SOFT AND CHEWY LEMON SUGAR COOKIES

Steps:

• In a large bowl or stand mixer, cream together butter and 1 cup granulated sugar. Beat until light and fluffy. Mix in zest, lemon juice, egg and vanilla. Scrape bowl as needed.
