This easy Broccoli Salad is loaded up with bacon, cheese, and a 3-ingredient sweet-and-tangy salad dressing. We call it Piggly Wiggly salad in the Midwest, and it's the ultimate year-round party side dish.

4 cups broccoli florets (bite-sized, from 2 bunches)
4 cups cauliflower florets (bite-sized, from 1 head)
2 cups shredded cheddar cheese
1 pound bacon (fried and crumbled (see notes))
1 cup red onion (diced )
2 cups mayonnaise ((see notes))
1 cup granulated sugar
1/4 cup white vinegar

Steps:

  • To make the dressing, In a small bowl whisk together mayonnaise, sugar, and vinegar. In a large bowl, combine broccoli, cauliflower, onion, cheese, and bacon.
  • Pour dressing mixture to taste over the salad ingredients and toss well until evenly coated.

  • Microwave 5 cups broccoli florets and 1 tablespoon water in a bowl, covered, 2 minutes. Combine 1/4 cup cider vinegar, 1/2 thinly sliced shallot and 1 teaspoon sugar in a small bowl; set aside. Cook 3 bacon slices in a skillet until crisp, 6 to 8 minutes; drain, then crumble. Stir 1 tablespoon bacon drippings and 3 tablespoons sour cream into the vinegar mixture. Toss with the broccoli, 1/3 cup dried cranberries and the bacon. Season with salt and pepper.

4 slices thick-cut bacon
1/4 of a medium onion, finely chopped (about 1/3 cup)
1 pound broccoli (1 medium bunch)
1/2 cup dried cranberries
1/2 cup mayonnaise, try our homemade mayonnaise recipe
1 tablespoon apple cider vinegar
1 tablespoon Dijon mustard
Salt and fresh ground black pepper

Steps:

  • Cook the bacon until crisp (see note below). Chop into small pieces.
  • Add onion to a small bowl and cover with warm water. Leave for 10 minutes, then drain. This tones the raw onion flavor a little.
  • Meanwhile, separate the broccoli crowns from their thick stem. Remove the woodiest part of the stem - usually 1/2-inch from the bottom - and discard (or save for stock). Chop the remaining portion of the stem into bite-size chunks. (If the stem is hardy, use a vegetable peeler to remove the outer layer and then chop-see our video to watch us do this.). Next, snap the florets from the broccoli crown and pull them apart so that they are bite-size. Rinse broccoli, and then pat or spin dry.
  • Drain the red onion and toss with the broccoli, bacon, and cranberries in a large bowl.
  • In a separate bowl, stir the mayonnaise, cider vinegar, mustard, 1/4 teaspoon of fine sea salt, and a few grinds of pepper together. Taste for seasoning, then adjust.
  • Pour two-thirds of the dressing over the broccoli and onion and mix well. If the salad seems dry, add a little more of the dressing. Let stand at least 15 minutes before serving or keep refrigerated (it should last two to three days, but we have never been able to keep our hands off it for that long).

First time I had this at a church potluck, another lady and I were nearly fighting over the last serving--it was SO good! So we took the empty bowl and went looking for the owner to BEG for the recipe. Here it is!

8 slices bacon
3 bunches fresh broccoli (and cauliflower)
6 green onions (or one large onion)
1/2-1 cup raisins
1/2-1 cup nuts (cashews are the best!)
1 cup mayonnaise (no substitutes)
1/2 cup white sugar (or less)
1 1/2-2 tablespoons cider vinegar

Steps:

  • Fry the bacon; break into pieces; set aside.
  • Trim broccoli stems, cut into 1/2 - 1-inch pieces; cut flower ends into small pieces, too; put into a large serving bowl.
  • Slice green onions into the broccoli (large onion should be chopped).
  • Add raisins and nuts to the broccoli and onions; tossing well.
  • Add bacon now or wait until serving time if you don't like it to get soggy-ish.
  • DRESSING: Mix dressing ingredients in a small bowl until sugar dissolves.
  • Add dressing to the broccoli mixture; stir well to coat everything.
  • If you didn't add the bacon earlier, add it now.
  • Best served at room temperature.
  • OPTIONS: Leave out the raisins or nuts or bacon--just don't leave them all out at the same time. Instead of 3 bunches of broccoli, add some cauliflower--very pretty, too!

1 pound bacon
1 bunch broccoli, finely chopped
½ cup sunflower seeds
½ cup diced red onion
¾ cup mayonnaise

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and let cool enough to handle, 5 to 10 minutes. Crumble.

1 tsp onion powder

I've made this many times as a hurry-up side dish. When trying to figure out which region this recipe represented, I finally closed my eyes & picked one. Italian? Well, the word broccoli does come from the Italian "brocco" meaning arm branch so it kind of fits. Enjoy!

8 -10 slices lean bacon (to lower fat use turkey bacon)
20 ounces fresh broccoli florets or 20 ounces frozen broccoli florets
1 carrots, grated or 1/2 cup matchstick carrot
1 small red onion, thinly sliced
6 tablespoons apple cider vinegar
3 tablespoons sugar
3 tablespoons vegetable oil
salt
pepper

Steps:

  • Cook bacon in microwave until crisp. (I've used pre-cooked & packaged bacon in a pinch).
  • Cook broccoli in microwave until crisp tender, 8-10 minutes. Drain.
  • In a large bowl, toss drained broccoli, carrot & onion.
  • In a glass bowl or measuring cup, combine vinegar, sugar & oil. Microwave on HIGH for 2 minutes then pour over vegetable mixture. Toss to coat.
  • Add salt & pepper to taste.
  • Serve arm or chilled (I prefer warm.).
  • Crumble bacon over top when ready to serve.
