LEMON LAYER CAKE

- Preheat oven to 350°. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease parchment., Cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs and egg yolks, 1 at a time, beating well after each addition. Beat in lemon zest and juice. In a small bowl, mix sour cream and milk. In another bowl, whisk together flour, salt, baking powder and baking soda; add to creamed mixture alternately with sour cream mixture., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 24-28 minutes. Cool in pans 10 minutes before removing to wire racks; remove parchment. Cool slightly., For syrup, in a small saucepan, combine sugar and lemon juice. Bring to a boil; cook until liquid is reduced by half. Cool completely., For frosting, beat cream cheese and butter until smooth; beat in confectioners' sugar, lemon juice and salt until blended., Using a long serrated knife, cut each cake horizontally in half. Brush layers with warm syrup; cool completely., Place 1 cake layer on a serving plate; spread with 1 cup frosting. Repeat layers twice. Top with remaining cake layer. Frost top and sides with remaining frosting. If desired, top with lemon slices or edible flowers. Refrigerate leftovers.

Steps:
- For cake: Position rack in center of oven and preheat to 350°F Butter 3, 8-inch in diameter cake pans. Cut 3 parchment rounds to fit bottoms of pans and butter these too.
- Mix sour cream and soda in bowl and let stand 10 minutes.
- Sift flour, baking powder and salt in a small bowl.
- Cream butter with sugar in a large bowl for 8 minutes, until very light and fluffy. Add yolks, one at a time, beating well after each addition. Beat in juices, zest and sour cream mixture. Mix in dry ingredients in 3 additions.
- Beat whites in a medium bowl to soft peaks.
- Fold 1/4 of the whites into the cake batter to lighten and then gently fold in remaining whites.
- Divide batter among 3 prepared pans. Bake about 30 minutes, or until a tester comes out clean. Cool in pans 5 minutes. Run small, sharp knife around sides to loosen. Turn out and cool completely.
- For syrup: Stir icing sugar and juice in small saucepan over low heat until sugar dissolves. Increase heat and bring to boil. Brush syrup over cakes (can be prepared 1 day ahead).
- For filling: Mix pineapple and cornstarch in medium saucepan. Add butter, sugar and salt. Stir over medium heat until mixture boils and thickens, about 10 minutes. Cool, cover and refrigerate until well chilled (can be prepared 1 day ahead).
- For Lemon Whipped Cream Frosting (about 4 cups): Mince lemon zest with sugar in processor or mini-blender. Whip cream in large bowl to soft peaks. Gradually beat in sugar.
- To assemble: Place 1 cake layer, syrup side up, on plate.
- Gently spread 1/2 of pineapple filling on top.
- Ice with 1/2 cup of frosting.
- Top with second layer and repeat.
- Top with third layer.
- Ice top and sides of cake with remaining frosting.
- Press coconut onto sides of cake (can be prepared 8 hours ahead. Cover and refrigerate. Let stand at room temperature 1 hour before serving).

- For Homemade Lemon Cake:. Preheat oven to 350
- two 9 inch round pans have them greased and floured.
- Cream together the shortening and 1 1/2 cups white sugar. Beat in the 2 eggs. Add the flour, milk, and Lemon extract and vanilla, and beat to a soft smooth batter. _.
- Bake 20 to 30 minutes in the preheated oven, or until tester inserted in the center of the cake comes out clean.
- For PIneapple Filling:.
- Beat 3 eggs in saucepan add 1 1/2c sugar and pineapple.
- In separate cup mix cornstarch with water. bring pineapple to boiling point, add cornstarch mixture very slowly while stirring, turn to low heat stir till thickens take off heat. You want it thick.......
- For Lemon Cream Cheese Icing:.
- cream together your cream cheese and butter till very smooth add about 1 cup or more of confectionary sugar... add in a dash of vanilla and about a teaspoon of lemon extract.
- start adding in your confectionary sugar slowly as blending... blend well as to get no lumps.... Taste it make sure it is sweet.......
- Let cake cool put cooled pineapple filling on top of bottom layer... then put on top layer cake.... Put cream cheese lemon icing on top layer....enjoy.... very good cake.

