CUCUMBER-CHILI PALETAS (POPSICLES)

3 cups cucumbers (about 1 1/2 lbs, peeled and seeded ~ cut into 1-inch chunks)
2/3 cup sugar
1/3 cup lemon juice
1 jalapeno chile (1-1 1/2 ounce ~ remove seeds and veins for less heat)

Steps:

  • Place all ingredients into blender, and whirl until smooth.
  • Push mixture through a fine strainer set over a 2-cup glass measure; discard any residue/pulp.
  • Pour into popsicle molds.
  • Freeze 8 hours, or more.

0.5 (14 ounce) package soft tofu (sliken prefered)
1 (3 ounce) box lemon gelatin or 1 (3 ounce) box lime Jell-O gelatin
1 cup boiling water
2 tablespoons lemon juice (optional)
8 ounces Cool Whip
1 ready bake graham cracker pie crust

Steps:

  • Dissolve jello in one cup hot water.
  • Cool in refrigerator until slightly thickened.
  • Drain tofu and blend in blender until smooth.
  • add lemon juice, jello, and half of cool whip.
  • Blend mixture.
  • Pour into pie crust.
  • Spread remaininng cool whip on top of jello mixture.
  • Refrigerate several hours.
  • Optional: decorate pie with mandarin oranges.

Yahoo Group Files. Paletas, Mexican popsicles, are a deliciously refreshing treat on a hot summer day. They are lightly sweetened and made with fresh fruit which makes them a healthier alternative to popsicles with artificial colors, flavors and sweeteners.

1 cup drinking water
1 1/2 cups ice cubes
1 cup fresh mango, chopped
1/4 cup sugar

Steps:

  • Bring the water to a boil and reduce to a simmer. Add the sugar and stir occasionally until sugar has melted into the water.
  • Remove from heat and pour into large measuring cup, and add ice until you reach 2 cups total. Stir ice until it is melted and the water mixture is cooled.
  • Place approximately 2 tablespoons of the mango into each popsicle mold. Pour the water mixture into each mold to reach the top.
  • Use a long spoon or a popsicle stick to gently stir the mango into the liquid. Place lid on, and add sticks. Freeze for one hour or until solid.
  • Yield: 10 Paletas (depending on size of mold).

14 ounces sweetened condensed milk (not evaporated milk)
1/2 cup half-and-half
1/2 cup lemon juice (or lime juice)
2 teaspoons lemon zest (or lime zest)
1 pinch salt
2 cups graham cracker crumbs, finely crushed (optional)

Steps:

  • Place the sweetened condensed milk, half-and-half, juice, zest and salt in a bowl and whisk until thoroughly combined.
  • If using conventional molds, divide the mixture among the molds, snap on the lid and freeze until solid, about 8 hours.
  • If using small paper cups, freeze until pops are beginning to set (1-1/2 to 2 hours), then insert the sticks and freeze until solid, about 8 hours.
  • If using an instant ice pop maker, follow the manufacturer's instructions.
  • To serve as Mexican Lemon or Lime Pie Paletas, remove from molds and press or roll pops into finely crushed graham cracker crumbs spread on a plate!
  • Serve immediately before they melt!
