BROILED ASPARAGUS PARMESAN
This is a tasty fresh vegetable dish ready in 15 minutes. The asparagus stays nice and green when steamed in the microwave or steamer if you prefer. The parmesan gives it a little extra flavor.

Steps:
- Place asparagus and water in 8x8 inch microwave-safe dish and cover.
- Heat in microwave on high until tender, 6 to 7 minutes.
- Line a baking sheet with foil.
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Remove asparagus from dish and place in a single layer on the prepared baking sheet.
- Squeeze lemon wedge into melted butter and drizzle over asparagus.
- Sprinkle Parmesan cheese and ground white pepper over asparagus.
- Place under broiler until lightly browned, about 2 minutes.

- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Place asparagus in a single layer onto the prepared baking sheet. Drizzle with olive oil, salt and pepper, to taste; gently toss to combine. Place into oven and roast for 8-10 minutes, or until tender but crisp. Serve immediately, tossed with garlic, lemon juice and Parmesan.
LEMON-PEPPER PARMESAN ASPARAGUS

- Preheat the broiler. Toss the asparagus with 2 tablespoons olive oil, 1/2 teaspoon salt and a few grinds of pepper on a baking sheet; spread in a single layer. Broil, stirring occasionally, until tender, 4 to 6 minutes. Let cool slightly.
- Bring a saucepan of water to a boil. Add the egg and reduce the heat; simmer 5 minutes. Drain and transfer to a bowl of ice water.
- Peel the egg and transfer to a blender. Add the garlic, lemon juice, parmesan and mustard and puree until smooth. With the machine running, drizzle in the remaining 8 tablespoons olive oil and blend until thick and creamy. Stir in the crushed peppercorns. Spoon the lemon-pepper sauce over the asparagus and top with more parmesan.

- Preheat an outdoor grill on medium heat, and lightly oil the grate.
- Place asparagus in a large shallow bowl. Drizzle with olive oil and lemon juice, going from bottom to top of stalks. Season with salt and ground black pepper.

- Move your top oven rack to be 6" beneath the broiler.
- Preheat the broiler to 550°F. Line a sheet pan with parchment paper.
- Trim the woody ends from the asparagus. Place the asparagus in a bowl. (You can reserve the woody stems to make a stock later or toss them.)
- Toss with the oil, lemon juice, salt and pepper. Toss until coated.
- Place on the prepared sheet pan in a single layer.

- Mix together the butter, lemon zest and grated Parmesan and season with garlic salt.
- Put to one side.
- Snap the asparagus 2-4 cm/¾-1½in from the base of the stalks, the spears should naturally find their own breaking point.
- If the asparagus is particularly thick, trim away any tough-looking pointy ears on the stalk, as these can have a bitter taste.
- Place the asparagus in a wide saucepan or large, deep frying pan of rapidly boiling salted water, cook for 2-5 minutes depending on their thickness until just tender. Remove from the water with a slotted spoon and shake off any excess water.
- Place on a warm plate and sit the flavoured butter on top. Turn the asparagus so the butter is melting and oozing over every spear, then sprinkle over some sea salt.
