ASIAN-INSPIRED GRILLED GINGER-LIME SWORDFISH



Asian-Inspired Grilled Ginger-Lime Swordfish image

This swordfish is marinated in a mildly sweet and sour, Asian-inspired mixture, including honey, soy sauce, and ginger, then grilled hot and fast.

2 (6-ounce) swordfish steaks
3 tablespoons honey
3 tablespoons soy sauce
1 tablespoon vegetable oil
1 to 2 cloves garlic , minced
1 tablespoon fresh ginger, grated
1 teaspoon lime zest
1 lime, juiced
1/4 teaspoon white pepper

Steps:

  • Gather the ingredients.
  • Place fish in a large glass bowl or shallow baking dish.
  • Combine marinade ingredients in a small bowl and pour over fish. (Make sure to coat fish evenly on both sides.) Cover dish with plastic wrap and place in refrigerator for 30 minutes to 1 hour.
  • Preheat grill to medium-high heat.
  • Lightly oil cooking grate.
  • Remove fish from marinade, making sure to reserve marinade.
  • Place fish on oiled grill and brush with reserved marinade. Allow to cook for 3 to 4 minutes, turn, and coat other side with marinade. Allow fish to cook for a remaining 5 minutes.
  • Once fish is opaque in center, remove from heat and serve.

Indonesian Grilled Swordfish image

1/3 cup soy sauce
1/4 cup canola or peanut oil, plus extra for brushing on the grill
2 teaspoons grated lemon zest (2 lemons)
1/4 cup freshly squeezed lemon juice
1/4 cup minced or finely chopped ginger root
2 tablespoons minced garlic (4 cloves)
2 tablespoons Dijon mustard
Six 8-ounce, 1-inch thick swordfish steaks
Kosher salt

Steps:

  • Combine the soy sauce, canola oil, lemon zest, lemon juice, ginger root, garlic, and mustard in a bowl. Pour half the sauce in a low flat dish that's just large enough to hold the swordfish in one layer. Place the swordfish on top of the sauce and spread the remaining sauce on top. Cover with plastic wrap and refrigerate for at least 4 hours or preferably overnight.
  • Thirty minutes before you're ready to serve, build a charcoal fire or preheat a gas grill.
  • When the coals are medium-hot, brush the cooking grate with oil to prevent the fish from sticking. Remove the fish from the marinade, allowing some of the ginger to cling to the fish, and discard the marinade. Sprinkle the fish generously on both sides with salt and place it over the coals. Cook for 5 minutes on each side, just until it's no longer pink in the middle. Place on a platter, cover tightly with aluminum foil, and allow to rest for 10 to 15 minutes. Serve hot or warm.

1/4 cup fresh lime juice
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon minced peeled fresh ginger
1/2 teaspoon grated lime peel
2 6-to-7 ounce swordfish steaks (each about 3/4 to 1 inch thick)
Lime wedges

Steps:

  • Whisk first 5 ingredients in glass pie dish to blend. Add fish; turn to coat with marinade. Refrigerate at least 3 hours or up to 6 hours, turning once.
  • Preheat broiler. Remove fish from marinade; reserve marinade. Place fish on broiler pan or baking sheet. Sprinkle with salt and pepper. Broil fish until opaque in center, about 3 minutes per side.
  • Meanwhile, transfer marinade to heavy small saucepan. Boil marinade until reduced to thin glaze, about 6 minutes. Spoon glaze over fish. Garnish with lime wedges and serve.

SWORDFISH KABOBS WITH BALSAMIC GLAZE



Swordfish Kabobs with Balsamic Glaze image

2/3 cup extra-virgin olive oil, plus more for oiling the grill grates
3 tablespoons balsamic vinegar
3 tablespoons lemon juice
1 tablespoon Dijon mustard
Kosher salt and freshly cracked black pepper
Kosher salt and freshly cracked black pepper
2 pounds swordfish, cut into 1-inch pieces
1 medium head fennel, cut into 1-inch pieces
1 pint grape or cherry tomatoes

Steps:

  • If using wooden skewers, soak them in water in a casserole dish or baking sheet for 30 minutes prior to grilling. Prepare a grill or grill pan for medium-high heat; oil the grill grates with olive oil.
  • Mix the balsamic, lemon juice and mustard in a small bowl. Add the olive oil in a slow stream while whisking. Season with salt and pepper.
  • Thread the fish, fennel and tomatoes onto 8 skewers, alternating between fish and vegetables. There should be roughly 3 pieces of fish per skewer. Season all sides of each skewer with salt and pepper. Brush the balsamic mixture over all the skewers.
  • Add the skewers to the grill and cook until there are clear grill marks on the flame side, 3 to 5 minutes. Flip the skewers and cook for an additional 3 to 5 minutes. Continue to rotate the skewers and cook on each side until all sides are cooked and have a slight char.
  • Serve hot!

GRILLED SWORDFISH WITH CORIANDER LIME BUTTER

1 1/2 tablespoons unsalted butter, softened
1 teaspoon freshly grated lime zest
1 tablespoon fresh lime juice
1 small garlic clove, minced
1 tablespoon minced fresh coriander leaves
two 6-to-8 ounce swordfish steaks
Accompaniment if desired: grilled spiced red onions
For Grilled Spiced Red Onions
1 tablespoon olive oil
1/2 teaspoon ground cumin
cayenne to taste
1 large red onion, cut crosswise into four 1/2-inch-thick slices
1 teaspoon fresh lime juice if desired

Steps:

  • Make Grilled Swordfish:
  • Prepare grill.
  • In a small bowl together butter, zest, 1 teaspoon lime juice, garlic, coriander, and salt and pepper to taste.
  • Rub both sides of swordfish steaks with remaining 2 teaspoons lime juice and season with salt and pepper. Grill swordfish on an oiled rack set 5 to 6 inches over glowing coals until just cooked through, 3 to 4 minutes on each side. (Alternatively, swordfish may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.)
  • Top each swordfish steak with a dollop of coriander lime butter and serve with grilled onions.
  • Make Grilled Spiced Red Onions:
  • Prepare grill.
  • In a small bowl stir together oil, cumin, cayenne, and salt and pepper to taste.
  • Brush both sides of onion slices with oil mixture and grill on an oiled rack set 5 to 6 inches over glowing coals until well-charred and tender, 2 to 3 minutes on each side. (Alternatively, onion slices may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.)
  • Separate onion slices into rings. In a bowl toss onion rings with lime juice and season with salt and pepper.
  • Serve with grilled fish, meat, or poultry.

1/2 tablespoon low salt soy sauce
1 teaspoon minced fresh ginger
1 tablespoon extra virgin olive oil
1 teaspoon garlic powder
1/2 teaspoon lime zest
2 6 ounce swordfish belly filets
1 lime, cut into quarters

Steps:

  • Whisk the lime juice, honey, soy sauce, ginger, olive oil, garlic powder and zest in a large bowl. Add the swordfish to the marinade and refrigerate for 3 hours. Remove the swordfish from the marinade. In a small saucepan, bring the marinade to a boil and reduce in half. Place the swordfish on a pan lined with aluminum foil and broil for 3 minutes per side. Spoon the glaze over the swordfish and broil for 2 minutes more. Garnish with lime wedges.
