Number Of Ingredients 6

2 cups fresh raspberries
1/2 cup sugar
1 tablespoon lemon juice
1-1/2 teaspoons unflavored gelatin
1/4 cup cold water
1 cup heavy whipping cream

Steps:

  • Place the raspberries in a food processor; cover and puree. Strain and discard seeds. Transfer puree to a large bowl. Stir in sugar and lemon juice; set aside. , In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Stir over low heat until gelatin is completely dissolved. Stir into raspberry mixture. Refrigerate until slightly thickened, about 1 hour. , Transfer gelatin mixture to a large bowl. Beat on high speed until foamy. Gradually add cream; beat until thickened, about 2 minutes. Spoon into dessert dishes. Cover and refrigerate until set, 1-2 hours.

2 tablespoons lime juice
1 tablespoon grated lime zest

Steps:

  • In a large bowl, beat cream until it begins to thicken. Add the sugar, lime juice, zest and vanilla; beat until stiff peaks form. Spoon into dessert dishes. Garnish with lime and mint if desired.

FROZEN LIME MOUSSE

6 egg yolks
1 1/4 cups sugar
1/3 cup lime juice
2 ounces Tequila
1 1/2 cups heavy cream
1 tablespoon lime zes

Steps:

  • In a nonreactive metal bowl combine yolks, sugar and lime juice. Place bowl over a pan of simmering water and begin to whisk. Be sure bowl is not touching water. Continue to whisk until the mixture reaches a temperature of 166 degrees (on a candy thermometer). Place bowl on standup mixer, or use hand held beaters, and beat until mixture is cool and thick, about 5 minutes. Add Tequila and beat until combined.
  • In a separate bowl beat cream and zest until they form stiff peaks. Fold cream into yolk mixture. Pour mixture into freezable container. Cover, place in freezer and allow to freeze overnight.
  • Scoop frozen mousse into decorative dishes and garnish with fresh raspberries.

1/2 tablespoon grated Key lime zest
1/2 cup fresh Key lime juice
1/2 cup sugar
Pinch of salt
3 large eggs
3/4 stick unsalted butter, cut into bits
2/3 cup chilled heavy cream

Steps:

  • Whisk together zest, juice, sugar, salt, and eggs in a small heavy saucepan. Add butter and cook over medium-low heat, whisking frequently, until thick enough to hold marks of whisk, about 5 minutes. Force through a fine-mesh sieve into a bowl, then quick-chill in an ice bath, stirring occasionally, about 5 minutes.
  • Beat cream until it holds stiff peaks, then fold into custard gently but thoroughly. Spoon into glasses and chill at least 2 hours and up to 12.

200ml double cream
4 tbsp caster sugar
3 tbsp lime juice (about 3 limes), plus zest 1 lime
few raspberries

Steps:

  • Put the cream and sugar in a small saucepan. Heat until just boiling, then boil vigorously for 2½ mins, while stirring constantly. Turn off the heat, stir in the lime juice and most of the zest and divide between 2 small pots or glasses. Chill for at least 2 hrs (or overnight if you're making ahead), until set.
  • To serve top each posset with a few raspberries and the remaining zest.

50g icing sugar
squeeze or two of lemon juice
250g pack of frozen raspberries

Steps:

  • Tip the quark and sugar into a large bowl, squeeze in a few drops of lemon juice and beat with a wooden spoon until smooth and creamy (you can do this an hour or two ahead).
  • Gently stir in raspberries until they begin to break up and mixture is streaked pink; taste and add a little more lemon juice if liked. Spoon into glasses and serve.

4 -5 limes, divided
6 ounces cream cheese, softened
2/3 cup sweetened condensed milk
1 (12 ounce) container frozen whipped topping, thawed, divided
3 cups assorted fresh berries (strawberries, raspberries, blueberries and blackberries)
1 (16 ounce) prepared pound cake
1 pint lime sherbet, softened
1/4 cup sliced almonds, toasted
additional berries (to garnish) (optional)

Steps:

  • Thinly slice two limes; set aside. Zest remaining limes to measure about 1 tablespoon zest; juice limes to measure 1/2 cup juice.
  • Whisk cream cheese, condensed milk, lime juice and zest. Gently fold in all but 1/2 cup of the whipped topping until smooth.
  • Slice strawberries.
  • Cut pound cake into 1-inch cubes.
  • To assemble trifle, place half the cake cubes into bottom of trifle bowl. Top with half of the sherbet; spread evenly. Top sherbet with half of the berries and half of the cream cheese mixture. Arrange lime slices in a circular pattern against inside of bowl to garnish. Repeat layers one time with remaining pound cake cubes, sherbet, berries and cream cheese mixture.
  • Decorate the top of the trifle with the remaining whipped topping, almonds and additional berries, if desired.
  • Note: Any flavor of sherbet can be used in this recipe.
