3 ounces soho lychee liqueur
2 ounces vodka
2 ounces cranberry juice
1 dash fresh lime juice

Steps:

  • Add to a shaker and mix with ice.
  • Pour into martini glasses and garnish with a slice of lime or a seeded fresh lychee.

One 15-ounce can lychees in syrup, drained, syrup reserved, 4 lychees set aside for eyeballs
1/3 cup light corn syrup
3 to 6 drops red food coloring
4 blueberries
18 ounces ginger beer, cold
1 cup lychee juice, cold

Steps:

  • For the cocktail: In a blender, puree the lychees with 1/4 cup of the reserved syrup until smooth. Freeze for about 1 hour to chill.
  • For the blood drip glasses: On a plate, mix the corn syrup and food coloring until fully combined. Dip 4 coupe glasses a couple times in the corn syrup mixture, swirling to cover the rims. Turn the glasses right-side up, let the syrup drip down the sides and then set on wax paper to dry, about 5 minutes.
  • For the lychee eyeballs: Insert a blueberry into the hole of the 4 reserved lychees.
  • Finish the cocktail: Add 3 tablespoons of the chilled lychee puree to each of the blood drip glasses. Fill to the top with ginger beer and a splash of lychee juice. Stir gently.
  • Place lychee eyeball into each drink and serve.

The lychee martini is a beautiful vodka cocktail. Learn how to make this flavorful, sweet, and fruity drink and discover lychee syrup or liqueur recipes.

For the Lychee Liqueur:
2 cups lychee fruit
1 lime (zested)
375 milliliters vodka
1 cup simple syrup
For the Lychee Syrup:
1 cup sugar
1 cup water
1/4 to 1/2 cup lychee fruit
For the Cocktail:
1 1/2 ounces ​ vodka
1 1/2 ounces lychee liqueur (or lychee syrup)
Dash of lime juice (fresh)
Garnish: pitted lychee

Steps:

  • Gather the ingredients.
  • Peel and cut the lychee fruits in half. Add the pieces to a glass jar that has a capacity of at least 16 ounces. Add the zest of 1 lime, then fill the jar with the vodka.
  • Seal the jar and give it a good shake.
  • Store in a cool, dark place for four weeks, shaking it every couple of days. Give it a taste test after two weeks, then again a week later to see how the flavor is progressing. Four weeks will give it a good flavor, but it might take more to get to your ideal flavor.
  • Once the vodka is flavored to your liking, heavily strain the fruit from the vodka through a cheesecloth or a very clean kitchen towel. Be sure to squeeze all of the liquid from the lychee.
  • Strain again to ensure all of the liquid is removed from the fruit. During this final straining, you can filter it directly into the bottle that will store the liqueur: Use a funnel and place the cheesecloth inside.
  • Add 1 cup of simple syrup to the bottle, tighten the lid, and shake vigorously. Store the finished liqueur in the refrigerator where it will keep for about three months.
  • Gather the ingredients.
  • Combine 1 cup each of sugar and water in a saucepan.
  • Bring to a slow boil, stirring constantly until the sugar is completely dissolved.
  • Add the lychee fruit, reduce the heat, and cover.
  • Simmer for about 10 minutes.
  • Remove from the heat and allow to cool for about 30 minutes.
  • Strain the fruit from the syrup and pour it into a glass bottle with a tight-sealing lid. It will keep in the refrigerator for two to three weeks.
  • Gather the ingredients.
  • In a cocktail shaker filled with ice, pour the vodka, lychee liqueur or syrup, and lime juice. Shake well .
  • Strain into a chilled cocktail glass .
  • Garnish with pitted lychee fruit. Serve and enjoy.
