SPICY ASIAN ZUCCHINI
Simple but full of flavor, this Spicy Asian Zucchini is another wonderful, healthy side dish for you to try It's ready in under 10 minutes too!

Steps:
- Heat sesame oil in a skillet on medium high heat.
- Add the zucchini and garlic and saute for about 5-7 minutes or until desired tenderness
- Place zucchini on a plate.
- Combine the soy sauce, sriracha, and honey and whisk together until combined.
- Pour the mixture over the sauteed zucchini and toss to combine.
- Sprinkle with green onions
- Serve warm or at room temperature.

ASIAN-STYLE ZUCCHINI

- Melt the butter in a skillet over medium heat. Stir in the zucchini, and cook until lightly browned. Sprinkle with soy sauce and sesame seeds. Season with garlic powder and pepper, and continue cooking until zucchini is well coated and tender.

Steps:
- Preheat oven to 350 degrees.
- Cook zucchini until tender. (On the stove, add a little water, cover and cook about 15 minutes. In the microwave, cook about 5 minutes.).
- Either on the stove or in the microwave, melt butter with onions in it.
- Pour water off zucchini.
- Combine zucchini, onions, butter, salt, pepper and pinched bread in a good-sized bowl and stir.
- Add egg and first amount of cheese and stir.
- Pour into a greased casserole dish. Sprinkle remaining cheese on top.
- Bake at 350 degrees for 30 minutes. Add remaining cheese about 10 minutes before casserole is done.

HAZELNUT AND COURGETTE (ZUCCHINI) BAKE
I've lost count of the number of times I've made this recipe, which comes from "Sarah Brown's Vegetarian Cookbook". Sarah Brown is a well known British cookery writer. This roast is a light, delicately flavoured centrepiece dish, which can be served hot or cold. Ideal for summer dining, and a useful way of using some of your garden's over-abundant crop of courgettes! The last time I made this recipe (after posting) I decided the mix was 'wet' enough without adding the pureed tomato, so I've updated this to show this ingredient as optional. Works fine with and fine without--your choice.

- Preheat the oven to 350°F/180°C/gas mark 4.
- In a large frying pan gently sauté the onion for 3-4 minutes in 2 tablespoons of oil.
- Add the hazelnuts, courgettes, sesame seeds, cumin, turmeric and ginger; stir ingredients together and continuing to stir occasionally, cook over a moderate heat for 7-10 minutes until the nuts have lightly browned and the courgettes are soft (the hazelnuts will absorb the oil during cooking so add the remaining oil during this stage if you need to); remove from heat when cooked.
- Mix in the oatmeal, almonds, coconut and tomatoes (if using) and stir together thoroughly; season with cayenne, salt and black pepper.
- Grease a 1 lb loaf tin or a deep pate dish and press the mixture in well; bake for 35-40 minutes or until the top is well browned and firm to the touch.
- Remove from oven when cooked and allow the roast to rest in its tin for a few minutes before turning out and slicing; for extra presentation you can decorate the top with additional thin cut slices of courgette that have been gently fried.

ZUCCHINI BAKE
The only way I could get men around here to eat Zucchini. It so good they even ask for it now! this is a great vegetable dish that will have you begging for another slice. We love it! I was told it was originally a "Pampered Chef" recipe!

Steps:
- Preheat over to 350°F.
- in large skillet melt the butter and fry the onions and zucchini, adding the garlic, oregano and Basil, until they are lightly browned and onions have lost their color and become clear.
- In a large bowl mix the cheeses and eggs add salt and pepper to taste.
- set aside.
- In a 9 x 11 casserole dish press the crescent roll dough into the bottom of the dish making a pastry shell for the zucchini and cheese mixtures.
- When zucchini is done, pour into the waiting cheese and egg mixture and mix together.
- Then pour into the casserole dish.
- Bake for approx 20 minutes or until golden and bubbly. Enjoy!
- Note: I'm not real sure about the measurements for the oregano and the basil, as I just dump until it looks good to me.
