Light and Easy Bow Tie Pasta Salad Recipe image

A light, refreshing and easy pasta salad, perfect for summer picnics and outings. This lemon basil pasta salad recipe is always a crowd pleaser!

Number Of Ingredients 9

16 ounces pasta
¼ cup lemon juice
¼ cup olive oil
2 tablespoons whole grain mustard
1 tablespoon garlic (minced)
5 ounces feta (crumbled)
1 pint cherry tomatoes (halved)
6 leaves basil ( sliced thin)
salt and pepper (to taste)

Steps:

  • In a large pot of boiling water, prepare pasta until al dente.
  • In a small mixing bowl or jar whisk or shake lemon juice, olive oil, mustard and minced garlic until well combined.
  • Drain bow tie pasta and rinse with cold water to shock the noodles.
  • In a large serving bowl, toss drained pasta with dressing, feta, cherry tomatoes and basil.
  • Salt and pepper to taste.
  • Refrigerate until serving (recommend 2+ hours to allow the pasta salad dressing to marinate the bowtie pasta).

1/3 cup MIRACLE WHIP Light Dressing
1/4 cup KRAFT Lite Zesty Italian Dressing
1 cup multi-grain elbow macaroni, cooked
1 cup KRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses
3/4 cup matchlike carrot sticks
1/2 cup frozen peas, thawed
1/2 cup chopped red peppers

Steps:

  • Mix dressings in large bowl.
  • Add remaining ingredients; mix lightly.
  • Refrigerate 30 min.

This is from Willi Fitzpatrick's Everyday Gourmet. It has less oil and no mayo but very refreshing and a pleasant change from heavier pasta type salads. A great side dish for barbecues.

8 ounces rotini pasta or 8 ounces similar pasta
2 oranges, juice of
1 tablespoon Dijon mustard
1 lime, juice of
1 tablespoon olive oil
1 tablespoon sugar
1/2 teaspoon Worcestershire sauce
1/2 green pepper, slivered
1/2 small red onion, thinly sliced
1/3 English cucumber, in 1/2 inch pieces
1/3 cup feta cheese, crumbled

Steps:

  • Cook pasta until tender, drain and rinse in hot and then cold water.
  • Meanwhile, mix the orange juice, mustard, lime juice, olive oil, sugar and Worcestershire.
  • Toss pasta, dressing and vegetables together.
  • Top with feta.
  • Serve at close to room temperature.
  • (Can be made ahead, covered and refrigerated until 1 hours before serving).
  • P.S. We actually prefer it cold.
