Lemony broad beans with goat's cheese, peas & mint image

Use goat's cheese with a rind here so it will slice well and have a lovely firm, creamy texture. It pairs beautifully with lemony broad beans, peas and mint

40g blanched hazelnuts
250g broad beans, podded and skins removed from the beans
200g fresh peas
4 tbsp extra virgin olive oil, plus a drizzle to serve
2 banana shallots, peeled and thinly sliced
1⁄2 small bunch of mint, finely chopped, plus extra leaves to serve
½ small bunch of flat-leaf parsley, finely chopped
1 lemon, zested and juiced
150g log goat's cheese with rind, sliced into 5mm rounds
crusty bread, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the hazelnuts onto a baking tray and roast for 12-15 mins until golden. Leave to cool. Cook the broad beans and peas in a pan of boiling water for 2 mins, then drain.
  • Heat half the oil in a small frying pan over a low-medium heat and fry the shallots with a pinch of salt for 12 mins until softened. Remove from the heat and leave to cool.
  • Roughly chop the cooled hazelnuts, then toss with the broad beans and peas. Add the mint, parsley, remaining olive oil, the lemon zest and juice and the cooled shallots. Season with black pepper and ½ tsp sea salt flakes.
  • Spread the mixture over a large serving plate and top with the sliced goat's cheese. Drizzle with a little extra olive oil and scatter with torn mint leaves, then serve with chunks of crusty bread.

Number Of Ingredients 7

1/2 cup (8 tablespoons) olive oil or salted butter
2 cloves garlic, minced or grated on a rasp grater
Zest and juice of 1 lemon
4 tablespoons fresh thyme leaves, gently chopped
Kosher salt and freshly ground black pepper
4 cups fresh spring, English or snow peas
8 to 12 ounces shaved or grated Pecorino-Romano cheese

Steps:

  • In a pan on medium-low heat, add the olive oil (or butter), garlic and lemon zest. Cook, stirring, so the garlic and zest can steep without browning, about 5 minutes. Add the lemon juice, thyme, a pinch of salt and a few more grinds of black pepper than you normally would. Move the contents of the pan around a bit more while cooking, until the thyme is darker in color and the pan is fragrant, about 5 more minutes.
  • Add the peas and toss to warm and coat, about 4 minutes. Pour into a serving dish and top with the cheese.

1 1/4 pounds fresh fava beans, shelled, or 10 ounces double-peeled frozen fava beans, thawed
1 1/4 cups shelled fresh peas or thawed frozen petite peas (about 7 ounces)
3 tablespoons extra-virgin olive oil
2 tablespoons fresh mint leaves plus 6 sprigs for garnish
1 tablespoon grated lemon peel
3 (8 1/2-ounce) packages Halloumi cheese,* each cut lengthwise into 6 slices, rinsed, patted dry
2 tablespoons fresh lemon juice
6 peperoncini
1 lemon, cut into 6 wedges
*Available at some supermarkets and at specialty foods stores, natural foods stores, and Greek markets.

Steps:

  • If using fresh fava beans, blanch beans in medium saucepan of boiling salted water 2 minutes; transfer to bowl of ice water. Peel beans. If using fresh peas, blanch in same saucepan of boiling salted water until just tender, about 3 minutes. Using slotted spoon, transfer peas to ice water; cool. Drain peas.
  • Place fava beans, peas, olive oil, 2 tablespoons mint leaves, and lemon peel in large skillet. Cook over medium heat until warmed through, stirring often, about 3 minutes. Season with salt and pepper. Divide vegetable mixture among 6 plates.
  • Heat large nonstick skillet over medium heat. Add cheese slices and fry until golden, about 1 minute per side. Arrange 3 cheese slices atop vegetables on each plate. Drizzle with lemon juice, top with peperoncini, garnish with lemon wedges and mint sprigs, and serve immediately.
