PARMESAN ARTICHOKE CASSEROLE
This is a great casserole that is quick and cheesy! You can add other veggies for a summery twist - sliced zucchini or chopped spinach work great!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place artichoke hearts in a glass mixing bowl. Mix in cheese, garlic powder, mayonnaise and parsley until well coated. Spread mixture in 9x13 inch glass baking dish and sprinkle with paprika.
- Bake in preheated 350 degrees F (175 degrees C) oven until bubbly, about 25 to 35 minutes. Serve hot.

It doesn't get much easier than this. Chopped artichoke hearts mixed with breadcrumbs and parmesan and baked until nice and crispy. Awesome for changing up your normal side dish rotation.

- Preheat oven to 350 degrees F. Drain the artichokes and reserve the liquid. Cut the artichoke hearts into quarters and add to a large bowl. Stir in the bread crumbs, olive oil, reserved liquid from the artichokes, and Parmesan cheese. Add salt and cayenne pepper as desired. Pour the artichoke mixture into an ungreased 8x8 baking dish. Bake at 350 degrees F for 45 minutes or until bubbly and heated through. Serve hot.

LEMON-PARMIGIANO ARTICHOKE CASSEROLE
The flavors in this recipe remind me of the delicious stuffed, braised artichokes that my mom makes, but it much simpler and quicker to prepare. It is very flavorful and great for a healthy side dish or appetizer. I enjoy citrus flavors -- if you are not as much a fan or do not like stronger lemon flavors you may want to reduce the amount of lemon. I hope you enjoy it!

- Preheat oven to 375°F.
- Coat a 9-inch glass pie plate with cooking spray.
- Place artichokes in a colander and, if needed, rinse with cold water to separate. Drain well and pat dry with paper towels.
- Place artichokes in prepared pie plate. Add lemon juice and parsley; season with salt and pepper and stir to combine.
- In a small bowl, combine breadcrumbs, cheese, garlic, olive oil, and red pepper. Sprinkle the mixture evenly over the artichokes.
- Bake for 15-20 minutes or until topping is golden.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix Parmesan cheese, mayonnaise, and garlic powder together in a bowl.

- Fill a 6-qt. stockpot three-fourths full with water; add 2 teaspoons salt and bring to a boil. Add asparagus; cook, uncovered, 1-2 minutes or just until crisp-tender. Remove asparagus and immediately drop into ice water. Drain and pat dry., In same pot of water, cook pasta according to package directions for al dente. Drain, reserving 1 cup pasta water. Return pasta to pot., Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high heat. Add artichoke hearts; cook and stir 3-4 minutes or until lightly browned. Add garlic; cook 1 minute longer.