- 1. To Prepare the Cake: Sift the Cake Flour, Sugar, baking powder & salt into a mixing bowl. Add the milk, flavorings & shortening & beat until well blended. add the eggs whites, beat for 2 minutes. Spread the batter in 2 greased and floured 8" round cake pans. Bake at 350* 25-30 minutes or until cake test done. Cool in the pans for 10-15 minutes. Remove to a wire rack to cool completely
- 2. To Prepare the Filling: Combine Sugar, cornstarch, & Salt in the top of a double boilerand mix well. Stir in the lemon zest & lemon juice .Add the Pineapple juice, egg yolks, & butter & mix well. Cook over boiling water until smooth and thickened, stirring constantly. Cool to room temperature.
- 3. To Assemble the cake: Slice each cake in halve horizontally. Place 1 of the 4 layers on a cake plate and spread evenly with 1/3 of the Pineapple Lemon mixture & a thin Layer of whipped cream. Place the second layer on top of the first and spread with Half of the Pineapple lemon mixture & a thin layer of whipped cream, the same with the next layer with the remaining pineapple lemon mixture. Top with remaining cake layer and frost the top and sides with the Whipped Cream over entire cake. Chill until serving time. Cut into thin slices to serve.
ULTIMATE LEMON LAYER CAKE
I love lemon cakes, pies, cookies, etc. This cake is the best! It comes from Cook's Illustrated Magazine, Mar/Apr 07 edition. As always, they area very precise with their directions, so they might be long, but don't be put off by that. The filling can be made a day ahead, it does get a little stiff, just stir it to loosen it up a bit. Chill leftovers.

- Filling: Measure 1 tablespoon lemon juice into a small bowl; sprinkle gelatin over the top.
- Heat remaining lemon juice, sugar, and salt in medium non-reactive sauce pan over medium high heat, stirring occasionally until sugar dissolves and mixture is hot, but not boiling.
- Whisk eggs and yolks in a large non-reactive bowl.
- Whisking constantly, slowly pour hot lemon-sugar mixture into eggs, then return mixture to saucepan.
- Cook over medium-low heat, stirring constantly until mixture reaches 170° and is thick enought to leave a trail when a spatula is scraped along the bottom of the pan, about 4-6 minutes.
- Immediately remove pan from heat and stir in gelatin mixture until dissolved. Stir in frozen butter until incorporated.
- Pour filling through a fine-meshed strainer into a bowl.
- Cover surface with plastic wrap; refrigerate until firm enough to spread, about 4 hours.
- Cake: Preheat oven to 350°.
- Grease and flour two 9-inch cake pans and line with parchment paper.
- In a medium bowl, whisk together egg milk, egg whites and vanilla.
- In a mixer bowl, combine flour, sugar, baking powder and salt; mix at slow speed.
- Add butter one piece at a time, continue to beat until mixture resembles moist crumbs and no visible butter chunks.
- Add all but 1 cup of milk mixture to crumbs and beat at medium speed until mixture is pale and fluffy, about 1 1/2 minutes.
- With mixer running, add remaining 1/2 cup milk mixture, beat 1 mintute more.
- Divide batter evenly between cake pans.
- Bake 23-25 minutes or until toothpick in center of cakes comes out clean.
- Loosen cakes from side of pan with a small knife, cool in pan 10 minutes then remove from pan onto greased wire rack, remove parchment paper, invert again and cool completely.
- Icing: Combine all ingredients in a mixer bowl or heatproof bowl.
- Set over medium saucepan filled with 1-inch of simmering water.
- Cook stirring constantly until mixture reaches 160°, 5-10 minutes.
- Transfer mixture to mixer bowl (if needed) and beat on medium speed until soft peaks form, about 5 minutes.
- Increase speed to medium-high and continue to beat until mixture has cooled to room temperature and stiff peaks form, about 5 minutes longer.
- Assembly: Cut each layer in half horizontally.
- Spread 1 cup of lemon filling evenly on each cake, (except the top layer) leaving 1/2-inch border around cake.
- Place top layer on cakes, smooth out any filling that may have leaked from the layers.
- Refrigerate while you make the icing.
- Spread icing on cake.
