Keto Norwegian Crispbread Recipe image

This Norwegian crispbread recipe is so easy and tasty because it's a mixture of nuts, seeds and spices. It's a keto cracker that is also gluten free with great crunch. Try it topped with avocado or your favorite low carb spread. It's full of healthy ingredients and has a only 1.5g net carbs per piece.

1 cup almond flour
2 tablespoons hulled, raw sunflower seeds
2 tablespoons sesame seeds
2 tablespoons Parmesan cheese, grated
2 tablespoons ground flax seed
1 tablespoon olive oil
2 egg whites
2 tablespoons Everything Bagel Spice (see note)

Steps:

  • Preheat oven to 325° F.
  • In a bowl mix all of the ingredients to make a dough.
  • Line a cookie sheet with parchment paper and place the dough on top.
  • Spray a piece of wax paper and lay over the dough. Using a rolling pin, roll the dough out until it's about 1/4 inch thick. This dough will not rise. Try to shape the dough into a rectangular shape.
  • Score the dough using a knife or pizza cutter but make sure not to cut all the way through. Place in the oven and bake until brown but not burnt, about 40 minutes. (note cooking times may vary so please check it frequently.)
  • Let cool before breaking apart. If the outside crackers brown quicker than the middle, you can break them off and place it back into the oven to bake the rest.
  • NOTE: If you don't have the Everything Bagel Spice you can make your own. Just mixed equal parts sea salt, dried minced onion, dried minced garlic, sesame seeds and poppy seeds. Mix together and then use 2 tablespoons of this mix in the dough.

7 Wasa Light Rye Crackers
1 Cup Butter
1 Cup Swerve Brown Sugar
1/2 Tsp Salt
1 Cup Sugar Free Chocolate Chips ((Bake Believe or Lily's))
1/2 Cup Chopped Pecans ((Optional))

Steps:

  • Preheat oven to 350 Degrees.
  • Line a 9x13 pan with parchment paper or aluminum foil.
  • Place 7 Wasa crackers into the pan without overlapping. You may use an extra cracker or two to fill in gaps if needed.
  • Melt the butter, Swerve and salt in a medium saucepan over medium heat. Heat until the mixture starts to boil.
  • When it starts to boil, set a timer for 5 minutes and stir continuously. The mixture will bubble and look frothy. Keep stirring. It will start to thicken and become syrupy.
  • Remove from heat and pour the mixture evenly over the top of the Wasa crackers. Use a spoon to spread if necessary.
  • Place the pan in the oven and cook for 5-7 minutes. You want to see the edges bubbling some before removing. Watch it closely though, you want bubbles but not burned toffee.
  • Remove from the oven and immediately sprinkle the chocolate chips on top of the wasa toffee.
  • Allow the chocolate chips to sit for about 2 minutes so that they can start to melt. Use a spoon or spatula to spread the chocolate.
  • If you are using any toppings like pecans or unsweetened coconut, sprinkle that on top of the chocolate now.
  • Place the pan into the refrigerator for two hours so that it can set up.
  • Remove and break or cut the Wasa cracker candy into pieces before serving.

1 cup wheat bran
2 tablespoons oat bran
3 tablespoons whey protein, isolate
1 tablespoon sesame seeds
1 teaspoon salt
1 1/2 cups water

Steps:

  • Preheat oven to 350°F-175°C and spray cookie sheet WELL.
  • Mix ingredients and pour onto sheet (this is very watery). Try to get the bran mixture distributed evenly.
  • Bake 10 min, remove sheet from oven, score crackers, and return to oven.
  • Bake 15 minute more.
  • Turn oven off and let sheet sit in oven 1 hour.
  • Remove sheet from oven, and turn oven on to 250°F-120°C.
  • With spatula, turn crackers over, and return to oven for 10-15 minute.
  • Turn oven off and let sheet sit in oven 1 hour. (Letting crackers sit in oven while it's off helps them to dry out.).
