makes 4 large calzones, but I have cut them to smaller sizes and made 12 appetizer sizes.

Categories     Steaks and Chops

Time 25m

Number Of Ingredients 16

DOUGH
2 1/4 c bread flour
1 1/4 tsp kosher salt
1/2 tsp instant yeast
2 Tbsp olive oil, extra virgin
1 c water, ice cold
1/2 tsp sugar
FILLING
2 medium rib eye steaks
1 medium green bell pepper, chopped
1 medium onion, chopped
olive oil, extra virgin
kosher salt and freshly ground black pepper to taste
garlic powder with parsley, to taste
red pepper flakes, to taste
8-10 slice provolone cheese

Steps:

  • 1. DOUGH: Prepare the dough the night before. Mix flour, salt, and yeast together in a bowl. Add the olive oil, water, and sugar and mix until it forms a sticky ball. Knead the dough for 5-7 minutes adding flour, or water if needed. Place the ball of dough on a baking sheet sprayed with nonstick spray and cover the dough with plastic wrap. Place in the refrigerator!
  • 2. CALZONE: Sauté the peppers and onions in a pan with olive oil. Slice the rib eye steak in very thin strips and add it to the pan with the peppers and onions just before they are finished sautéing, but DO NOT cook the strips all the way, or they will over-cook in the oven. Add dashes of garlic powder, salt, pepper, and red pepper flakes (season to taste). Set the filling aside, and flour a surface to work with the dough.
  • 3. Preheat the oven to 350-degrees. Divide the dough into four equal parts. Roll one part out with a rolling pin, place the filling inside and top with a slice of provolone cheese (you can choose to cut the dough to the "braid" the calzone, or just cover the filling and cut vent holes into the top of the calzone).
  • 4. Repeat for the remaining balls of dough and then place the calzones on a greased baking sheet. Brush the tops of the calzones with olive oil and sprinkle with garlic powder. Bake at 350-degrees for 20-30 minutes, or until golden brown.
