LIGHT CHEESECAKE
Our family adores cheesecake, but I wanted to serve something healthier. I came up with this lighter version that I make for both holidays and everyday. -Diane Roth, Adams, Wisconsin

- Preheat oven to 350°. In a small bowl, combine wafer crumbs, butter and 1 teaspoon sugar. Press onto the bottom and 1/2 in. up sides of a greased 9-in. springform pan. Bake 8 minutes. Cool on a wire rack. Reduce oven setting to 325°., In a large bowl, beat cream cheeses and remaining 1-1/4 cups sugar until smooth. Beat in sour cream, cornstarch and vanilla. Add eggs and egg whites; beat on low speed just until blended. Pour into crust. Place pan on a baking sheet., Bake 60-65 minutes or until center is almost set. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., Remove rim from pan. Top cheesecake with strawberries.

LIGHT-AS-AIR LEMON CHEESECAKE

- DIRECTIONS 1. In food processor, process crumbs (to make crumbs,, 2 tablespoons of the sugar and butter until mixture resembles coarse crumbs. Press mixture firmly over bottom and 1/2 inch up sides of a 9 inch springform pan. Bake in a 350˚ oven until lightly browned (about 10 minutes). 2. In clean food processor, combine 3/4 cup plus 2 tablespoons of the sugar, both packages of cream cheese, 1 cup of the sour cream, eggs, egg whites, lemon peel, lemon juice and flour. Process until smooth. 3. Pour cream cheese filling into crust. Return to oven and bake until filling jiggles only slightly in center when pan is gently shaken. (35-45 minutes) Cool in pan or on rack for 30 minutes. After you take the cake out of the oven, stir together remaining 1 cup sour cream and remaining 1 tablespoon of sugar, cover and refrigerate. Spread cooled cheesecake with sour cream topping. Cover and refrigerate until cold (at least four hours). To serve, remove springform pan rim. Garnish with fresh raspberries or strawberries, if desired.
LIGHT AS AIR CHEESECAKE
NOT New York style cheesecake! Good with fresh berries. From "Diabetes Cooking for Everyone", by Carol Gelles. Exchanges: 1 lean meat, 4 1/4 fat. If fat-free cream cheese is used, exchanges are 1 very lean meat, 1/2 lean meat, 1/4 other carbohydrate, 3/4 fat.

- Preheat oven to 350 Fahrenheit. Butter an 8-inch springform pan.
- In a large bowl beat the cream cheese with agave syrup and vanilla until smooth. Beat in eggs. Remove and reserve 1/2 cup of the batter.
- In a medium bowl, stir the ground nuts into the reserved batter. Spread over the bottom of the prepared pan, then pour the remaining batter on top. Bake 1 hour, or until browned on top.
- Cool completely in the refrigerator.

AIR-FRYER CHEESECAKE
This recipe for an air-fryer cheesecake shows the potential of the appliance and the creativity of people, who seem willing to try making anything in the machine. Four months after Rebecca Abbott bought her first air fryer, she was stunned when she made a perfect cheesecake in it - no cracks or dips. She created this recipe, along with Jennifer West, for their blog, Air Frying Foodie. (The two included a cookies and cream version in their cookbook, "Air Fryer Beginner Recipes.") This cheesecake is done in a fraction of the time it would take to bake one and looks beautiful, especially with cherry pie filling on top.

- Brush melted butter on the bottom and sides of a 7- or 8-inch springform pan that fits in your air fryer. Line the bottom with parchment paper and brush with melted butter.
- In a medium bowl, mix the graham cracker crumbs and melted butter with a spoon until the mixture is the texture of coarse meal. Transfer the graham cracker mixture to the prepared pan and press evenly with the spoon to form a level crust.
- Using a stand mixer fitted with the paddle attachment or a hand mixer and a mixing bowl, beat the cream cheese on medium speed until creamy and smooth, 1 to 2 minutes. Add the eggs, condensed milk and vanilla, and beat on medium speed, occasionally scraping the sides and bottom of the bowl, until completely smooth, 1 to 2 minutes.
- Put the pan with the crust into the air fryer, then pour the cream cheese mixture over the crust. It should almost reach the rim of the pan. Close the air fryer lid and turn the air fryer setting to bake.
- Bake the cheesecake at 300 degrees until the top is lightly browned and the center jiggles slightly, 25 to 35 minutes. It may take a little more or less time depending on the air fryer.
- Carefully remove the springform pan from the air fryer, let it sit at room temperature for about 1 hour, and then cool it in the refrigerator for 6 to 8 hours. When ready to eat, remove the cheesecake from the pan. Slice with a warm knife, wiping it clean between cuts. If desired, top with cherry pie filling.

- Heat oven to 375 degrees. Generously butter 9" spring-form pan. Set on a large sheet of foil, bring foil up to cover sides of pan then set aside. The cheesecake will be baked in a water bath and this will help make the pan waterproof. Have all ingredients at room temperature.
- Place cracker crumbs and sugar in medium bowl and whisk to combine. Pour in melted butter and combine until all crackers are moistened. Press into bottom of spring-form pan and up sides about 1". When thoroughly compacted, place in hot oven and bake 15 minutes. Remove from oven and set aside.
- In a stand mixer with the paddle attachment, whip the cream cheese about 2 minutes until fluffy. Scrape bowl. Add sugar and combine 1 minute then scrape again. Add eggs one at a time on low speed, scraping again once combined. Now add zest, juice, vanilla and salt and mix only until combined. Add sour cream and combine on low for about 20 seconds.
