Thin slices of salmon lounge in a citrus, cilantro and garlic marinade for four hours before being served with chips, rice or tortillas. Fresh ingredients are what makes this simple, easy dish amazing. The hardest part of it is the slicing and dicing. With minimal effort and no cooking you'll get rave reviews. This can just as easily pass for an appetizer in smaller portions.

¼ teaspoon white sugar
2 ½ tablespoons sea salt
½ teaspoon chili paste or sauce
¼ cup fresh lime juice
¼ teaspoon fresh ground pepper
¼ teaspoon cumin
¼ cup extra virgin olive oil
1 clove garlic, minced
¼ cup minced red onion
1 ripe tomato, finely diced
2 tablespoons minced fresh cilantro
1 pound very fresh salmon fillets (sushi-grade preferred), thinly sliced
1 avocado, sliced

Steps:

  • In a large glass or plastic bowl, dissolve the sugar, salt, and chili paste in the lime juice. Season with pepper and cumin. Stir in the olive oil, garlic, onion, tomato, and cilantro. Gently mix in the salmon, then cover, and refrigerate for 4 hours.
  • To serve, drain the excess liquid from the salmon, then gently stir in the avocado slices, and allow to rest at room temperature for 15 minutes.

QUICK LIME & CORIANDER (CILANTRO) SALSA



Quick Lime & Coriander (Cilantro) Salsa image

This is what I throw together if we're having fish and I want a quick salsa/sauce to go with it. It's quick, easy, healthy and you can change the ratios to suit your tastes or that of the fish! Please note that amounts are somewhat estimated as I do change this depending on what fish we're having. This is what I'd make for salmon, but it's just my preference. I would probably actually use 1 tbsp of lime juice but I like quite a strong lime flavour and I don't think most people would fancy it so much my way!

1 tablespoon chopped fresh coriander (cilantro)
2 teaspoons lime juice (I use bottled stuff)
2 tablespoons low fat Greek yogurt
1 pinch ground cumin

Steps:

  • Fling all the ingredients in a bowl and mix well.
  • If you're not so keen on lots of lime then add it in slowly until it suits your tastes.
  • Serve immediately.

1 teaspoon garlic powder
1/4 teaspoon salt
1 teaspoon black pepper
1 lb salmon steaks or 1 lb fillets
1 tablespoon extra virgin olive oil
1/4 cup lime juice
1/4 cup fresh cilantro
1 teaspoon Splenda sugar substitute or 1 teaspoon other sugar substitute

Steps:

  • Sprinkle garlic powder, salt and pepper on top of salmon steaks or fillets.
  • In a small glass, mix olive oil, lime juice, cilantro and Splenda.
  • Place salmon in a nonstick skillet over medium-high heat and cook 4-5 minutes. Turn and cover with cilantro mixture and cook another 4-5 minutes.

If you haven't had ceviche, you are in for a real treat. You can make this with shrimp, fish, or scallops. Be aware that the seafood is not cooked in the traditional way, but is "cooked" in the lime juice mixture. There is a chemical process that occurs when the acid of the citrus comes in contact with the fish is similar what happens when the fish is cooked, and the flesh becomes opaque and firm. This ceviche is fresh and delicious!! Enjoy!

1/4 cup freshly squeezed lime juice
1 jalapeno pepper, seeded and diced
1 teaspoon freshly grated ginger
1 tablespoon extra virgin olive oil
1 lb firm sea bass or 1 lb halibut, skins removed and cut into 1/2 inch dice
3 scallions, white and light-green parts only,thinly sliced on the bias
1 cucumber, cut into matchsticks
1/4 cup fresh mint leaves
1/4 cup fresh cilantro leaves
1 avocado, peeled,pitted,and cut into 1/2 inch dice (optional)
salt & freshly ground black pepper

Steps:

  • In a nonreactive bowl, combine juice, jalapeño, ginger, and oil.
  • Add shrimp/fish, and toss.
  • Cover with plastic.
  • Chill until flesh is opaque, 1 hour or overnight, stirring occasionally.
  • Add remaining ingredients.
  • Season with salt and pepper.
  • Toss, and serve.

1/2 lb raw fresh wild salmon
1/2 an English cucumber, diced
1/2 large mango, peeled and diced
1/2 large avocado, peeled and diced
1/2 jalapeno, minced
2 tablespoons cilantro, minced
1 lime, juice of
1 lime, zest of
1 tablespoon sesame seeds
1 tablespoon sesame oil
2 teaspoons black sesame seeds

Steps:

  • Add the chopped cucumber to a medium bowl.
  • Add the mango and avocado to the bowl.
  • Add the minced jalapeno and minced cilantro.
  • Add the lime zest and the juice of the lime.
  • Add the sesame seeds and the sesame oil.
  • Dice the salmon (make sure you remove the skin and bones first!).
  • . Mix everything together until well combined.
  • Transfer into a serving bowl and refrigerate until ready to serve (up to a couple of hours.).
  • Serve with rice crackers or cucumber slices.
